Steps:
- Preheat the oven to 300F.
- Grease a 9x13 inch baking dish.
- Saute celery, onion and mushrooms in oil until tender.
- Mix with remaining ingredients.
- Put into greased baking dish and bake for 25-30 minutes.

ONE-POT BROCCOLI CHEESE BROWN RICE
This warm and cheesy one-pot broccoli cheese brown rice is an easy, healthy, delicious side dish with both veggies and whole grains! Kids love it too!

Steps:
- Melt the butter in a medium sauce pan over medium heat. Add onion and saute for 2-3 minutes, until translucent. Add garlic and saute an additional 30 seconds.
- Add brown rice and stir to coat the rice in the butter and onions for about 1 minute.
- Add 1/2 teaspoon salt and the water and bring to a simmer. Cover the pan, reduce the heat to low and cook the brown rice for 25 minutes.
- After 25 minutes, add the chopped broccoli to the pot (right on top of the rice; no need to stir it in yet).
- Cover and cook for an additional 5 minutes. Then turn off heat and let it sit, covered, for 5-10 minutes.
- Remove lid and stir broccoli into the rice. Add the cheddar cheese and stir to get everything well mixed and let the cheese melt.
- Season to taste with salt and pepper and serve with extra cheddar cheese sprinkled on top.

BROWN RICE AND CHEESE CASSEROLE
Found this in a health food cookbook 30 years ago. Everyone loves it. Don't leave out the tamari sauce. It is a key ingredient. I like it because it's a good meatless meal. The cheese and nuts provide the protein. It's really good served with applesauce and a side veggie such as broccoli

- Preheat oven to 350°F.
- Grease a 8 x 8 baking dish.
- Put the rice in a large mixing bowl.
- In a food processor chop the walnuts and add to the cooked rice.
- Then using the same food processor shred the carrots and the cheese, and add to rice mixture.
- Add the tamari, eggs and pepper. Blend it all together.
- Spoon into baking dish.
- Spread breadcrumbs on the top.
- Pour the milk or water over the breadcrumbs, and place in the oven for 50 minutes. Enjoy!
