DELICIOUS SPINACH RICE WITH FETA
A Greek-style rice dish with the lovely flavors of dill, mint, and tangy lemon.

Steps:
- Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 20 to 25 minutes.
- Heat oil in a large skillet over medium heat. Add green onions and garlic; cook and stir until softened, about 5 minutes. Stir in spinach and dill until wilted, 3 to 5 minutes. Stir in cooked rice. Transfer to a large serving dish.
- Heat a small skillet over medium heat. Add pine nuts; cook and stir until toasted, 3 to 5 minutes.
- Top rice with toasted pine nuts, feta cheese, mint, lemon zest, lemon juice, and sumac.

FETA AND SPINACH FRITTATA RECIPE
Steps:
- Preheat oven to 375 degrees F.
- In a large bowl, whisk together eggs, spices, baking powder, and pinch of salt.
- Add spinach and all remaining ingredients to the egg mixture. Mix well to combine.
- In a 12-inch cast iron skillet (or oven-safe skillet), heat 2 tbsp olive oil until shimmering but not smoking. Pour in the egg mixture. Give the skillet a gentle shake to allow the egg mixture to spread well. Cook on medium-high heat for about 4 minutes or so allowing the bottom of the eggs to settle. Transfer to heated oven to finish cooking (bake for 8 minutes or until eggs are cooked through and the top is firm and no longer runny.)
- Serve with 3-Ingredient Mediterranean Salad. Enjoy!

Steps:
- In a large saucepan, heat the oil over medium heat.
- Add the onion and sautee for about 5 minutes or until just golden.
- Stir in the rice and water.
- Bring to a boil.
- Cover and reduce the heat to a simmer.
- Simmer, covered for about 45 minutes, or until all the water is absorbed.
- Remove from the heat.
- Preheat oven to 350°F Oil a 8x8 baking dish (ceramic or glass would probably be best).
- Stir in the spinach, feta and olives into the rice.
- Stir in the eggs.
- Pour into the prepared baking dish.
- Bake, uncovered for 25-30 minutes, or until a knife incerted into the center comes out clean.
- Let stand for 5 minutes before serving.

Steps:
- In a deep saute pan, on medium heat, saute the onion and garlic in oil or butter for 2-3 minutes.
- Add in the rice, and continue cooking, stirring for 2 minutes, until coated with the olive oil.
- Add in the stock, stirring and scraping the sides of the pan about 35 minutes, or until the rice is cooked, might take longer.
- Season with salt and pepper.
- Remove from heat, cover with a lid; set aside to steam for 5-6 minutes.
- Uncover, and test for doneness.
- If liquid is not absorbed in the rice, and the rice is not tender, return to the stove for a few minutes.
- Then mix in the feta, green onions and the cooked mushrooms (if using); toss gently to mix.
- Serve immediately.
- Note: you may subsitute the vegetable stock for low-sodium chicken stock if desired.

- In a deep pan heat up 1 tablespoon of olive oil;
- Add onion and simmer for about 10 minutes on low heat;
- Add thyme and leaks and simmer for another 5 minutes;
- Add half a cup of water and broth base, then simmer for another 5 minutes;
- Add spinach and cook until wilted;
- Add rice and let it cook for about 2 minutes;
- Add half a cup of water and stir;
- Keep adding half a cup of water at the time once the rice absorbs it;
- It can take about 20 -25 minutes until rice is fully cooked;
- Adjust seasoning with salt and pepper.
- At the end add dill and mix well;
- Take off the burner and cover it up; Add lemon juice and olive oil;
- Let it sit for about 5-10 minutes to have all the liquid absorbed;
- When serving, sprinkle more lemon juice, olive oil and top it with Feta Cheese. Enjoy!

- In a large bowl, combine the spinach, feta cheese, mozzarella cheese, processed cheese food, 1/2 the butter, vinegar, garlic powder, salt and pepper. Mix well and set aside.
