DANISH BRUNEDE KARTOFLER - CARAMELIZED BROWNED POTATOES
Danish Brunede Kartofler - Caramelized Browned Potatoes - are a great side dish to any meal! They are a small potato with a sweet caramelized coating.

Steps:
- Drain potatoes and pat dry.
- In a large skillet cook the sugar on medium-low heat until completely melted. DO NOT STIR!
- When melted and slightly darkened around the edges, add the butter and stir until it becomes kind of a syrupy mixture.
- Add the potatoes and a little bit of water (if the mixture starts to stiffen and form lumps turn the heat up and it will melt again).
- Moving the skillet around, gently cover each potato in the mixture, continuing to cook for about 6-8 minutes.

- 1. In a large saucepan, cook the potatoes about 15-20 minutes. Drain; set aside.
- 2. In a large skillet, melt the sugar over low heat. Let it simmer for a few minutes until it turns golden brown. Stir in the melted butter.
- 3. Add the potatoes, a few at a time, stirring untl they are evenly coated with the caramel.
- 4. Put them in a preheated serving dish and proceed until all potatoes are done.
- 5. These go best served with ham or pork, or chicken.

- Buy small firm potatoes. Wash the potatoes, place them in a deep pot, cover with water, and bring to a boil. Cook for 15 to 20 minutes, or just until tender. Remove the pot from the heat, pour off the water, and rinse the potatoes in cold water. When the potatoes have cooled enough to handle, peel off their skins and set aside.
- In a heavy frying pan or skillet, over medium heat, melt the sugar. When the sugar turns light brown around the edges, add the butter and stir until melted.
- Rinse the peeled potatoes in cold water. Drain the potatoes and add them to the caramelized butter sugar mixture. Cook the potatoes, shaking the pan often, until the potatoes are evenly glazed and heated through, which will take about 10 minutes. 6 servings.

- 1. Boil and peel the potatoes. 2. In a large frying pan, cook the sugar on moderate heat until completely melted. Do not stir! When melted, add the butter and stir until the two are combined into an almost syrupy mixture. 3. Add the potatoes, and a little bit of water to the mixture. If the mixture starts to stiffen and form lumps, don't panic. Turn the heat up and it will melt again. Slowly rock the pan and cover each potato in the mixture, continuing to cook for about 8-10 minutes. TIP: During the rest of the year, I like to spruce these potatoes up with a little fresh sage or chopped chili at the end - but for Christmas, I always serve them in this traditional manner.

- Clean the potatoes but leave the peel on. Boil the potatoes in lightly salted water for about 15 minutes. Don't boil them too soft.
- Peel the potatoes using a knife. Let the potatoes cool off before you proceed. You can with advantage do this the day before you actually need the browned potatoes.
- Pour the sugar in an even layer on a cold frying pan. Turn on the stove at medium heat and let the sugar melt without stirring in it. Try to avoid using a frying pan with Teflon coating.
