Steps:
- Using a paring knife, cut a slit straight through center of each sprout and down through stem end (but do not cut in half). Cook bacon in a large pan over medium-high heat until browned and most of fat is rendered, about 7 minutes. Drain on paper towels; discard all but 1 tablespoon fat from pan.
- Return pan to medium-high heat. Add oil, then garlic and thyme; cook until fragrant, about 30 seconds. Add sprouts, butter, brown sugar, stock, 2 teaspoons salt, and 1/4 teaspoon pepper. Bring to a boil, stirring to evenly coat sprouts. Reduce heat to medium-low, cover, and simmer, stirring a few times, until sprouts are tender when pierced with the tip of a knife, 18 to 20 minutes. Uncover and continue cooking until liquid is reduced to a glaze that evenly coats sprouts, 7 to 9 minutes. Remove from heat, stir in bacon, and serve.

GLAZED BACON
Betty Groff, the home cook turned proprietor of Groff's Farm Restaurant, once said that there were only two authentic American cuisines: Pennsylvania Dutch and Creole. Her brown-sugar-glazed bacon represents the former, and she occasionally served it as an hors d'oeuvre at her restaurant, which she started in her family's 1756 Pennsylvania Dutch farmhouse in Mount Joy in the late 1950s. The restaurant became a place of pilgrimage for food lovers, among them Craig Claiborne, who wrote an article about it in The New York Times in 1965. This recipe, which Ms. Groff said "will amaze every guest," serves six, but she noted that you can easily scale it up to serve 30, or possibly more.

- Heat oven to 350 degrees. Line a baking pan with foil; it should be large enough to hold the bacon in a single layer. Place bacon in pan and bake until lightly browned and crisp, 15 to 20 minutes. While bacon cooks, mix remaining ingredients together.

- Preheat oven to 325°F.
- In a sauté pan, cook diced bacon until lightly browned. Add Roasted Chicken Base, brown sugar and water, stir and simmer for 4-5 minutes.
- Score top of ham ½-inch diagonally and repeat scoring in the opposite direction as if cutting X's. Place the ham onto a baking sheet.
- Baste ham with a portion of the glaze and place back in oven. Continue to baste the ham with the remaining glaze throughout the cooking process as specified on package.
- Remove ham from oven and let sit for 15 minutes before serving.
GLAZED BACON
Steps:
- Preheat the oven to 400 degrees F.
- For the red chile-honey glaze: Lay the bacon in a single layer on a sheet pan, keeping space in between each slice. Place bacon in pan and bake until lightly browned and crisp, 15 to 20 minutes. While the bacon is cooking, whisk together the clover honey and ancho chile powder in a medium bowl until smooth. Remove the bacon from the oven, using mitts, and carefully drain the fat, tipping the pan, into a medium bowl. Blot the top of the bacon with a few paper towels. Place the sheet pan with the bacon on it on a cooling rack and immediately brush each slice with the glaze.
- For the sorghum glaze: Lay the bacon in a single layer on a sheet pan, keeping space in between each slice. Place bacon in pan and bake until lightly browned and crisp, 15 to 20 minutes. Remove the bacon from the oven, using mitts, and carefully drain the fat, tipping the pan, into a medium bowl. Blot the top of the bacon with a few paper towels. Place the sheet pan with the bacon on it on a cooling rack and immediately brush each slice with the sorghum syrup.
- For the brown sugar-pecan glaze: Line a baking sheet with a silpat or parchment paper. Lay the bacon in a single layer on the baking sheet, keeping space in between each slice. Divide the brown sugar evenly over the top of each slice of bacon and bake until bacon is golden brown and almost crispy, about 13 minutes. Remove from the oven and sprinkle with the finely chopped pecans, return to the oven and continue baking until pecans are toasted and bacon is crispy, about 3 minutes longer.
- Let sit at room temperature for 10 minutes.
BACON-WRAPPED MEATLOAF WITH BROWN SUGAR-KETCHUP GLAZE

- For the glaze: Mix all ingredients in a small bowl; set aside.
- For the meatloaf: Preheat oven to 350 degrees. Heat oil in a medium skillet. Add onion and garlic, saute until softened, about 5 minutes; set aside to cool.
- Mix eggs with thyme, salt, pepper, mustard, Worchestershire, pepper sauce, and milk or yogurt. Add egg mixture to meat in a large bowl, along with crackers, oatmeal or bread crumbs, parsley and cook onions and garlic; mix with a fork until evenly blended and meat mixture does not stick to bowl. (If mixture does stick, add additional milk, a couple tablespoons at a time, and continue stirring until mixture stops sticking.)
- Turn meat mixture onto a work surface. With wet hands, pat mixture into a loaf approximately 9 by 5 inches.
- Cover a wire rack with foil; prick foil in several places with a fork. Place a rack on a shallow roasting pan lined with foil for easy cleanup.
- Set formed loaf on rack. Brush loaf with all of glaze, then arrange bacon slices, crosswise, over loaf, overlapping them slightly and tucking them under to prevent curling.
- Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool for at least 20 minutes. Slice and serve

- In a small bowl, mix salt, pepper, and garlic and then sprinkle generously over scallops.
- Wrap each scallop with 1/2 bacon strip and secure by pushing a toothpick through the bacon and scallop.
- In another small bowl, mix brown sugar and ginger.
- Sprinkle brown sugar and ginger mixture all over scallop, but reserve much of the sugar and gigner to sprinkle after the scallops flip once.
- Heat butter in large pan until foamy and melted.
- Add scallops to pan and cook on medium high heat. Flip after 5-6 minutes, sprinkle with more sugar and ginger, and continue repeating steps until scallops are cooked.
- Serve immediately.

BACON SKEWERS WITH BROWN SUGAR GLAZE

- Preheat oven to 400 degrees F.
- Line a lipped baking pan with foil (it's important that it is lipped) and put a metal rack on top if using one.
- n a small mixing bowl combine the brown sugar, apple juice and cinnamon. Set aside. The sugar will settle to become more liquid within a few minutes.
- Take the bacon from the package and thread the bacon onto the skewers. Set the bacon skewers evenly onto the foiled lined baking sheet. Take a spoon, fork or basting brush and spread a generous amount of the glaze on each side of the bacon skewers. Make sure to get each side so that the whole bacon skewer is covered.
- Place the baking sheet into the oven and cook for 20 minutes or until your bacon is cooked to your liking. 20 minutes should get them nice and crisped up.
- Take the bacon skewers out of the oven and let cool for a few minutes.
- Serve on a platter or my favorite... in a vase as a centerpiece. Enjoy!

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.

BACON-WRAPPED PORK LOIN WITH BROWN SUGAR GLAZE
Steps:
- Gather the ingredients.
- Heat oven to 350 F.
- Place the pork loin in a roasting pan.
- In a small bowl, combine the rub ingredients: chili powder, paprika, salt, black pepper, cumin, and cinnamon. Rub this mixture over all surfaces of the pork loin.
- Cut each strip of bacon in half crosswise and lay them over the pork loin. You can secure the bacon with toothpicks if desired.
- Roast for about 1 1/2 to 2 hours, or until the pork registers about 150 F.

- Serve and enjoy. Store any leftovers , wrapped in plastic or aluminum foil, in the refrigerator. This recipe was developed at the time when the recommended minimum internal temperature for pork roasts was 160 F. This has changed. The United States Department of Agriculture (USDA) updated safety recommendations for pork in 2011 to lower the target temperature to 145 F. At this temperature the pork loin might be a little pink in the middle, but it is safe. As a bonus, it won't be overcooked and dried out. If you choose to use the new target temperature, you may be able to shorten the roasting time. Aim for 140 F before you put on the glaze.

- Line two baking sheets with foil. One pan will be used to prep the bacon. Place a baking rack into the other pan and spray with cooking spray. Set aside.
- Separate bacon strips and line up on the pan without the rack. Drizzle maple syrup over the slices and using a pastry brush, evenly distribute it over the top all of the slices. Flip the slices and repeat.
- Sprinkle about 2 Tablespoons of brown sugar evenly onto the tops of the maple coated bacon. Use the pastry brush to distribute it evenly. (The sugar will begin to mix with the syrup already on the bacon.) Flip the bacon over and transfer the slices to the baking pan with the rack. Sprinkle another 2 Tablespoons of brown sugar over the tops of the bacon, using the pastry brush again to distribute.
- Place baking sheet into a cold oven on the middle rack. Set oven temperature to 350 degrees F. and allow to come to temperature while the bacon is in the oven. Check at 15 minutes, then every 2-5 minutes until bacon is deeply browned and shiny. Keep an eye on it so that the sugar doesn't burn. Mine took between 25-30 minutes.
