BROWN SUGAR APPLE CIDER DONUTS
This recipe makes 18 donuts, plus 18 donut holes. I found this recipe in Family Circle magazine. I have not tried this recipe, but I'm posting this for safe keeping. I plan to use Splenda brown sugar.

- In medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.
- In large bowl, beat eggs on medium speed until foamy, about 3 minutes. Gradually add brown sugar, crumbling with hands. Beat until smooth. Mix in cider and melted butter. Add flour mixture and stir with wooden spoon until combined.
- On sheet of plastic wrap, with floured hands, pat dough into 1 3/4-inch thick disk (about 9-inch round); wrap with plastic. Refrigeraterate at lease 2 hours or overnight.
- After dough has chilled, heat 8 cups of oil in a 3 1/2-quart heavy duty saucepan over medium -high heat until it registers 365 on deep fat frying thermometer.(Carfully heat oil to 365, using deep fat frying thermometer. Be sure that tip of thermometer is not resting on bottom of pot). While oil is heating, on lightly floured surface, roll out dough to 1/2-inch thickness. Cut into round donuts with donut cutter, or use 2 3/4-inch round cutter for the centers. You may also cut the dough into 3 1/12-inch x 1 1/2-inch strips. Set aside. Place confecners's sugar in medium bowl.
- Using a slotted spoon carefully slip the donuts, sticks and donut holes, 3 or 4 at a time, into the hot oil. Fry until golden about 1 minute, turning once, about 2-3 minutes per batch. Drain donutson paper towel, then transfer still warm donuts to confectioners' sugar and roll to cover. Serve warm.

- Preheat the oven to 350°F. Grease and flour a 12-cup Bundt pan - I used PAM Baking spray but you could also grease and flour it.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a separate large bowl, whisk together the apple cider, apple sauce, brown sugar, white sugar, olive oil, eggs, and vanilla. Add, then stir in the shredded apple.
- Then add the apple cider mixture to the flour mixture. Stir until just combined. (When you don't see any more flour, stop - do not overmix). Pour the batter into the prepared pan.
- Bake for 50 minutes. The top should bounce back when lightly pressed.
- Allow the cake to cool in the pan for 20 minutes, then remove from the pan.
- Mix together the ¼ cup sugar and 1 teaspoon ground cinnamon to create cinnamon sugar.
- Brush the cake with melted butter and sprinkle on the cinnamon-sugar mixture. You may need to press the cinnamon-sugar onto the cake to help it stick on the sides.

- Reduce the apple cider: Cook the apple cider over medium high heat, stirring occasionally, until reduced to 1 cup, about 20 minutes. Let cider cool completely (pop it in the freezer or fridge to speed this up).
- Make the dough: While the cider cools, whisk together the flour, brown sugar, baking powder, baking soda, salt, and spices in a large mixing bowl. (See note) Work with one pan of dough at a time so the other pan stays chilled (move the second pan from the freezer to the fridge after the 20 minutes so it doesn't freeze solid). Cut out donuts using a 3" glass/bowl or donut cutters. Cut out a 1" hole in the center with a donut cutter or freehand it with a knife. Do a test donut first. See tips in above blog post for monitoring the oil heat. If the oil is too hot, the donuts will be burnt on the outside and raw on the inside. If it's too cold, they'll won't be done on the inside. Fry the donuts, 2-3 at a time. Don't crowd the pot. Flip after 1 - 1 1/2 mins, or when golden brown and puffy on the underside. Remove donuts and let drain on a paper towel-lined baking sheet.
