BRUNSVIGER - TRUE DANISH PASTRY



Brunsviger - true Danish pastry image

This recipe is so easy and it tastes soooo amazing. This type of pastry is on the Danish breakfast table alongside the cinnamon rolls, but only on weekends... I promise you, you won't be disappointed:-)

1,5 c + 2 tbsp. flour
4 Tbsp sugar
1/2 pkg fresh yeast - equal to 25 grams
1 pinch salt
2/3 c lukewarm milk
1/5 stick butter, softened
1/2 c butter or 1 stick of butter
1/2 c brown sugar, firmly packed
4 Tbsp dark syrup - not molasses

Steps:

  • 1. Set aside the last three ingredients - it's the sugar mass on the top.
  • 2. Dissolve the yeast in the warm milk.
  • 3. Add all the dry ingredients into the liquid. Mix it lightly with a hand mixer or your kitchen machine, then add the soft butter.
  • 4. Mix it well on medium speed. Form a dough ball. Cover and let it rise for 20 min.
  • 5. Add the last three ingredients to a small pot and let it all melt on low heat - don't boil! When it's all an even mass turn off the heat.
  • 6. Take a 10" x 15" pan. Grease it or use baking sheet. Spread out the dough in the pan just using your hands. Poke holes into the dough with your fingers. Then pour over the sugar mass from the pot. Let it rise an extra 20 min. Before putting it in the oven poke the dough once more ... Here I used the handle of a big wooden spoon.
  • 7. Bake for 13-15 min on 350 F

This recipe originated with the grandmother of our friend Frits Donner. His grandmother lived in Vendsyssel, that part of Jutland N of the Limfjord.

4 eggs
300 g sugar
250 g flour
1 1/2 teaspoons baking powder
1/3 cup butter
200 ml milk
3/4 cup butter
2 cups baker's angel flake coconut
175 g brown sugar
2 tablespoons milk

Steps:

  • Beat together the eggs and sugar for 10 minutes.
  • Add the flour and baking powder and mix in well.
  • Bring to boiling the 200 ml milk and the 1/3 cup butter, then add to the above mixture and blend in well.
  • Preheat oven to 375 F and pour batter into a rectangular baking dish.
  • Bake for 20-25 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  • While the cake is baking melt the 3/4 cup butter in a saucepan and add the brown sugar, coconut, and 2 Tbs milk.
  • When the cake is done spread the topping over, return to the oven and bake for about 5-7 minutes until topping is bubbly.
  • Cool before slicing in the pan and enjoying!

400 ml milk
50 g yeast cake or 1 package dry yeast
60 g butter
3 tablespoons sugar
1 teaspoon salt
600 g flour
200 g butter
200 g brown sugar

Steps:

  • Stir the yeast into luke warm milk.
  • Rub the butter into the flour and crumble it.
  • Add sugar and salt.
  • Combine the liquid into the flour and stir until the dough is smooth.
  • Divide the dough and flatten it out into a large pan.
  • Let the dough rise 20 minutes in a warm place.
  • Fill: Melt the butter and stir in the brown sugar.
  • Drizzle over the risen dough.
  • Bake in a preheated 400 degree F oven 20- 25 minutes.

  • Lun mælken til den er lillefingervarm. Smuldr gæren ud i mælken, og tilsæt salt, sukker og æg. Rør halvdelen af melet ind i dejen, før du tilsætter smørret og ælter det med. Tilsæt nu resten af melet og ælt dejen godt i ca. fem minutter. Dejen er klistret og blød, når den er færdigæltet.
  • Tilsæt ikke mere mel! Du vil ikke have en tør bund, og du skal stort set ikke røre mere ved dejen, da den ikke skal slås ned eller rulles ud.

  • In the bowl of a stand mixer fitted with the dough hook, mix the yeast and warm milk together and set aside while weighing the other ingredients. The yeast should start to foam after a few minutes, otherwise the yeast might be dead.
  • Add the sugar, egg and salt to the milk and yeast. Set the mixer on medium for a few seconds to combine.
  • Pour in the flour, and slowly work the mixer up to medium speed. Knead until everything combines, forming a dough.
  • With the mixer still running at medium speed, slowly add the butter, one bit at a time. Knead the dough until it is smooth and elastic, approximately 6 minutes.

  • If using fresh yeast, add the yeast and milk to a stand mixer with a dough hook attached. Mix until the yeast has dissolved (If using active dry yeast, pour the milk into a bowl. Sprinkle over the yeast and whisk together. Cover with clingfilm/plastic wrap and leave in a warm place for about 15 minutes until frothy and bubbly. Pour into the stand mixer with a dough hook attached).
  • Add the caster sugar and ground cardamom and continue to whisk. Next add the very soft butter and egg yolk. Combine the salt with the flour and add to the mixture bit by bit, continuing to mix with the dough hook for 5–6 minutes until you have a smooth (but still sticky) dough. Hold back on the flour if the dough gets too firm – you can always add more later. Cover the bowl with clingfilm/plastic wrap and leave to rise for about 30 minutes - or until doubled in size.
  • To make the topping, whisk the softened butter with 200g of the dark brown soft sugar, the golden/light corn syrup, cinnamon and vanilla extract until you have a very soft, spreadable mixture. Set aside.
  • Tip out the dough onto a floured surface and knead it through (add more flour if needed, as you now need a mouldable dough). Roll the dough out to roughly the size of the baking pan. Transfer the dough to the prepared pan and gently stretch it towards the sides of the pan. Prod shallow holes all over the dough with your fingers (like you would if making focaccia). The bigger the holes, the more hiding places for the topping – which is the best bit.
