1/4 cup chopped pecans
1/2 teaspoon vanilla extract
1 teaspoon baking powder
3/4 cup all purpose flour
1 beaten egg
1 cup packed light brown sugar
1/4 cup butter
for dusting confectioner's sugar

Steps:

  • Preheat oven to 350 °F. Spray an 8-inch square pan with vegetable oil cooking spray.
  • In a small saucepan, melt the butter. Turn off the heat, add the brown sugar and stir until smooth. Stir in the egg. Stir together the flour and baking powder and stir into the brown sugar mixture. Add the vanilla and pecans. Pour the batter into the prepared pan and bake for 20 minutes. When cool, dust the top with a sifting of confectioners' sugar.

1 cup chopped walnuts
½ cup melted butter
3 eggs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Mix brown sugar, flour, walnuts, butter, eggs, baking powder, vanilla extract, and salt together in a bowl by hand until smooth. Spread evenly into the prepared pan.
  • Bake in the preheated oven until the top is dry and edges have started to pull away from the sides of the pan, 25 to 30 minutes.
  • Remove from the oven and let cool for 10 to 15 minutes before slicing.

2 cups brown sugar (, packed)
2 large eggs
2 teaspoons vanilla extract
2 2/3 cups flour
2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Pre-heat oven to 350 degrees and spray a 9x13 baking pan with baking spray.
  • To your stand mixer add butter on medium high speed until creamy.
  • Add in brown sugar, until light and fluffy, about 1 minute.
  • Add in eggs and vanilla until well blended.
  • Sift together flour, baking powder and salt.
  • Turn on stand mixer on lowest speed setting and add in flour mixture.
  • Stop mixing as soon as flour is combined.
  • Press mixture into baking dish and bake for 30-35 minutes or until the top is just golden brown and the middle is set.

1 cup packed brown sugar
1 teaspoon vanilla extract
½ cup sifted all-purpose flour
¼ teaspoon baking soda
¼ teaspoon salt
¼ cup flaked coconut
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking pan.
  • In a medium bowl, stir together the egg, brown sugar and vanilla until just blended. Combine the flour, baking soda and salt, quickly stir into the egg mixture. Fold in the coconut and raisins, then spread the batter evenly into the prepared pan.

1/4 cup butter
plus softened butter for pan
1 cup packed light-brown sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 egg
lightly beaten
3/4 cup all-purpose flour
1 teaspoon baking powder
1/4 cup chopped pecans
Confectioners' sugar
for dusting

Steps:

  • Preheat oven to 350˚F
  • Butter an 8-inch square baking dish with softened butter
  • In a small saucepan, melt the butter
  • Turn off the heat, then add the brown sugar and vanilla and almond extract, and stir until smooth
  • Stir in egg
  • Whisk together flour and baking powder, then fold into the brown sugar mixture
  • Fold in pecans
  • Pour the batter into the prepared pan and bake for 20 minutes
  • Let cool, then sift confectioners' sugar on top
  • Cut into 16 squares

1/4 cup unsalted butter
1 cup packed light brown sugar
1 egg, lightly beaten
3/4 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon vanilla extract
1/3 cup chopped walnuts
1/3 cup chopped candied ginger (crystallized)

Steps:

  • Preheat oven to 350. Spray 8-inch square pan with cooking spray.
  • Melt butter over low heat in small saucepan. Once melted, remove from heat. Add brown sugar and stir until smooth. Add beaten egg and incorporate well. Sift the flour and baking powder together and stir into the brown sugar mixture. Add the vanilla, walnuts and ginger and mix well.
  • Pour batter into pan and bake for 20-22 minutes (do not overbake! The bars should yield to a light touch).
  • Cool and cut into pieces.

2 tablespoons vanilla extract
2 eggs
2 cups self rising flour
2 cups chopped walnuts or pecans

Steps:

  • Pre-heat the oven to 375 °F.
  • In a bowl, cream the butter and sugar, then beat in the vanilla. Add the eggs one at a time, beating well. Add the flour 1/2 cup at a time, continuing to beat. Stir in the nuts.
  • Drop the dough by heaping tablespoon onto ungreased cookie sheets. Bake for 10 to 12 minutes, until golden brown.
  • Variation: For variety, you may want to add chocolate chips or coconut flakes. Sometimes I add both, depending on my mood.

  • 1. Preheat oven to 300 degrees. Grease or spray 9x13 pan.
  • 2. Melt butter in saucepan. Remove from heat.
  • 3. Stir in brown sugar, eggs, and flour. Mix well. The batter is thick.
  • 4. Add vanilla extract and pecans.
  • 5. Spread into a 9x13 greased pan.
  • 6. Bake in preheated oven for 20 to 30 minutes (depending on your oven).
  • 7. They are done when they are brown, pulling away from sides of the pan and a toothpick comes out clean when inserted into the center.
