1 tbsp. extra-virgin olive oil
1 onion, chopped
1 tsp. cumin
1 tsp. chili powder
kosher salt
1 c. black beans, drained and rinsed
1 c. salsa
1 c. Shredded Monterey Jack
4 large eggs
For serving:
4 corn tostadas
1 avocado, sliced
1 tbsp. freshly chopped cilantro
Hot sauce
sour cream

Steps:

  • Preheat oven to 400º.
  • In a large skillet over medium heat, heat oil. Add onions and cook until soft, 5 minutes. Season with cumin, chili powder, and salt.
  • Add black beans and salsa to skillet and stir to combine.
  • Sprinkle all over with cheese, then create four wells with a spoon and crack in eggs. Season with salt.
  • Bake until egg whites are set and yolks still runny, 8 to 10 minutes.
  • Plate on top of tostada. Garnish with avocado and cilantro, then drizzle with hot sauce and sour cream.

1 pound ripe plum tomatoes
3 large cloves garlic, unpeeled
1 small onion (about 6 ounces), quartered
2 ancho chiles, stems and seeds removed
1/2 to 3/4 teaspoon chopped chipotle in adobo, plus 1/2 to 3/4 teaspoon adobo sauce
Kosher salt
1 tablespoon vegetable oil
One 15-ounce can pinto beans, drained with liquid reserved
1 tablespoon vegetable oil
Kosher salt
2 to 3 tablespoons vegetable oil
8 corn tortillas
8 large eggs
Kosher salt
1/2 cup crumbled Cotija cheese
1/4 cup fresh cilantro leaves, roughly chopped
2 tablespoons finely chopped white onion

Steps:

  • For the ranchero sauce: Preheat the oven to 500 degrees F and put the tomatoes, garlic cloves and onion on a rimmed baking sheet. Roast the vegetables, turning occasionally, until blistered and charred in spots, about 35 minutes. When cool enough to handle, remove the papery skins from the garlic.
  • Meanwhile, bring a small pot of water to a boil. Add the ancho chiles, cover, and remove from the heat. Let sit for 10 minutes, then drain and pat dry.
  • Put the vegetables and any juices from the baking sheet into a blender. Add the ancho chiles, 1/2 teaspoon each chopped chipotle and adobo sauce and 1/2 teaspoon salt and blend until fairly smooth. Taste; if you want the sauce spicier, stir in the remaining chopped chipotle and adobo sauce.
  • Heat the oil in a medium pot over medium heat. Add the sauce (it will sizzle) and 1/3 cup water and cook, stirring, until thickened but pourable, about 5 minutes. Taste and season with salt as necessary. Cover and keep warm over low heat. If the sauce thickens too much, add 1 tablespoon of water at a time to thin it out.
  • For the refried beans: Put the beans in a medium bowl with about half of their reserved liquid and mash with a potato masher until smooth. Heat the vegetable oil in a medium nonstick skillet over medium heat until shimmering, then add the mashed beans and a big pinch of salt and mash again until smooth. Cook, stirring and scraping with a rubber spatula, until heated through. If the beans seem dry, add some more of the reserved liquid until they are creamy. Taste, season with salt if necessary and cover and keep warm over low heat.
  • For serving: Preheat the oven to 200 degrees F and line a baking sheet with paper towels. Heat 2 teaspoons vegetable oil in a medium skillet over medium heat until shimmering. Add 1 tortilla and cook until the underside blisters, about 15 seconds. Flip the tortilla with tongs and continue to cook until the underside blisters, about 15 seconds. Remove from the pan to the lined baking sheet. Repeat with the remaining 7 tortillas, adding more oil if necessary. Spread about 2 tablespoons of the refried beans on each tortilla and keep warm in the oven.
  • Using the same skillet the tortillas were fried in, heat 1 tablespoon oil until shimmering, about 1 minute. Crack 4 eggs into the skillet and cook until the edges are crispy and whites are almost set. Cover the skillet with a big pot lid and cook until the whites are completely set, 1 more minute. Remove the tortillas from the oven, top four with an egg, then return to the oven and repeat with the 4 remaining eggs.
  • Top the remaining tortillas with the remaining eggs. Sprinkle each with a pinch of salt, some ranchero sauce, Cotija cheese, cilantro and onion. Serve immediately.

1 onion
2 cloves of garlic
2 red peppers
2 fresh red or orange chillies
olive oil
1 large dried chilli
3 fresh bay leaves
2 x 400 g tins of quality plum tomatoes
2 large ripe tomatoes
6 large eggs
6 tortillas
Cheddar cheese, to serve

Steps:

  • Peel and finely slice the onions and garlic. Deseed and finely slice the peppers and chillies.
  • Get a large frying pan (make sure you've got a lid to go with it) on a high heat and add several good lugs of olive oil.
  • Add the onion, garlic, peppers, fresh and dried chillies, bay leaves and a good pinch of sea salt and black pepper, and cook for 15 minutes, or until to softened and caramelised, stirring regularly.
  • Pour in the tomatoes, using a spoon or potato masher to break them up. Bring to the boil, then turn down to a medium heat and cook for a further 5 minutes to reduce the sauce.
  • When you've got a nice thick tomato stew consistency, have a taste and adjust the seasoning, if needed.
  • Slice the fresh tomatoes and lay them over the top of the mixture.
  • Use a spoon to make small wells in the tomato stew, then crack in the eggs so they poach in the thick, delicious juices - try to crack them in as quickly as you can so they all get to cook for roughly the same amount of time.
  • Season from a height, put the lid on and let the eggs cook for around 3 to 4 minutes, or until cooked to your liking.
  • Warm the tortillas while this is happening. You can pop them into the oven at 180°C/350°F/gas 4 for a few minutes, microwave them for a few seconds or even lay them over the lid of the pan so they heat up as the eggs cook.
  • Take the lid off and check your eggs by giving them a poke with your finger. When they're done to your liking, turn the heat off and take the pan to the table with the warmed tortillas, the Cheddar and a grater so everyone can get involved and make their own. Personally, I like to grate a bit of cheese right on to a warm tortilla, spoon an egg and some of the wonderful tomato stew on top, wrap it up, and eat it right away. What a beautiful way to wake up!

1 (8 ounce) pre-cooked ham steak, diced

1/4 Onion (chopped)
Refried beans (homemade or store bought)
2 potatoes
Thick cut ham (cut into cubes)
Salsa - homemade or store bought.
Salt (Pepper to taste)
Queso Fresco and Cilantro to garnish.

Steps:

  • Saute the potatoes, onion, and ham in a small amount of olive oil and season with salt and pepper to taste. Set aside.
  • Lightly fry the tortillas, and pat dry. Put on a plate
  • Warm up the refried beans, and spread onto the tortillas.
  • Fry an egg to your preferred level of doneness, and put on top of the tortilla and beans.
  • Top with salsa, queso fresco, and fresh cilantro.

1 cup diced zucchini (optional)
1/2 cup diced green bell pepper
1/4 teaspoon salt

1/2 cup shredded cheddar cheese
4 tablespoons chopped fresh cilantro

Steps:

  • Heat oil in non-stick skillet (lid needed) on medium heat.

1 medium onion (peeled and diced)
1 cup tomatoes (finely chopped)
1-2 jalapeño (finely chopped)
1 tsp chipotle powder
½ tsp smoked paprika powder
1 tsp garlic (minced)
¼ tsp salt
½ tsp oregano (fresh or dried)
½ cup water or stock
¼ cup cilantro (chopped)
1 tbsp lime juice
8 Corn Tortillas
1 cup red/black kidney beans (cooked)
1 medium onion (finely chopped)
¼ cup tomato puree (fresh)
1 tsp garlic paste
¼ cup water
½ tsp paprika
½ tsp chipotle powder
½ tsp salt
1 tsp coriander powder
1 cup ranchero sauce
1 medium avocado (peeled and cut into slices)
¼ cup coriander/cilantro ( chopped)
¼ cup spring onion (chopped)
4 large eggs
1 tbsp oil + extra for the tortillas
Oil or butter for fried eggs
½ cup cotija or feta cheese

Steps:

  • Heat oil in a saucepan over medium heat.
  • Add chopped onion and jalapeño.
  • Stir fry till it becomes soft and onion is light pink in colour.
  • Add garlic and stir fry for a few seconds. Add the oregano and mix well.
  • Add chopped tomatoes, salt, water or stock, chipotle, smoked paprika and coriander powders. Mix well.
  • Cover the pan and cook till the tomatoes become soft.
  • Allow the mixture to cool a bit. Add chopped cilanto and lime juice.
  • Process in a food processor to a coarse or smooth sauce.
  • First prepare the rancheros sauce. Check for recipe here.
  • To prepare the refried beans, heat 1 tbsp oil in a pan.
  • Add onion and stir fry till it becomes soft.
  • Add garlic paste and stir fry for a few seconds.
  • Add tomato puree, water, salt, paprika, chipotle powder and coriander powder. Mix well.
  • Partially mash the cooked beans and add to the tomato mixture.
  • Cover the pan and let the mixture cook for 5-10 minutes. Stir occasionally so that the mixture does not burn at the bottom.
  • Heat a frying pan over medium heat. Spread a bit of oil over the pan.
  • Put one tortilla in the pan. Let it cook till small bubbles appear.
  • Flip and cook the other side adding little oil.
  • Keep the shallow fried tortilla on a plate.
  • Repeat with the remaining tortillas.
  • Keep the tortillas warm in the oven at low heat till you prepare the eggs.
  • Add some oil or butter in a frying pan over medium to low heat.
  • Crack an egg and fry it.
  • To assemble the huevos rancheros take one or two fried tortilla. Spread about a tablespoon or two of the refried beans over it.
  • Put the fried egg on top of it.
  • Put a few avocado slices. Sprinkle cheese, coriander and spring onion over it. Serve with rancheros sauce.
  • Repeat the above steps with the remaining tortillas and eggs.

Simmer the eggs, adjusting the heat as needed, until done to your liking. For runny eggs, the whites should be cooked but the yolks still soft to the touch, about 6 to 8 minutes. Hard-cooked eggs will take an additional 2 minutes or so.
  • While the eggs are cooking, heat the tortillas in another skillet set over high heat or directly on the burner if you have a gas range, quickly warming each side. You want the tortillas warm and maybe a little blistered, but not crispy. Wrap in a napkin or dish towel to keep warm until ready to eat.
