- In a small bowl, combine the brown sugar, garlic, chipotle peppers and salt; rub over salmon., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Place salmon skin side down on grill rack. Grill salmon, covered, over high heat or broil 3-4 in. from the heat for 5-10 minutes or until the fish flakes easily with a fork., In a small bowl, combine the salsa ingredients; serve with salmon.

- In a small mixing bowl stir together brown sugar, lime juice, lime zest, butter, garlic and cayenne pepper.
- Place salmon fillets in a dish. Spoon and spread lime mixture over tops and sides of salmon if using skin-on salmon, if using skinless spread mixture over top and bottom of salmon (use up all of the mixture). Let marinate in refrigerator 30 minutes. Preheat oven to 425 degrees.
- Line a 13 by 9-inch baking dish with Reynolds Kitchens Unbleached Parchment Paper. Place salmon on parchment, leaving space between fillets. Season with salt and pepper.
- Bake in preheated oven until salmon flakes easily with a fork, about 12 - 15 minutes (cook time will vary based on thickness of fillets).
- Sprinkle with cilantro and serve warm with lime wedges for spritzing over salmon. Serve over Coconut Rice if desired.

- Preheat oven to 375°F. Remove the salmon from the fridge 15 minutes before cooking and let it come to room temperature.
- Line a baking dish with foil and coat with oil. Place the salmon skin side down in the baking dish and season with ½ tsp salt, pepper and garlic.Bake anywhere from 12-16 minutes or until the salmon is lightly translucent in the center. Fish should reach an internal temperature of 145° F.
