This recipe I made because I wanted to use up some instant banana oatmeal I had. I don't use syrup on it because of the sweetness from the oatmeal and brown sugar.

2 tablespoons vegetable oil
1 cup milk
1 cup all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
½ cup light brown sugar
1 packet instant, banana-flavored oatmeal

Steps:

  • Whisk together egg, oil, and milk until smooth. Sift together flour, baking soda, and salt; add to egg mixture along with brown sugar, and oatmeal; stir until just combined.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or spoon the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

1/2 cup plus 2 tablespoons quick-cooking oats
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup packed brown sugar
1 large egg, room temperature
2 tablespoons vegetable oil
1 cup buttermilk

Steps:

  • In a small bowl, combine the oats, flours, baking soda, salt and sugar. In another small bowl, beat the egg, oil and buttermilk. Stir into dry ingredients just until moistened. , Pour batter by 1/3 cupfuls onto a greased hot griddle. Turn when bubbles form on top; cook until the second side is golden brown., Freeze option: Freeze cooled pancakes between layers of waxed paper in a freezer container. To use, place pancakes on an ungreased baking sheet, cover with foil and reheat in a preheated 375° oven 5-10 minutes. Or place a stack of 3 pancakes on a microwave-safe plate and microwave on high until heated through, 1-1/4 to 1-1/2 minutes.

1 cups ¾of milk
2 Free range eggs
1 teaspoon of vanilla bean extract paste
2 cups Self Raising flour
1/3 cup of brown sugar

Steps:

  • In a bowl or large jug, roughly whisk together the milk, eggs and vanilla until both eggs are fully broken up. Put aside for now.
  • In a stand mixer bowl sift the flour, then add the brown sugar and mix until combined. Make a well in the centre and pour in the egg and milk mixture.
  • Place bowl onto the stand and start off mixing on the lowest setting until almost all of the flour is mixed in, once the batter is starting to form increase the speed of your mixer and mix until ALL lumps are gone (approximately 1 minute). If you don't own a stand mixer (electric bench top mixer) you can of course use hand beaters or the old fashioned way...with a lot of elbow grease and muscle power!
  • Proceed to cook pancakes as per usual in fry pan or electric pan.
  • Serve with favourite toppings and enjoy!

2 cups krusteaz buttermilk pancake mix
1 1/2 cups water
vegetable oil
1/2 cup butter or 1/2 cup Smart Balance butter spread
1 cup brown sugar
2 tablespoons cinnamon

Steps:

  • Heat 1-2 tablespoons of oil on griddle.
  • Mix pancake mix and water.
  • Pour prepared mix onto hot oiled griddle in 4" size pancakes.
  • Outside of pancake should sizzle. Flip when top has begun to bubble and underside is golden.

3 tablespoons butter, softened
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
2 cups milk, any kind
1 teaspoon vanilla extract

Steps:

  • In a small microwave-safe bowl, melt together brown sugar and butter.
  • Stir well, then set aside to cool slightly.
  • In a large bowl, whisk together flour, baking power and salt.
  • Pour in eggs, milk and vanilla extract, along with brown sugar mixture and stir until well combined.
  • Heat a skillet or griddle over medium-high heat, until a drop of water skitters around when dropped on the surface.
  • Lightly grease with butter or oil, and drop pancake batter by 1/4-cup measures on the pan.
  • Cook until pancake is slightly dry around the edges and small bubbles form in the batter (bottom will be browned).
  • Flip and cook for another minute or so on other side, until bottom is browned.
  • Serve with Brown Sugar Maple Syrup (below).

1 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 teaspoon ground cinnamon
pinch ground nutmeg
pinch ground cloves
2 tablespoons brown sugar
1 tablespoon unsalted butter (, melted & cooled)
1 large egg
1 tsp vanilla extract
3/4 cup milk ((or 1 cup for thinner pancakes)
1 cup shredded apple (, about 1 large or 2 small apples)

Steps:

  • In a large bowl whisk together the flour, baking powder, baking soda, cinnamon, nutmeg & cloves
  • In a second medium bowl whisk together the brown sugar, melted butter, egg, vanilla and milk.
  • Fold the wet ingredients into the dry using a rubber spatula or wooden spoon. Then fold in the shredded apple.
  • Heat a griddle to 350F or a frying pan to medium heat. Grease lightly with cookie oil.
  • Pour about 1/4 cup of the batter onto the griddle/frying pan per pancake. Cook for 2-3 minutes or until you see small bubble form on the uncooked side. Flip and cook on the other side for 2-3 minutes.
  • Serve immediately.

Steps:

  • Mix all ingredients except for the brown sugar. Leave some lumps in the batter.
  • Let the batter rest for about 5 minutes until slightly risen and bubbly.
  • After the bottoms and edges of the pancakes have cooked and bubbles are rising to the top, sprinkle 1 tsp of brown sugar on each pancake just before flipping.
  • Flip and cook for 1-2 minutes more until cooked through.

Heat a griddle over moderately high heat until it is hot enough to make drops of water scatter over its surface and brush it with some of the additional melted butter. Pour the batter onto the griddle by 1/3 cup measures and cook the pancakes for 2 minutes on each side, or until they are golden. Transfer the pancakes as they are cooked to a plate and keep them warm. Serve the pancakes with the syrup.
