BROWN RICE CASSEROLE
I got this recipe from my brother-in-law, and it is a super easy side dish that tastes great and goes with just about anything.

- Melt butter in microwavable casserole dish.
- Add rice, consomme' beef, and french onion soups.
- Cook in microwave for 8 minutes.
- Stir and cook for another 8 minutes or until tender.

JARLSBERG TEMPEH CASSEROLE

Steps:
- Note: Use egg noodles if not vegan and use your favorite vegan cheese.
- Preheat oven to 375°F; Pam a 2 to 3-quart casserole. Split tempeh horizontally then cut crosswise in half to make 4 squares.
- In large deep skillet heat over over med high until hot. Add tempeh and fry, turn once. It should be lightly brown on both sides about 2 to 3 minutes. Drain on paper and sprinkle with the salt. As soon as you can handle it cut into 1/2-inch cubes.
- Add onion to oil and cook over medium stirring a few times until lightly browned about 5 to 7 minutes. Add pepper and cook until it softens about 3 more minutes.
- Add flour and cook stirring constantly for 1 minute. Whisk in soy milk and bring to a boil stirring frequently until sauce thickens. Reduce heat and simmer for 3 minutes then stir in Worcestershire sauce.
- Remove from heat and stir in cheese until melted and smooth. Add noodles and peas. Season to taste. Transfer to baking dish.
- Sprinkle cornflakes on top and bake for 25 to 30 minutes or until lightly brown and crispy on top.

BROWN RICE CASSEROLE
This recipe is really versatile. It's easy to leave out the chicken or change up the vegetables. I usually leave out the chicken and serve it with salsa chicken or something similar. For the diced green chili peppers, use fire roasted if you can find them.

Steps:
- Cook rice using the water or broth according to package directions.
- Preheat oven to 350º and grease a casserole dish.
- Heat olive oil in a large skillet over medium heat and saute onion until tender and translucent.
- Mix in the zucchini, chicken (if using), and mushrooms. Season with the cumin, salt and cayenne.
- Saute until chicken in heated through and zucchini is browned.
- In a large mixing bowl, mix the cooked rice, mixture in skillet, beans, chilis, carrots, and 1/2 of the cheese.
- Transfer to casserole dish and sprinkle with the remaining cheese.
- Cover with foil and bake 30 minutes.
- Uncover, and continue baking for 10 more minutes or until lightly browned and bubbly around the edges.

- Butter a 1 1/2 quart casserole dish; set aside.
- In a mixing bowl, mix together the first 5 ingredients.
- Sprinkle the breadcrumbs evenly over the bottom of the casserole dish.
- Transfer the tuna-rice mixture into the casserole dish and spread out evenly.
- Sprinkle cheese evenly over the top.
- Bake in a 350° oven for 25-30 minutes or until bubbly.

TURKEY AND BROWN RICE CASSEROLE
This recipe tastes rich, but has very little fat. *After reading Annacia's review I realized, she is right and wanted to mention that if using chicken or all white meat turkey, chicken broth would be the best choice. When I use beef broth, I use Imagine Organic Beef Broth, which has a mild, more subtle taste than other beef broths and I always use dark and light turkey meat.*

Steps:
- Cook brown rice according to package directions.
- While rice is cooking, pour broth into a large sauce pan.
- Whisk in whole wheat flour.
- Cook and stir with whisk, over medium heat, until mixture thickens and begins to bubble.
- lower heat to low and stir in poultry seasoning and black pepper.
- Stir in half of the cheddar cheese and mix until cheese melts.
- Stir in red pepper and onion.
- When rice is cooked add to pan with broth mixture along with cooked turkey and cooked peas and carrots.
- Spray a square or round casserole dish with cooking spray.
- Pour contents of pan into casserole dish.
- Sprinkle top with remaining cheddar cheese and then bread crumbs.
- Bake in a pre-heated 350 degree oven for 30-35 minutes.
