Steps:
- Preheat oven to 400°F.
- Place the crackers side by side in a foil-lined jelly-roll pan (I spray the foil with non-stick spray).
- Combine the butter and brown sugar in saucepan.
- Bring to a boil, stirring constantly.
- Cook for 3 minutes.
- Pour the mixture over the crackers.
- Bake 5 minutes.
- Sprinkle the chocolate chips over the baked crackers.
- Let stand 5 minutes then spread the melted chocolate over the top.
- Sprinkle with nuts if desired.
- Chill in the refrigerator until set.
- Invert onto a flat surface; remove the foil and break into pieces.
- Store, covered in an airtight container in refrigerator.
- Note: You can skip the chocolate chips- it's still delicious.
BROWN SUGAR FUDGE
I love this recipe for fudge. Nice and creamy texture. I like to double up on the nuts to take away from the sweetness. This fudge recipe has always worked for me as long as I boil for exactly 10 minutes and beat for exactly 5.

- Bring brown sugar, evaporated milk, and butter to a boil in a large saucepan; boil mixture for exactly 10 minutes. Remove from heat and add confectioners' sugar. Beat fudge with an electric mixer on medium speed for exactly 5 minutes. Stir in walnuts. Spread fudge into the prepared pan and let cool before cutting into squares.

Steps:
- Preheat oven to 350°F (175°C) degrees.
- Line cookie sheet with foil & spray with non-stick cooking spray. Line crackers end to end on sheet, breaking crackers to fit the end if necessary.
- In a saucepan, melt butter on low heat. Once melted, add brown sugar and turn heat to medium. Continue stirring until boiling - then boil for 3 minutes (set timer).
- Pour over crackers, spread evenly working quickly.
- Put sheet into oven - bake for 5 minutes.
- Remove - pour chocolate chips over top - place a sheet of foil over and let melt for 3 minutes.
- Spread melted chocolate over the top evenly. Add nuts to top - replace foil and refrigerate until set. (Can be frozen.)
- Break up into pieces.

- Warm 2 cups water over medium heat until it is boiling gently. Measure brown sugar in a dry measuring cup. Pat the sugar in the cup with your finger tips to remove excess air, and then add more sugar to fill the cup. Measure 4 packed cups. Pour the brown sugar into the hot water, and stir with a wooden spoon until all the crystals have dissolved. Remove from heat when the mixture is at a rolling boil or when a candy thermometer reads 247 to 252 degrees F. Transfer the hot sugar solution to a clean glass container, such as a canning jar. Tie one end of a cotton string to the middle of a pencil. Tie a washer to the free end of the string to weigh it down. Dip the string, washer-end first, into the jar of sugar water for five to 10 seconds. Remove the string, and dry it on a piece of parchment paper for two to three days; this creates a layer of starter crystals. Suspend the prepared string in the remaining jarred sugar solution; the pencil balances across the top of the jar and prevents the string from falling into the mix. Do not disturb the jar for seven to 10 days; the candy crystals take longer to form in unstable or humid environments. Remove the candy from the jar. Rinse it for one or two seconds under cool water, and set it on parchment paper to dry.

- Line the baking sheet with parchment paper.
- Heat butter in a large non-stick frying pan over medium heat until butter is completely melted.
- Add brown sugar and walnuts to the frying pan and mix.

- Butter a 8 or 9 inch square baking dish.
- In a large heavy saucepan, stir together the brown sugar and evaporated milk. Bring to a boil over medium-high heat. Cook until the temperature reaches between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
- Remove from the heat and stir in the butter, vanilla and walnuts. Continue to beat with a sturdy spoon until the mixture looses its gloss. Pour into the prepared pan. Score into squares with a knife then set aside until firm, about 5 minutes. Cut into squares and serve or store in an airtight container in the refrigerator.

- Line a 13x9x2-inch baking pan with foil, extending foil over edges of pan. Sprinkle the 1/2 cup coarsely chopped walnuts on bottom of foil-lined pan; set pan aside.
- Butter the sides of a heavy 2-quart saucepan. In the saucepan melt the 1 cup butter over low heat. Stir in brown sugar, water, and corn syrup. Carefully clip candy thermometer to side of pan.
- Cook over medium heat, stirring frequently, until thermometer registers 290 degree F, soft-crack stage. Mixture should boil at a moderate, steady rate over the entire surface. Reaching soft-crack stage should take about 15 minutes. Watch carefully after candy mixture reaches 280 degree F.
- Remove pan from heat; remove thermometer. Pour mixture into the prepared pan. Sprinkle with the 1/2 cup finely chopped walnuts. When firm, lift candy out of pan; break candy into pieces. Store tightly covered. Makes about 48 pieces or 1-1/4 pounds.
