SALMON WITH STRAWBERRY SALSA
This baked salmon is perfect for Mother's Day this Spring. It's healthy, easy to make, rich in nutrients and made with the most vibrant strawberries!

Steps:
- Preheat oven to 375°F. Remove the salmon from the fridge 15 minutes before cooking and let it come to room temperature.
- Line a baking dish with foil and coat with oil. Place the salmon skin side down in the baking dish and season with ½ tsp salt, pepper and garlic.Bake anywhere from 12-16 minutes or until the salmon is lightly translucent in the center. Fish should reach an internal temperature of 145° F.
- While the salmon cooks, make the strawberry salsa by chopping and prepping the ingredients. Place all ingredients in a bowl and gently stir to mix.Place this on top of your salmon and serve with salad and rice/ or pasta. Enjoy!

- In a small bowl, mix the first five ingredients; rub over flesh side of salmon. Refrigerate, covered, 1 hour., For relish, in another bowl, mix mint, oil, lemon juice, lemon peel and sugar. Add strawberries and cucumber; toss to coat., Lightly oil grill rack. Place salmon on grill rack, skin side down. Grill, covered, over medium heat 8-10 minutes or until fish flakes easily with a fork. Serve with relish.

- In a small mixing bowl stir together brown sugar, lime juice, lime zest, butter, garlic and cayenne pepper.
- Place salmon fillets in a dish. Spoon and spread lime mixture over tops and sides of salmon if using skin-on salmon, if using skinless spread mixture over top and bottom of salmon (use up all of the mixture). Let marinate in refrigerator 30 minutes. Preheat oven to 425 degrees.
- Line a 13 by 9-inch baking dish with Reynolds Kitchens Unbleached Parchment Paper. Place salmon on parchment, leaving space between fillets. Season with salt and pepper.
- Bake in preheated oven until salmon flakes easily with a fork, about 12 - 15 minutes (cook time will vary based on thickness of fillets).
- Sprinkle with cilantro and serve warm with lime wedges for spritzing over salmon. Serve over Coconut Rice if desired.

- Spray baking dish with non-stick spray. (We often forget; no big deal.).
- Mix brown sugar and lime juice.
- Put salmon in the the baking pan and spoon on half of the juice mixture.

- Add all of the ingredients for the vinaigrette to a blender and blend until smooth. Transfer to a jar or sealable container and refrigerate until ready to use.
- Stir together the ingredients for the salsa in a bowl. Refrigerate until ready to use.
- Add the ingrediens for the salad to a large serving bowl and toss in desired amount of strawberry vinaigrette. Refrigerate until the salmon is ready.
- Place the salmon on a plate or in a casserole dish and drizzle with olive oil. Use your hands to spread the oil over the flesh so that the whole surface is coated. Stir together all of the spices (or use your favorite spice blend) and sprinkle them over the fish.
- Scrape any food particles off of your grill and spray (or brush) it with oil - this ensures the fish will not stick to the grill. Preheat the grill to medium-high (about 400 to 450 degrees F), keeping the grill covered.
- Place the salmon fillet on the grill skin-side down and cover the grill, leaving the fish untouched for 5 to 6 minutes. Carefully flip and cook on the other side about 2 minutes, or until grill marks appear. Note: Salmon fillets that are one inch thick or less will take about 8 minutes total on the grill. Thicker fillets will require 10 to 12 minutes. You can cook the salmon for less time if you want the center of the fish to be rare).
- Transfer to a cutting board and cut smaller fillets to serve.
- Serve arugula salad with salmon and top with strawberry salsa.
