MILLY'S OATMEAL BROWNIES



Milly's Oatmeal Brownies image

These are wonderful, chewy 'brownies' except that they are made with oatmeal instead of chocolate. Add your favorites (nuts, chocolate chips, chocolate candies, toffee chips) and create a truly delicious snack.

1 cup butter at room temperature
1 cup firmly packed light brown sugar
½ cup white sugar
2 eggs
2 teaspoons vanilla extract
½ teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 ½ cups all-purpose flour
2 cups rolled oats
½ cup chocolate chips
½ cup raisins
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
  • In a large bowl, beat the butter, brown sugar, and white sugar until thoroughly mixed and creamy. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until well mixed, and mix in salt, baking soda, baking powder, flour, rolled oats, plus chocolate chips, raisins, and chopped nuts if desired. Mix well to moisten all ingredients, and spread into the prepared baking pan.
  • Bake in the preheated oven until golden brown, 20 to 25 minutes. Let cool in the pan for about 5 minutes before cutting into bars.

We all grew up eating bowls of lumpy oatmeal for breakfast, and everyone has favorite toppings to make porridge more palatable. My recipe transforms a ho-hum morning staple into something that will make the kids jump out of bed! -Kristen Moyer, Bethlehem, Pennsylvania

1 cup pitted dates, chopped
1 cup 2% milk
1/2 cup ground almonds
1/3 cup old-fashioned oats
2 tablespoons baking cocoa
1 teaspoon butter
1 teaspoon vanilla extract
Optional: Fresh raspberries and sliced almonds

Steps:

  • Place dates in a heatproof bowl; cover with boiling water. Let stand until softened, about 10 minutes. Drain, reserving 1/3 cup liquid. Place dates and reserved liquid in a food processor; process until smooth., In a small saucepan, whisk milk, almonds, oats, cocoa and 1/4 cup date puree until blended. (Save remaining puree for another use.) Bring to a boil over medium heat, stirring occasionally. Remove from heat; stir in butter and vanilla. If desired, garnish with raspberries and sliced almonds.

  • Stir in the vanilla protein powder, coconut flour, cocoa powder and sweetener of choice until fully combined- Oat bran mixture should be extremely thick. Add in the extra 1/4 cup of dairy free milk if needed and ensure it is well mixed. Once this is done, refrigerate uncovered.
  • The next morning, stir the oatmeal very well and add extra non dairy milk if needed before adding the chocolate chips or other toppings of choice. Eat cold for a delicious, brownie batter taste or can be eaten warm- Add chocolate chips post heating!
