Brownie Balls (A.k.a. Pms Dessert!) image

Nothing says "Mom's having PMS" like the foreboding smell of chocolate wafting from the kitchen. When my family sees these these treats on the cooling rack, they know to head for the hills. The recipe yields 2 dozen (if you don't eat half the dough before it's cooked...) but as far as my family knows, it makes four.

1/2 cup butter or 1/2 cup margarine
2 ounces unsweetened baking chocolate
3/4 cup sugar
1 egg
1 teaspoon vanilla extract
1/4 teaspoon salt
1 3/4 cups flour
1/2 cup chopped walnuts (or Pecans!)
powdered sugar

Steps:

  • Pre-heat your oven to 375 degrees (F).
  • Melt butter or margarine and chocolate in medium saucepan over low heat (or melt in the microwave in a glass bowl or measuring cup for 2 minutes or until butter or margarine is melted).
  • Set aside to cool for five minutes.
  • While you're letting the chocolate cool, stir sugar, egg, vanilla and salt together until well blended.
  • Stir the cooled chocolate/butter or margarine mixture until nice and smooth. Then mix it in with the above sugar, etc. mixture.
  • Now stir in the flour and nuts.
  • Shape mixture into 1-inch balls and place 2 inches apart on ungreased baking sheet.
  • Bake for 8 to 10 minutes.
  • While warm, roll in powdered sugar.
  • Cool on wire racks.
  • Once cool, roll in powdered sugar again!
  • Store in airtight container.

These super easy brownie balls are a chocolate lover's dream! Brownies combined with chocolate frosting then covered in melted chocolate make these a decadent treat.

1 18oz fudge brownie box mix plus ingredients to make according to directions (may also use your own homemade brownie recipe)
1 cup chocolate frosting
3 cups chocolate melting wafers (see notes section for alternatives)
sprinkles (optional garnish)

Steps:

  • Prepare brownies according to package directions or your favorite brownie recipe for an 8" x 8" pan and let cool completely. These can be cooked the day before.
  • Break brownies up into large chunks and put in large bowl or stand mixer and mix until crumbled and all large pieces are gone.
  • Add frosting to crumbled brownies and mix well.
  • Line a large baking sheet with parchment or wax paper.
  • Using a medium cookie scoop, portion out brownie mixture and roll into balls. Place balls on prepared baking sheet. (The mixture should be soft but not leave a sticky residue on your hands. If too sticky, refrigerate for 30 minutes before shaping.)
  • Melt chocolate wafers in a wide mouth glass in the microwave at 30 second intervals, stirring between each interval, until melted.
  • Drop balls into melted chocolate and use a spoon to coat fully. Use a fork to remove the ball from the chocolate and tap to remove any excess chocolate. Use a toothpick or fork to slide balls off fork and onto baking sheet.
  • Before chocolate sets, sprinkle with sprinkles or allow the chocolate to set slightly the drizzle with additional chocolate.
  • Let balls set fully at room temperature for 30 minutes before serving.

1/3 cup applesauce
1/4 cup egg substitute
1 tablespoon water
1 (16 2/3 ounce) package double fudge brownie mix (such as Duncan Hines)
cooking spray
4 tablespoons Bourbon
1/3 cup finely chopped walnut pieces or 1/3 cup finely chopped macadamia nuts, toasted

Steps:

  • Preheat oven to 350°.
  • Combine first 4 ingredients (including fudge packet from mix), stirring well.
  • Spread into an 8-inch square baking pan coated with cooking spray.
  • Bake for 30 minutes or until a wooden pick inserted near edge of pan comes out clean.
  • Cool in pan on a wire rack.
  • Crumble brownies; place in a food processor.
  • Add bourbon; process until mixture forms a ball (about 30 seconds).
  • Shape brownie mixture into 24 balls, about 1 1/2 tablespoons each.
  • Place nuts in a shallow bowl.
  • Roll balls in nuts, pressing gently to coat.
  • Store balls in an airtight container at room temperature for up to three days.
