Mom's Brussels Sprouts image

A slightly sweet sauce with walnuts will even have children asking for more.

1 cup water
2 (10 ounce) packages frozen Brussels sprouts
¼ cup butter
8 ounces walnuts
3 tablespoons firmly packed brown sugar
¼ teaspoon ground allspice
¼ teaspoon ground nutmeg
¼ teaspoon salt

Steps:

  • In a saucepan, bring the water to a boil and add the Brussels sprouts. Return to boil, reduce heat, cover, and simmer 5 to 7 minutes, until sprouts are tender. Drain.
  • In a microwave safe bowl, mix the butter, walnuts, brown sugar, allspice, nutmeg, and salt. Cover, and cook on High 3 to 4 minutes, stirring occasionally, until the butter is melted and the walnuts are warm. Pour over the cooked Brussels sprouts to serve.

The vegetables can be prepared the day before, and the glaze can be prepared up to 6 hours in advance. The dish can then be completed in a few minutes while the turkey is resting. It all looks so effortless.

2 pounds baby carrots
2 pounds Brussels sprouts, trimmed and scored
1 ½ cups chicken broth
6 tablespoons butter
⅓ cup packed brown sugar
1 tablespoon ground black pepper

Steps:

  • Blanch carrots in a large pot of boiling salted water until crisp-tender, about 4 minutes. Transfer carrots to bowl of ice water using slotted spoon. Return water to boil. Add sprouts and blanch until crisp-tender, about 5 minutes. Transfer to another bowl of ice water. Drain vegetables, and refrigerate if making ahead.
  • Bring stock, butter or margarine, and brown sugar to a boil in a heavy large skillet. Stir until sugar dissolves. Boil until reduced by half, about 7 minutes. Can be prepared 6 hours ahead; return to boil before continuing. Add carrots. Cook until almost tender and sauce begins to coat, shaking pan occasionally, about 6 minutes. Add Brussels sprouts and pepper. Cook until heated through, stirring occasionally, about 4 minutes.

Everything cooks in the same pan in this easy Thanksgiving side dish: first the bacon, followed by the Brussels sprouts, along with garlic, thyme, brown sugar, and turkey stock.

3 pounds Brussels sprouts, trimmed
5 ounces bacon (about 5 slices), cut into 1/2-inch pieces
1 tablespoon extra-virgin olive oil
2 tablespoons thinly sliced garlic (from 4 to 5 cloves)
1 tablespoon fresh thyme leaves
5 tablespoons unsalted butter
3 tablespoons packed dark-brown sugar
1/2 cup turkey stock or low-sodium chicken broth
Kosher salt and freshly ground pepper

Steps:

  • Using a paring knife, cut a slit straight through center of each sprout and down through stem end (but do not cut in half). Cook bacon in a large pan over medium-high heat until browned and most of fat is rendered, about 7 minutes. Drain on paper towels; discard all but 1 tablespoon fat from pan.
  • Return pan to medium-high heat. Add oil, then garlic and thyme; cook until fragrant, about 30 seconds. Add sprouts, butter, brown sugar, stock, 2 teaspoons salt, and 1/4 teaspoon pepper. Bring to a boil, stirring to evenly coat sprouts. Reduce heat to medium-low, cover, and simmer, stirring a few times, until sprouts are tender when pierced with the tip of a knife, 18 to 20 minutes. Uncover and continue cooking until liquid is reduced to a glaze that evenly coats sprouts, 7 to 9 minutes. Remove from heat, stir in bacon, and serve.

Steps:

  • Steam the Brussels sprouts over boiling water until tender, about 10-15 minutes.

  • Cut off the root ends of the brussels sprouts and pull off any old outer leaves. Slice them in half.
  • In a large skillet, render the fat from the bacon over low to medium-low heat. Once the fat has mostly melted down, turn up the heat and brown until caramelized and crunchy. Set aside to drain on a paper towel. Remove all but two tablespoons of the bacon fat from the pan.
  • In the same skillet, add the brussels and allow them to caramelize on one side. Deglaze the pan with the balsamic vinegar, using a spatula to scrape up any brown bits and incorporate them with the brussels. Continue to saute the brussels on high heat for a few minutes, shaking the pan, until they have softened up a bit. Add the bacon back to the pan along with 2 tablespoons of the brown sugar. Stir until the sugar has completely dissolved and is evenly coating the brussels sprouts.
  • Taste; add the remaining brown sugar if desired, allowing it to dissolve before removing the pan from the heat. Add kosher salt and ground black pepper to taste. (Note: you might not need any salt because of the bacon).
