A co-worker couldn't decide on her favorite for her birthday treat, brownies or chocolate chip cookies, so she said I should just pick one. On the way home I thought this up and couldn't find it on Allrecipes so I created it. These go quickly; I usually make a double batch in a jelly roll pan.

½ cup butter, softened
½ cup light brown sugar
¼ cup white sugar
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Beat softened butter, light brown sugar, 1/4 cup white sugar, and 1/2 teaspoon vanilla extract together in a large bowl until creamy. Add 1 egg; beat until light and creamy, about 2 minutes.
  • Whisk 1 1/4 cups flour, 1/2 teaspoon salt, and baking soda together in a bowl. Gradually stir flour mixture into butter mixture until dough is combined. Stir chocolate chips into dough. Spread dough into the bottom of the prepared baking dish to cover completely.
  • Stir 1 cup white sugar, melted butter, and 1 teaspoon vanilla extract together in a bowl; add 2 eggs and beat well. Mix cocoa powder into butter mixture until well-combined. Stir 1/2 cup flour, baking powder, and 1/8 teaspoon salt into cocoa mixture until batter is combined. Pour brownie batter over cookie dough and spread to cover completely.
  • Bake in the preheated oven until a toothpick inserted into the center of the brookies comes out clean, 20 to 25 minutes. Cool completely before cutting into bars.

1 ounce unsweetened chocolate, melted and cooled
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt
Confectioners' sugar

Steps:

  • In a large bowl, beat the sugar, egg, oil, chocolate and vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture. Chill for at least 2 hours. , Shape dough into 1-in. balls; roll in confectioners' sugar. Place 2 in. apart on lightly greased baking sheets. Bake at 350° for 10-12 minutes or until set. Remove to wire racks.

1 box fudge brownie mix
2 eggs
1/4 cup vegetable oil
1/4 cup all purpose flour
1 cup creamy peanut butter
1 cup powdered sugar
4 oz. semi sweet chocolate {melted}
1/4 cup lightly salted peanuts {chopped}

Steps:

  • Preheat oven to 350°.
  • In a medium bowl combine the brownie mix, eggs, oil and flour with a hand held mixer until everything is mixed together and thick.
  • Using a medium cookie scoop {or about 1.5 tablespoons}, scoop mounds of cookie dough into your hand and roll them into a nice and smooth ball. Place them onto a cookie sheet that is covered in a silicone mat {or parchment paper} and bake for 9-11 minutes. The edges of the cookies will be cooked and the middle will be set. The important thing is to not over bake them.
  • While the cookies are baking, combine the peanut butter and powdered sugar with a hand held mixer. Using a small cookie scoop {or about 1 tablespoon}, scoop mounds of peanut butter mixture onto a parchment lined baking sheet. Roll those balls into nice and smooth truffles.
  • Once you remove the cookies from the oven, add a peanut butter truffle ball to the middle of each cookie. Allow the cookies to cool on the cookie sheet for 5 minutes and then move them to a cooling rack.
  • Once the cookies are completely cooled, take a heaping teaspoon of melted semi-sweet chocolate and spread it over the top of the peanut butter ball on the cookie. Use the back of the spoon or knife spread it to completely cover the peanut butter. While the chocolate is still wet sprinkle the top with chopped peanuts. Allow the chocolate to set up completely and then serve.
  • Store the Buckeye Brownie Cookies in an air tight container at room temperature for up to 5 days.

1/2 cup all-purpose flour (62.5 grams) (spooned & leveled)
1/4 cup cocoa powder (20 grams)
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter (112 grams) (sliced into 6-8 pieces)
8 ounces dark chocolate (226 grams) (50-70%)
2 large eggs
1 1/4 cup granulated sugar (250 grams)
1/2 cup chocolate chips (I used dark but semi-sweet work too)

Steps:

  • Preheat the oven to 350F degrees. Line cookie sheets with parchment paper or baking mats.
  • In a medium bowl whisk together the flour, cocoa, baking powder and salt until there's no lumps. Set aside.
  • Chop the chocolate into very fine pieces and place in a heatproof bowl with the butter. Microwave on medium power for 45-second intervals. Stir in between each interval until smooth. Set aside.
  • In a large bowl beat the eggs and sugar until pale in color (about 1-2 minutes).
  • Mix the melted chocolate mixture into the egg mixture until its even in color.
  • Gently stir the flour mixture into the batter. If there's lumps, use an electric mixer on low speed until it's smooth. The batter will be glossy and sticky.
  • Sir in the chocolate chips.
  • Lightly spray a cookie scoop (or tablespoon) with non-stick cooking spray. Scoop out about 1 - 1.5 tablespoons of dough and drop onto the lined cookie sheet. Ensure that each dough balls is about 2 inches apart.
  • Bake 1 sheet at a time on the middle rack in the preheated oven for 9-11 minutes, or until the tops look set. They should be crinkly and shiny.
  • Cool the cookies on the cookie sheet, then transfer to a wire rack using a metal spatula.
