Made from marbled layers of brownie batter and chocolate chip cookie dough, brookies are a fun treat for all ages.

1 stick (½ cup) unsalted butter
4 oz bittersweet chocolate, roughly chopped (best quality, such as Ghirardelli)
½ cup granulated sugar
½ cup packed light brown sugar
1 teaspoon vanilla extract
¼ teaspoon salt
2 large eggs
½ cup all-purpose flour, spooned into measuring cup and leveled off with knife
1 stick (½ cup) unsalted butter, at room temperature
⅓ cup granulated sugar
⅓ cup packed light brown sugar
½ teaspoon vanilla extract

½ teaspoon salt
½ teaspoon baking powder
¼ teaspoon baking soda
1¼ cups all-purpose flour, spooned into measuring cup and leveled-off with a knife
½ cup semi-sweet chocolate chips

Steps:

  • Set the rack in the middle of the oven and preheat to 350°F. Line a 13 x 9 x 2-inch pan with parchment paper (bring the parchment up the sides of pan so there is a slight overhang) and grease with butter or nonstick cooking spray. (If the parchment is slipping, dot a little butter or nonstick spray in the corners of the pan to help the parchment stick.)
  • Make the brownie batter: Place the butter in a medium microwave-safe bowl and melt in the microwave until bubbling. Add the chocolate and whisk until the chocolate is completely melted. The heat from the butter should be enough to melt the chocolate completely, but if not, place the chocolate-butter mixture in the microwave and heat for 20 seconds or so, then whisk again. (Alternatively, combine the butter and chocolate in a heatproof bowl and set over a pan of simmering water. Stir occasionally until melted.) Whisk in the granulated sugar, brown sugar, vanilla, and salt. The mixture will be a bit grainy; that's okay. Whisk in the eggs. Finally, whisk in the flour until combined. Pour the batter into the prepared pan and spread evenly with a spatula. Set aside.
  • Make the cookie dough: In the bowl of an electric mixer fitted with the paddle or beaters, beat the butter and both sugars for 3 minutes, or until light and fluffy. Scrape down the sides and bottom of the bowl as necessary. Add the vanilla and egg and beat for 1 minute more. Scrape down the sides of the bowl again. Add the salt, baking powder, and baking soda and beat briefly until evenly combined. On low speed, mix in the flour. Finally, add the chocolate chips and mix until just combined.
  • Dollop small spoonfuls of the cookie dough evenly over the brownie batter (no need to spread it out or press it down). Cover the pan with aluminum foil and bake for 20 minutes. Remove the foil and continue baking until the brownie edges are shiny and the cookie portion is golden brown, about 20 minutes more. Transfer the pan to a wire rack and cool completely. To cut, lift the brookies out of the pan using the parchment overhang and transfer them to a cutting board. Pull the parchment away from the edges. Using a sharp knife, cut the brookies into 2-in squares directly on the parchment.

1 cup (2 sticks) unsalted butter
1 1/2 cups firmly packed dark brown sugar
2 large eggs
1 teaspoon pure vanilla extract
2 cups all-purpose flour (see Cook¿s Note)
1/2 teaspoon baking soda
1 teaspoon fine salt
One 12-ounce bag (a scant 2 cups) semisweet chocolate chips

Steps:

  • Position the rack in the middle of the oven and preheat to 350 degrees F.
  • Put the butter in a microwave-safe bowl, cover and microwave on medium power until melted. Alternatively melt the butter in a small saucepan. Brush some butter on the inside of a 9-by-13-inch pan and cool the remaining butter slightly. Whisk the remaining cooled butter, brown sugar, eggs and vanilla in a large bowl until smooth.
  • Whisk the flour, baking soda and salt in another bowl. Stir the dry ingredients into the wet ingredients with a spoon or spatula, taking care not to over mix. The batter should be thick and all of the flour mixture should be fully incorporated. Fold in the chocolate chips.
  • Spread the batter evenly in the prepared pan. Bake until the edges are browned and the center is completely set, about 30 minutes. Cool completely, at least one hour, cut into 24 pieces and serve.

Steps:

  • Preheat oven to 325 degrees F. Melt the butter and unsweetened chocolate over low heat in a medium saucepan, stirring constantly. Remove from heat; cool slightly.
  • Stir the sugar into the cooled chocolate mixture in saucepan. Add the eggs, one at a time, beating with a wooden spoon just until combined. Stir in the vanilla.
  • Stir together the flour and baking soda in a small mixing bowl. Add the flour mixture to the chocolate mixture; stir just until combined. Press one-half of the cookie dough into an 8x8-inch Reynolds® Bakeware Pan. Spread brownie batter evenly over cookie dough. Crumble remaining cookie dough and sprinkle evenly over brownie batter. Press down slightly.
  • Bake 50 to 55 minutes or until edges are firm are starting to pull away from sides of the pan. Cool on a wire rack. Cut into bars.

4 oz. unsweetened chocolate (finely chopped)
1 C. unsalted butter (at room temperature)
2 C. brown sugar
4 eggs
2 1/2 tsp. vanilla extract
1 C. flour
3/4 C. butter (unsalted)
3/4 C. brown sugar
3/4 C. sugar
3 Tbsp. milk or cream
2 tsp. vanilla extract
1 1/2 C. flour
1 1/2 C. mini chocolate chips

Steps:

  • 1. Preheat oven to 325 degrees and line a 11 X 13 pan with foil (let some hang over the edge to it's easy to lft the dessert out when finished), then spray or butter the foil.
  • 2. Brownies: In a microwave proof bowl, melt the chocolate the 30 second increments and stir until smooth. Set aside to let cool.
  • 3. Cream butter and brown sugar together for 2 minutes.
  • 4. Add eggs and vanilla extract, scrape the sides of the bowl as necessary.
  • 5. Pour in chocolate, mix well.
  • 6. On low, mix in flour just until combined.
  • 7. Pour into foiled pan and spread evenly.
  • 8. Bake for 25-30 minutes. (The longer you leave it in, the more "cakey" your brownie layer will be. Less time means a fudgey brownie.)
  • 9. Let brownies cool completely.
  • 10. Cook Dough: Beat butter, brown sugar and sugar together for 2 minutes.
  • 11. Add milk, vanilla and flour and mix just until combined.
  • 12. Stir in 1 1/4 cup of chocolate chips.
  • 13. Spread cookie dough onto cooled brownies, then sprinkle the remaining 1/4 cup of chocolate chips on top and gently press in.
  • 14. Cover and refrigerate for 1-2 hours for easy cutting.
