BROWN-BUTTER GLAZE
Use this decadent glaze to finish our Brown-Sugar Pound Cupcakes.

Steps:
- Heat butter in a saucepan over medium heat until golden brown, about 10 minutes. Carefully pour butter into a bowl, leaving sediment behind.
- Add sugar, vanilla, and 2 tablespoons milk to butter, and stir until smooth. If glaze is too thick, add more milk. Use immediately.
BROWN SUGAR POUND CAKES
Pound-cake batters bake into especially rich and dense cupcakes, and the traditional recipe can be adapted in many ways to vary the flavor and texture. In this version, brown sugar replaces granulated for a hint of caramel flavor, while buttermilk makes for a more tender crumb than when made with regular milk. Nutty brown-butter icing pairs especially well with these cupcakes, but many other toppings would also work, including brown-sugar cream-cheese frosting (page 310) or whipped cream (page 316).

Steps:
- Preheat oven to 325°F. Line standard muffin tins with paper liners. Whisk together flour, baking powder, and salt.
- With an electric mixer on medium-high speed, cream butter and brown sugar until pale and fluffy. Add eggs, one at a time, beating until each is incorporated, scraping down sides of bowl as needed. Add flour mixture in three batches, alternating with two additions of buttermilk, and beating until combined after each.
- Divide batter evenly among lined cups, filling each three-quarters full. Bake, rotating tins halfway through, until golden brown and a cake tester inserted in centers comes out clean, about 25 minutes. Transfer tins to wire racks to cool 10 minutes; turn out cupcakes onto racks and let cool completely. Cupcakes can be stored up to 3 days at room temperature, or frozen up to 2 months, in airtight containers.
- To finish, place cupcakes on a wire rack set over a baking sheet; spoon icing over cupcakes, and let set. Cupcakes are best eaten the day they are glazed; keep at room temperature until ready to serve.
STRAWBERRY CUPCAKES WITH STRAWBERRY BUTTERCREAM
Fresh strawberries go in the batter and the pretty pink frosting for these crowd-pleasing cupcakes. Save the smallest ones for the garnish.

- Preheat oven to 350 degrees. Line standard muffin tins with paper liners. Whisk dry ingredients in a large bowl. Cream butter and sugar with a mixer until light and fluffy. Add eggs and white, 1 at a time, beating after each addition.
- Reduce speed to low. Mix milk and vanilla in a bowl. Add dry ingredients to butter mixture in 3 additions, alternating with wet ingredients and ending with dry. Scrape sides of bowl. Stir chopped strawberries into batter. Divide batter among muffin cups, filling each 2/3 full.
- Bake cupcakes until testers inserted into centers come out clean, about 20 minutes. Let cool in tins on wire racks. (Unfrosted cupcakes will keep, covered, for up to 3 days, unless otherwise noted.) Once cupcakes are cool, frost tops with strawberry buttercream. Frosted cupcakes will keep, covered and refrigerated, for up to 2 days. Top with a strawberry just before serving.

- Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan., Cream butter and brown sugar until light and fluffy, 5-7 minutes. Add 1 egg at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with sour cream, beating after each addition just until combined., Transfer to prepared pan. Bake until a toothpick inserted near center comes out clean, 55-65 minutes. Cool in pan 10 minutes before removing to a wire rack to cool completely., For glaze, combine butter and pecans in a small saucepan over medium heat, stirring constantly, until butter is light golden brown, 4-5 minutes. Stir into confectioners' sugar. Add vanilla, salt and enough cream to reach a drizzling consistency. Drizzle glaze over cake, allowing some to drip down sides. Let stand until set.

BROWN SUGAR CUPCAKES WITH BROWN BUTTER GLAZE
Ok, so I know I don't like Martha and all, so I guess I should stop submitting her recipes. It's really her personality that grates on me, but she does have quite a few good recipes up her sleeve, and so I can't help but share when I come across one not already posted. This one is a very moist cupcake, with a nice durable frosting, which makes them great to transport. The brown sugar flavor makes them stand out from other cupcakes, and even though they are homemade, and taste like it, they are not overly difficult or time consuming to make.

Steps:
- Soften 2 sticks butter.
- Preheat oven to 325°F.
- Line muffin pan with paper liners.
- Cream 2 sticks butter and the brown sugar until light and fluffy.
- Add eggs, beating after each addition.
- Add buttermilk (Plain yogurt also works well) and mix well.
- Add flour, baking powder, and salt. Mix well.
- Fill muffin cups 2/3 full and bake until golden and toothpick inserted in center comes out clean, about 20 minutes.
- Set cupcakes on wax paper to cool.
- When ready to frost, melt remaining stick of butter over medium heat until golden brown.
- Remove from heat and add confectioners sugar and vanilla to butter and mix. Add milk one tablespoon at a time until smooth and of your desired thickness. I like to leave it on the thick side so it doesn't run off the sides of the cupcakes, but it's up to you what you like.
- Spoon glaze over each cupcake and swirl it around.
- Let stand until glaze is set.
