2 tablespoons butter
2 (14 ounce) cans chicken broth
1 teaspoon chicken bouillon granules
1 (12 ounce) package egg noodles

Steps:

  • Melt butter in a small saucepan over medium heat; simmer, stirring frequently, until butter is browned, fragrant, and foamy, with brown bits in it, 5 to 10 minutes.
  • Add chicken broth and bouillon to the pan with the butter; bring to a boil over high heat. Stir in egg noodles, bring to a second boil, cover, and turn off heat; leave pot on the same burner. Let stand for 30 minutes, stirring 2 or 3 times.

1 tablespoon fresh garlic, minced
1/3 cup parmesan cheese or 1/3 cup asiago cheese, shredded
1/2 teaspoon fresh ground black pepper
chopped fresh parsley (optional)

Steps:

  • Cook noodles in salted water according to package directions. Drain; set aside.
  • Melt butter in large saucepan. Add garlic. Cook over medium-high heat, watching closely, 3-5 minutes or until butter foams and just starts to turn a delicate golden color. Remove from heat. Stir in noodles until well coated. Sprinkle with Parmesan cheese and coarse ground black pepper. Garnish with parsley, if desired. Serve immediately.

6 ounces pasta of choice (I used bucatini)
5 tbsp butter (divided)
4 cloves garlic (crushed or minced)
1/2 cup finely grated parmesan
salt and freshly ground black pepper (to taste)

Steps:

  • Bring a large pot of salted water to a boil and cook the pasta 2 minutes shy of al dente. Reserve 3/4 cups pasta water and drain.
  • While the pasta is cooking, melt the 4 tablespoons butter in a large pan over medium heat. Add the garlic and cook, swirling, until the butter foams, smells nutty and toasted, there are golden brown solids, and the garlic is lightly golden. Remove from the heat and stir in the last tablespoon of butter.
  • Carefully add 1/2 cup of the pasta water to the melted butter - and bring to a boil over high heat, whisking or swirling often to emulsify the pasta water and butter, about 1 minute.
  • Add the pasta to the pan and cook, turning the heat up, tossing occasionally, until pasta is al dente and the sauce reduces and becomes thick and glossy, adding pasta water as needed, about 2-3 minutes.
  • Stir in the cheese and toss well to melt and combine, thinning with extra pasta water if needed. Season with salt and pepper to taste and enjoy immediately.

15 Minute Garlic Fried Noodles image

Just 15 minutes and 6 ingredients is all you need for this super easy, flavorful, rice noodle side dish!

8 oz thin rice noodles (1 MM or S)
3 tablespoons salted butter
1 cup green onions, diced and divided. (about 2 bunches)
6-8 cloves garlic (minced)
1-2 tablespoons sugar (coconut or light brown sugar. Or you could use hoisin.)
3 tablespoons soy sauce (or tamari, or a gluten free soy sauce)

Steps:

  • Soak rice noodles in almost boiling water for 4 minutes until al dente. Drain then rinse with cold water to stop cooking and set aside.
  • Meanwhile, melt butter in a large skillet on medium to high heat. Add about 3/4 cup of the scallions and all of the garlic and sauté for 1-2 minutes until garlic is fragrant.
  • Add sugar and mix in until it's all incorporated. Add soy sauce and let simmer together for 1 minute.
  • Add noodles and continue to cook for 5-7 minutes until noodles have fried and absorbed the sauce.
  • Plate, top with more green onions, your favorite hot sauce or chili garlic sauce and enjoy!

1/4-1/2 cup salted butter

Steps:

  • Boil water for noodles, cook noodles according to directions on package.
  • While noodles are draining, melt butter in a small frying pan.

1 pound dried egg noodles or egg pasta
1 stick (1/2 cup) unsalted butter
6 ounces Greek feta (preferably Mt. Vikos or Dodoni brand), crumbled (1 1/2 cups)

Steps:

  • Cook noodles in a 6- to 8-quart pot of boiling salted water until just tender (softer than al dente). Drain well in a colander.
  • While noodles cook, melt butter in a small heavy skillet over low heat and continue to cook until it begins to turn golden brown, about 6 minutes. Remove from heat.
  • Spread one third of noodles on a large platter and sprinkle with one third of cheese. Repeat layering with remaining noodles and cheese in 2 batches, then pour brown butter over noodles and toss with 2 forks to combine. Spread noodles on platter and season with pepper.

  • In a small dutch oven cook the butter over medium heat until it bubbles and foams. It will start to develop brown specks as it begins to emit a nutty aroma. Whisk until it's lightly golden brown, then toss in the garlic for about 1 minute. At this point, your butter should be perfectly golden and your garlic will smell fragrant. Remove the pan from heat to stop the cooking process. The entire process should take about 5 to 8 minutes, depending on your stove and pan. Keep the pan nearby because you will use that one for the final process.
