BROWN SUGAR PULLED CHICKEN
This Brown Sugar Pulled Chicken is the most tender and delicious chicken you'll ever have. Perfect for tacos, burritos, quesadillas or sandwiches, this mouthwatering dish is slowly cooked to perfection in one single pot! Can be easily made in a slow cooker or Instant pot!

- Mix chicken with all the ingredients: Add the chicken to the instant pot. In a small bowl mix together the rest of the ingredients and pour over the chicken. Toss everything together.
- Cook: Close the lid (follow the manufacturer's guide for instructions on how to close the instant pot lid). Set the Instant Pot to the Manual setting on high and set the timer to 8 minutes. Use quick / manual release to release the pressure.
- Shred: Transfer the chicken from the Instant Pot to a bowl. Shred the chicken with two forks then pour some of the sauce leftover in the IP, toss and let it rest for a couple minutes for the chicken to soak up the sauce.
- Serve: Serve on buns with coleslaw.
- Prepare the chicken: Add the chicken to the slow cooker. In a small bowl mix together oregano, salt, pepper and 1/2 cup of the water. Pour over the chicken. Cook on high for 2 1/2 hours.
- Combine glaze ingredients: After 2 1/2 hours, mix the remaining ingredients with the 1/2 cup water left, in a small saucepan. Heat over medium heat until the mixture starts to thicken. It should start to thicken as soon as it comes to a boil.
- Add sauce over chicken: Pour the mixture over the chicken in the slow cooker and toss, so that the chicken is covered in the sauce thoroughly.
- Continue cooking: Cook for an additional hour in the slow cooker on low.
- Shred chicken: Remove the chicken from slow cooker into a big bowl and carefully pull it apart using two forks.
- Serve: Serve warm with remaining glaze on the side, if preferred.

- Preheat oven to 400 degrees F.
- Season chicken liberally with salt and pepper.
- Add 2 tablespoons butter to a large oven-proof skillet and melt over medium high heat.
- Add chicken and sear on both sides until golden brown, about 2-3 minutes per side; set aside.
- Add remaining tablespoon butter to the skillet and melt.
- Add garlic, and cook, stirring frequently, until fragrant, about 30 seconds. Remove from heat.
- Stir in brown sugar, honey, oregano, thyme, basil and crushed red pepper until combined.
- Return chicken to the skillet.
- Place skillet into oven and roast until chicken reaches an internal temperature of 165 degrees F, about 15 minutes.

- Heat oven to 375°F. In small bowl, beat brown sugar, soy sauce, vinegar, ginger and garlic with whisk until well combined. Set aside.

- 1. Preheat oven 375 degrees. Lay chicken skin side down in baking pan. Sprinkle with the garlic salt. Rub the brown sugar over the chicken. Turn and repeat.
- 2. Cover with foil and bake in oven 30 minutes. Remove foil and turn chicken over rubbing into the brown sugar and juices. Bake 10 more minutes. Turn again and bake 10 more minutes.

- If needed, lightly pound thick portions of chicken so breast has a uniform thickness.
- Sprinkle chicken evenly with salt, curry powder, and red pepper. Saute in hot oil in large skillet over medium-high heat for 4 minutes on each side.
- Add orange juice and brown sugar. Cook 4 minutes over medium-high heat or until liquid is slightly reduced. Remove from heat. Remove chicken from skillet.
- Add butter to orange juice mixture, whisking until smooth. Drizzle over chicken and serve immediately.

- Start by preparing the chicken, dice chicken breasts into 1/2 inch to 1 inch pieces. Place in a bowl and add the cornstarch, flour, onion powder, garlic powder and pepper. Toss until all the chicken pieces are coated.
- In a skillet with deep sides, add in about 3-4 Tbls of oil, just to coat the bottom of the pan. Heat over medium heat until hot. Place about half of the chicken into the oil, in a single layer and make sure none is touching. Allow this to get brown on all sides, turning over once. This takes about 5-7 minutes. When chicken is cooked through and down, place onto a plate lined with paper towels. Cook the remaining chicken and set aside.
- You can make the glaze while cooking the chicken. Place the vegetable oil into a small sauce pot over medium heat. Add in garlic until fragrant about 30 seconds, do not allow garlic to brown. Add in soy sauce immediately along with the remaining ingredients. With a whisk, whisk the brown sugar so it dissolves and allow to come to a simmer. Simmer sauce until thickened to a syrup consistency, this will take about 10 minutes but keep an eye on it so it doesn't burn, stirring every minute or so. When simmering, it WILL bubble up from the sugar, do not be alarmed.
- In the same skillet you cooked the chicken, wipe out any excess oil that is left over. Place the chicken back in the pan over medium heat and pour the glaze over it. Toss chicken with the glaze until everything is coated. Serve over steamed rice or your favorite sides, enjoy!
