Brown Sugar Bourbon Ribs with Grilled Sweet Potatoes image

Brush Grill Mates® Brown Sugar Bourbon BBQ Sauce on baby back ribs and sweet potatoes for rich, layered flavors of smooth bourbon, brown sugar, onion and premium spices like cinnamon and cloves.

4 medium sweet potatoes, pierced with fork
4 pounds pork baby back ribs
1 cup McCormick® Grill Mates® Brown Sugar Bourbon BBQ Sauce

Steps:

  • Microwave sweet potatoes on HIGH 7 minutes or until almost tender, turning sweet potatoes over halfway through cooking. Let stand 2 minutes. Cut sweet potatoes into wedges.
  • Grill ribs over indirect medium heat with lid closed 1 to 1 1/2 hours or until tender, turning occasionally. Brush with some of the BBQ Sauce during last 10 minutes of cooking. Grill sweet potatoes over medium heat 2 minutes per side or until lightly browned, brushing with remaining BBQ Sauce.

These are best cooked on the grill, but you can remove them from the marinade and bake them in the oven at 350 degrees. This marinade is excellent on prime rib, fish or chicken. Serve with a crispy salad and garlic cheese potatoes for a great dinner!

1 cup dark brown sugar
⅔ cup bourbon
1 cup light soy sauce
4 cloves garlic
3 pounds country style pork ribs

Steps:

  • Process brown sugar, bourbon, soy sauce, and garlic in a food processor or blender to mince garlic with other ingredients. Pour over ribs, and marinate for several hours in the refrigerator.
  • Preheat an outdoor grill for medium heat, and lightly oil grate.
  • Place ribs on grate, and cover. Cook for 45 minutes to 1 hour depending on thickness of your ribs. When finished, the internal temperature of the ribs should be 160 degrees F (70 degrees C) when taken with a meat thermometer.

3 lb. pork baby back ribs
2 Tbsp. brown sugar
1 Tbsp. paprika
2 tsp. garlic powder
1-1/2 tsp. black pepper
1/2 cup orange juice
1 cup BULL'S-EYE Original Barbecue Sauce
2 Tbsp. bourbon

Steps:

  • Heat grill to medium heat.
  • Place half the ribs in single layer on center of large sheet of heavy-duty foil. Mix sugar and seasonings; rub half evenly onto both sides of ribs. Bring up foil sides. Double fold top and one end to seal packet. Add 1/4 cup orange juice to packet through open end. Double fold remaining end, leaving room for heat to circulate inside. Repeat to make second packet.
  • Place packets on grate of grill; cover with lid. Grill 45 min. to 1 hour or until ribs are done. Remove ribs from foil; discard foil.
  • Return ribs to grill; brush with combined barbecue sauce and bourbon. Grill 15 min., turning occasionally and brushing with remaining sauce.

This is my favorite rub to use when I smoke meats. I threw it together to use on smoked pork butt, but it also works really well on chicken and ribs. Apply liberally to meat and let sit overnight for best flavor. The brown sugar helps make a nice bark. Makes enough to cover two 8-pound pork butts or 6 racks of ribs.

¼ teaspoon ground cinnamon

1/4 cup bourbon whiskey
1/4 cup apple cider vinegar
3 tablespoons apple cider
2 tablespoons Dijon mustard
Ribs
1 tablespoon coarse kosher salt
1 tablespoon (packed) golden brown sugar
1 1/2 teaspoons dry mustard
1 1/2 teaspoons dried thyme
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper
2 2- to 2 1/4-pound racks baby back pork ribs
1 large onion, sliced
1 cinnamon stick, broken in half
6 thin rounds peeled fresh ginger
1 1/4 cups apple cider

Steps:

  • For basting sauce:
  • Whisk all ingredients in medium bowl to blend.
  • For ribs:
  • Mix first 7 ingredients in small bowl. Using small sharp knife, loosen membrane from underside of each rib rack and pull off (or score membrane). Rub 1 tablespoon seasoning mix into each side of each rib rack. Place ribs in large roasting pan. Cover and chill at least 6 hours and up to 1 day.
