JAMAICAN BROWN STEW FISH
There's a restaurant near here in South Florida that serves this dish, and they make it soooo good. It has a slightly sweet/tangy flavor that goes really well with the snapper. I decided to try making it myself, but after looking in Recipezaar, I couldn't find the sweet version. I finally found it somewhere else on the web and tweaked it to perfection. Serve with a little salad and rice and peas. For the rice and peas, I recommend recipe # 97745. Hope you like it.

Steps:
- Wash the fish with a mixture of water and a little vinegar.
- Dry the fish in a paper towel.
- Rub salt and pepper all over the fish.
- Fill a frying pan with about 1 1/2 inches of oil and fry fish on both sides till brown.
- Remove fish and place in a paper towel lined plate so some of the oil drains. Set aside.
- In a deep pot, saute the onion, thyme, green onion, bell pepper and garlic with a little oil.
- Add flour and cook till brown.
- Add water, soy sauce, ketchup, sweet and sour sauce and vinegar.
- Submerge the fish in the sauce and simmer for 15 minutes.
- Add pepper to taste and, if needed, salt.
- Serve with rice and peas. Enjoy!

BROWN STEW FISH
Steps:
- Heat a deep-fryer to 350 degrees F.
- Deep-fry the whole snapper until lightly brown, approximately 4 minutes.
- Saute the onion, pepper, thyme, 1/2 cup water and 1/4 cup of oil in a large saute pan, for about 2 minutes. Add fish sauce and the fried fish. Simmer for 5 minutes, then add the tomato, and let simmer for 1 minute. Season with salt and pepper, to taste, and place on a serving platter.

- Use your hands to add the fish seasoning, black and pink salt to the slashes that you made in the fish. Coat each fish evenly (add more seasoning if required)

- Make sure you clean, your fish thoroughly. You can use white vinegar and water, or lemon juice and water to clean the fish.Place scallions, tomato, onion, thyme, and bell pepper in a mixing bowl. Add a little salt and pepper to taste. Mix them thoroughly. Add your fish and rub your seasoning into the fish. Let marinate for about 1 hour.
- Add vegetable oil to a large saucepan over a medium flame and let heat. Once the pan is heated add your scotch bonnet peppers and garlic to the pan.

- Prepare the marinade: in a mixing bowl combine the minced garlic cloves, grated ginger, chopped parsley, kosher salt and allspice. Mix until a paste like mixture forms. Rub all over the outside and inside of each fish, cover and allow fish to marinade in the fridge for 1 hour.
- Prepare the rice: in a pot combine the coconut juice, rinsed white rice, drained pigeon peas, kosher salt, thyme sprigs and butter. Bring to a boil, cover and return to a simmer and cook for 25 minutes or until rice is cooked. Turn off heat and allow to sit for 15 minutes, fluff with a fork and add in chopped cilantro. Cover with lid and let sit until ready to serve.
- Once the fish has marinated for 1 hour, remove from the fridge and shake off any excess marinade. Dust each fish in flour, shaking off any excess.
