Horizontal slices of rich brownie cake make dramatic stripes in this striking frozen dessert, which features all the fixings of an old-fashioned sundae -- and then some. Two kinds of ice cream -- vanilla and strawberry -- are used as the fillings, along with crunchy peanut butter and crushed raspberries. Everything is layered in a loaf pan before freezing, slicing, and serving -- with whipped cream, sugared peanuts, and cherries on top.

Vegetable-oil cooking spray
2/3 cup all-purpose flour
1/4 cup Dutch-process cocoa powder
3/4 teaspoon coarse salt
1/2 teaspoon baking powder
1 stick unsalted butter, room temperature
1 cup sugar
2 large eggs, room temperature
1 teaspoon pure vanilla extract
1/3 cup whole milk
4 ounces bittersweet chocolate, preferably 61% cacao, melted
1/2 cup crunchy peanut butter
1 1/4 cups vanilla ice cream, softened
1/3 cup crushed raspberries
1 1/2 cups strawberry ice cream, softened
Lightly sweetened whipped cream
Sugared Peanuts
Maraschino cherries, for serving

Steps:

  • Cake: Preheat oven to 375 degrees. Coat a 9-by-13-inch baking pan with cooking spray. Line with parchment, leaving overhang on long sides; coat parchment with cooking spray. Whisk together flour, cocoa, salt, and baking powder in a bowl.
  • In a large bowl, beat butter with sugar on medium speed until pale and fluffy, about 3 minutes. Add eggs, one at a time, beating until smooth. Beat in vanilla. With mixer on low speed, add flour mixture in three batches, alternating with milk in two additions, beating until combined. Beat in melted chocolate.
  • Transfer batter to prepared pan, smoothing top with an offset spatula. Bake until set on top but still wobbly in center, about 15 minutes. Let cool completely in pan on a wire rack.
  • Assembly: Line an 8 1/2-by-4 1/2-inch loaf pan with plastic wrap. Use parchment to lift brownie from baking pan. Cut crosswise into 3 pieces, one piece cut to fit bottom of loaf pan exactly, the next slightly wider, and the last widest of all (to match size of pan, which gets wider toward top).
  • Place smallest brownie piece, top-side up, in bottom of lined loaf pan. Spread peanut butter over top, then vanilla ice cream. Place second-largest brownie piece, top-side down, on ice cream. Spread with raspberries, then strawberry ice cream. Top with final brownie piece, topside down. Cover with plastic wrap and freeze until firm, at least 6 hours and up to 1 day.
  • Run a butter knife around edges to release lined cake from pan, then use plastic to remove cake and place on a serving platter. Top with whipped cream and sprinkle with peanuts. Slice with a sharp knife, wiping blade clean between each. Serve each slice with more peanuts and a cherry.

Super easy caramel or fudge brownie sundaes! They come together in 10 minutes or less, and you can get all the ingredients at your local store. Perfect for an elegant and easy brownie dessert.

2 big squares your favorite brownies
Hot fudge (I used Sanders brand hot fudge sauce)
Warm caramel Sauce (I used Sanders brand caramel sauce)
Your favorite vanilla ice cream (or any other flavor)
Sliced strawberries

Steps:

  • Break the brownies apart into small pieces. You can use good quality store-bought brownies or make my Perfect Brownies recipe.
  • Divide up some of the brownie pieces into 2 wide serving glasses, on the bottom layer. Add a few drizzles of hot fudge or warm caramel sauce, or both.
  • Add a 2-3 slices of strawberry. Then, add a 2 small scoops of ice cream.
  • Top with more brownie pieces, more sauce, strawberry slices, and more ice cream. Then finish it off with a few more drizzles of fudge and/or caramel sauce and strawberry slices.

Water, vegetable oil and eggs called for on brownie mix box
1/2 gallon (8 cups) vanilla ice cream, slightly softened
1 cup Hershey's® hot fudge topping, warmed if desired
2 tablespoons Betty Crocker™ Decorating Decors candy sprinkles
16 red maraschino cherries with stems, drained

Steps:

  • Heat oven to 350°F. Line 2 (9-inch) round cake pans with foil; grease bottoms only with shortening or cooking spray.
  • Make brownie batter directed on box. Divide batter evenly between pans. Bake 19 to 22 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely in pans, about 1 hour. Do not remove from pans.
  • Spread slightly softened ice cream evenly on brownies in pans. Freeze at least 2 hours or until ice cream is firm.
  • Remove desserts from pans; remove foil. Place on serving plates. Cut each dessert into 8 wedges. Drizzle each wedge with hot fudge topping. Decorate with candy sprinkles and cherries. Store covered in freezer.

2 tablespoons unsweetened cocoa powder
Fine salt
4 ounces bittersweet or semisweet chocolate, chopped

Steps:

  • Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees F (to keep cooked waffles warm). Sift together the flour, cocoa powder and 1/8 teaspoon salt in a small bowl; set aside.
  • Combine half the chocolate and the butter in a medium saucepan over medium heat, stirring until melted and smooth, about 5 minutes. Remove from the heat and let cool slightly. Stir in the sugar and eggs. Add the flour mixture and remaining chocolate and stir until just combined.
  • Lightly brush the top and bottom of the waffle iron with butter. Fill the waffle iron about three-quarters of the way full (some waffle iron should still be showing). Close the lid gently and cook until the waffles are cooked through and slightly crispy around the edges, 4 to 6 minutes. Keep the cooked waffles warm in a 200 degrees F oven or covered with foil on a plate while you make the remaining waffles.
  • Top each waffle with ice cream, whipped cream, caramel sauce, sprinkles and a cherry, if desired.

32 ounces semisweet chocolate, chopped
7 eggs
2 cups sugar

HOT FUDGE SAUCE:
1 cup heavy whipping cream
1 cup sugar
1/2 cup butter, cubed
1 cup baking cocoa
Vanilla ice cream
Whipped cream and maraschino cherries, optional

Steps:

  • In a large heavy saucepan, melt butter and chocolate over low heat; stir until smooth. Cool., In a large bowl, beat eggs and sugar on low speed until combined. Beat on medium-high until thickened and lemon-colored, about 12 minutes. Beat in vanilla and chocolate mixture. Fold in flour and salt just until blended (batter will be thick). Fold in walnuts if desired. , Transfer to two greased 13x9-in. baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on wire racks for 15 minutes. , In a large saucepan, combine the cream, sugar and butter. Cook and stir until sugar is dissolved. Bring to a boil, without stirring. Reduce heat; simmer, uncovered, for 3 minutes. Cool for 3 minutes. , Place cocoa in a heat-proof bowl. Carefully whisk hot liquid into cocoa until smooth (do not scrape pan). Cut brownies into squares; serve with ice cream and hot fudge sauce. Garnish with whipped cream and cherries if desired.

  • Prepare a 9x13 baking pan with parchment paper. Make brownies according to package directions. Reduce baking time on box to 25-30 minutes, to not overcook the brownies. Remove brownies from oven and let them completely cool. Once cooled remove brownies from pan, using the parchment paper to lift them out. Use a biscuit cutter to cut 8-9 round pieces from the brownies. If you want to leave this as a large cake and just cut into square pieces, leave in 9x13 and follow the remaining directions. You will need an extra pint of ice cream or you could substitute the pints for ½ gallon of ice cream.
  • Set round pieces on a baking sheet. Set aside remaining brownie pieces aside for casual snacking or devouring.
  • Remove ice cream pints from freezer, using a sharp knife cut the ice cream pints into 1 inch sections, or how ever thick you want your ice cream. Watch this video if you need a visual on how to do this. Cut 8-9 slices depending on how many brownies you have.
  • Set one ice cream section on top of 1 brownie, repeat with remaining sliced ice cream sections and brownies. Set brownies top with ice cream in the freezer for 30-60 minutes or until ice cream is frozen and stuck to the brownie.

  • You will need about 2/3 of the pan of the brownies. I think you can figure out what to do with the leftovers. Take out 2/3 of the brownies and crumble or cut them into small bite sized pieces.
  • In a bowl, mix together the sprinkles and ice cream until well distributed. Spread half of the ice cream in the bottom of a 9 inch loaf pan. Top the ice cream with an even layer of the crumbled brownies. Follow that with the other half of the ice cream and a final layer of the brownies. Cover the pan with saran wrap and freeze for at least 4 hours or overnight.
  • When ready to serve, drop the bottom of the pan in 2-3 inches of hot water to loosen it up, then turn it over onto a serving platter. Slice and serve, allowing guests to top the slices with their favorite sauces and ice cream toppings.
