BROWN SUGAR-GLAZED SWEET POTATOES

- Preheat oven to 350°. Place sweet potatoes in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 5 minutes. Drain., Meanwhile, in a small saucepan, combine butter, brown sugar, apple juice, apple and raisins; bring to a boil, stirring frequently. Remove from heat. If desired, stir in brandy., Transfer sweet potatoes to a greased 8-in. square baking dish; top with apple mixture. Bake, uncovered, 25-30 minutes or until bubbly and sweet potatoes are tender, basting occasionally with sauce.

- Preheat oven to 375 degrees F. Grease a 9 by 13-inch baking dish with 1 tablespoon butter.
- Cut each of the yams into 8 evenly shaped wedges. Lay them out in the prepared baking dish in an even layer. Melt the butter in a small saucepan over medium heat. Stir in the brown sugar and allow to dissolve. Mix in syrup and cook until smooth. Pour the glaze over the yams and sprinkle with nutmeg.
- Cover the baking dish with foil and bake for about 45 minutes or until the yams are tender when pierced with a fork but they still hold their shape.

- If using fresh sweet potatoes, place in a large saucepan or Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and cook 25-40 minutes or until tender. Drain; cool slightly and peel. - Preheat oven to 375°F.
- Arrange potatoes in a 13x9x2-inch baking dish.
- Combine sugar, butter and spices in a heavy small saucepan over medium heat. Bring to a boil, stirring until sugar dissolves.
- Pour over potatoes; toss to coat. Cover dish tightly with foil.

- Gather the ingredients.
- Peel the sweet potatoes and cut them into 1/2-inch to 1-inch-thick slices.
- Place the sweet potato slices in a saucepan and cover with water. Bring to a boil and cook for about 12 minutes, or until just tender. Alternatively, roast the sweet potato slices in a 375 F oven for about 25 minutes.
- In a heavy skillet, combine brown sugar, water, butter, and salt. Simmer over low heat for 5 minutes.

- Cut each potato in half then each half into quarters lengthwise to get spears. If the potatoes are huge, cut each half into fifths. Each spear should be no bigger than 3/4” of an inch at its thickest point. Place the cut potatoes in a large bowl of ice water. Allow to soak for 30 minutes.
- Remove the potatoes from the ice water, pat dry. Place the potatoes into a bowl, pour in 1/4 cup of the melted butter and salt over top; toss to combine. Pour the potatoes onto the pan(s) in a single layer. Place them skin-side down.
