Favorite at a Brazilian steakhouse in Dallas. Not sure if this is the exact recipe they use but it tastes very close. Great side for kabobs and steak.

2 teaspoons ground cinnamon
1 pineapple - peeled, cored, and cut into 6 wedges

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Whisk brown sugar and cinnamon together in a bowl. Pour sugar mixture into a large resealable plastic bag. Place pineapple wedges in bag and shake to coat each wedge.
  • Grill pineapple wedges on the preheated grill until heated through, 3 to 5 minutes per side.

1/2 of a pineapple, cut into spears
1/ c brown sugar
1 tsp cinnamon

Steps:

  • 1. Combine brown sugar and cinnamon in a large ziplock bag. Add the pineapple spears, close the bag tightly, and shake it so that the cinnamon and brown sugar coats the spears. Place the pineapple in the refrigerator for at least 30 minutes.
  • 2. Pre-heat your grill to medium heat, around 350-400 degrees.
  • 3. Place the pineapple spears on the grill and turn them every few minutes.
  • 4. Grill the pineapple until it is cooked to your liking.
  • 5. Enjoy!:)

ONE HALF PINEAPPLE, CUT INTO LONG SPEARS
1 Tbsp butter
1/2 c brown sugar
1 tsp cinnamon
LEMON JUICE

Steps:

  • 1. Mix cinnamon and brown sugar in a shallow bowl. Heat up the grill to medium heat. Before putting the pineapple down on grill, roll the spears in brown sugar and cinnamon mixture. This will bring out the sweetness and instant caramelizing when they hit the grill.
  • 2. Heat the butter, brown sugar and cinnamon mixture in a pan, till hot and bubbly, brown sugar should be melted.
  • 3. Grill the pineapple spears over direct heat about 2-3 minutes per side, turn occasionally. Each time it turns, baste with glaze. When finished, place on platter and drizzle with remaining mixture of butter, brown sugar and cinnamon..or you may dip it in while eating them...

1 whole pineapple (, peeled, cored and cut into spears [See Note 1])
1 cup brown sugar
2 tsp ground cinnamon
whipped cream
toasted coconut

Steps:

  • Preheat the grill to medium-high heat. [See Note 2]
  • Mix together brown sugar, cinnamon until well combined.
  • Pour cinnamon-sugar mixture over cut pineapple, coating all surfaces, and then marinate for 30 minutes. This allows the natural juices to for a glaze.
  • Place pineapple on the prepared grill and cook until the sugars are caramelized and the pineapple is tender 1-3 minutes on the each side- depending on thickness.
  • Remove from heat and serve immediately.

¼ cup brown sugar
¼ cup butter (melted)
½ teaspoon cinnamon
½ teaspoon vanilla extract
1 Tablespoon honey

Steps:

  • Thread pineapple onto skewers (if using wooden skewers, soak in water for at least 30 minutes before threading pineapple on). Mix together brown sugar, butter, cinnamon, vanilla, and honey. Place skewered pineapple on a large plate or pan. Using a spoon or a brush, thoroughly glaze each piece of pineapple with the brown sugar mixture.
  • Place skewers on a grill, preheated to a medium-high temperature. Cook for 5-10 minutes on each side, or just until the sugar-glaze starts to caramelize.
  • Serve warm.
