2 ¼ cups water
1 ½ cups long-grain white rice
1 tablespoon olive oil
4 green onions, chopped
2 cloves garlic, crushed
1 (10 ounce) bag fresh spinach
⅓ cup chopped fresh dill
2 tablespoons pine nuts
1 (4 ounce) package crumbled feta cheese
2 tablespoons chopped fresh mint, or to taste
1 lemon, zested and juiced
1 teaspoon sumac

Steps:

  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 20 to 25 minutes.
  • Heat oil in a large skillet over medium heat. Add green onions and garlic; cook and stir until softened, about 5 minutes. Stir in spinach and dill until wilted, 3 to 5 minutes. Stir in cooked rice. Transfer to a large serving dish.
  • Heat a small skillet over medium heat. Add pine nuts; cook and stir until toasted, 3 to 5 minutes.
  • Top rice with toasted pine nuts, feta cheese, mint, lemon zest, lemon juice, and sumac.

2 cups cooked brown rice
1/2 cup cooked wild rice
1 large egg (separated)
4 tablespoon parmegiano reggiano cheese (finely grated)
1 tablespoon extra virgin olive oil
3 large garlic cloves (peeled, thinly sliced; about 1 1/2 T.)
3/4 pounds fresh spinach leaves (1 medium- large bunch, cleaned and dried )
1 pinch salt and freshly cracked black pepper
5 large eggs (divided, I use pasture raised)
1 1/2 cups milk (full fat)
1/4 cup fresh dill (cleaned, dried and coarsely chopped)
1 cup feta cheese (large crumbles; divided)
1/2 medium red onion (peeled, cut into 1/4" rings)
3/4 cups colorful cherry tomatoes (sliced in half )

Steps:

  • Warm the brown rice, add 1 egg white (save the yolk for the filling) and 1 cup warm rice to a small food processor. Pulse to combine. Continue to run until the mixture is creamy and the rice is pureed, but a little chunky.Preheat oven to 350 degrees. Add this mixture to a medium sized bowl; add the remaining 1 cup brown rice, wild rice, parmesan cheese and a pinch of salt.
  • Brush deep-dish pie pan well with neutral oil. I have used a 10″ tart pan with 2″ high sides. Add the rice mixture.Press down using a piece of plastic wrap - this will allow you to press in an even layer.Build an edge to 1″. Place on a rimmed baking pan. Bake for 15 minutes until firm and lightly colored. Set aside to cool slightly. Raise heat of oven to 375 degrees.
  • Slice the spinach into 1/2″ ribbons.To a large saute pan, add 1 T. olive oil and sliced garlic. Cook over low heat stirring for 2 minutes until the garlic had just started to color. Add the spinach, and a pinch of salt & pepper, stir to coat. Cook, stirring until limped and cooked through - just 2 minutes. Set aside to cool slightly.
  • In a medium sized bowl, whisk the 4 eggs and the remaining egg yolk. Add the milk, and whisk well. Add dill, mix to combine.
  • Add 3/4 cup of Feta cheese to the bottom of the slightly cooled crust. Add the Spinach-Garlic mixture evenly. Pour in the Egg and Milk Custard. Sprinkle with remaining 1/4 cup Feta. Add Red Onion Rings all over top. Add cut Tomatoes all over top. Place the quiche on a rimmed baking pan.
  • Bake in a 375 degree oven until puffed and firm in the center, about 45 minutes.Add a little extra chopped dill on top if desired. The quiche reheats well, and can be frozen and reheated.

1 tablespoon extra-virgin olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 1/4 cups quick cook brown rice (see notes)
1 tablespoon fresh thyme, chopped
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
2 1/2 cups low-sodium chicken or vegetable broth
1 (8 oz.) bag fresh spinach, roughly chopped
1/4 cup grated Parmesan cheese (plus extra for serving)

Steps:

  • Heat olive oil in a large pan over medium heat.
  • Add onion and sauté 5-6 minutes, until softened. Add garlic and sauté another 30 seconds.
  • Add quick cook rice, thyme, salt and pepper and stir to get the rice coated in the oils.
  • Add chicken or vegetable broth and bring to a boil. Then cover, lower the heat to medium low and cook 15-20 minutes, until the liquid is absorbed and the rice is cooked through.
  • Add chopped fresh spinach on top of the rice, then cover and let sit for 5 minutes off the heat.
  • Stir spinach into the rice and add Parmesan cheese. Taste and adjust seasoning and serve hot.

1/2 lb. frozen chopped spinach ($0.65)
2 cloves garlic, minced ($0.16)
2 Tbsp butter ($0.14)
1.5 cups long grain white rice ($0.93)
3/4 tsp salt ($0.03)
2.5 cups water ($0.16)
1 Tbsp lemon juice ($0.05)
2 oz. feta, crumbled ($1.10)

Steps:

  • Thaw the spinach by either letting it sit out at room temperature for an hour, or by microwaving for 1-2 minutes. Squeeze the excess moisture out of the spinach (it doesn't have to be extremely dry for this recipe, just make sure it's not pooling water).
  • Add the minced garlic and butter to a medium sauce pot. Sauté the garlic in the butter over medium heat for 1-2 minutes.
  • Add the spinach, rice, salt, lemon juice, and 2.5 cups water to the sauce pot. Stir briefly to combine.
  • Place a lid on the pot, turn the heat up to medium-high, and allow the water to come up to a boil. Once it reaches a full boil, turn the heat down to low, and let the rice simmer for 15 minutes. After 15 minutes, turn the heat off and let the pot rest, without removing the lid, for an additional five minutes.
  • Fluff the rice with a fork, gently folding the spinach back into the rice (it tends to float to the top during cooking). Finall, sprinkle the feta over top and fold to combine again. Serve hot!

1 Onion (mild, yellow; medium, finely chopped;)
2 Leeks (small or one big (only white parts))
1 tablespoon Thyme (fresh)
6 oz Bag of Baby Spinach
1 cup Jasmin or Basmati rice
2 cups Water or Vegetable broth
2 tablespoons Fresh dill (chopped)
1/2 cup Feta Cheese
1/2 Lemon juiced (to sprinkle over rice)
4 tablespoon Olive Oil (2 for cooking and more for drizzle on top)
Salt and freshly ground black pepper to taste

Steps:

  • In a deep pan heat up 1 tablespoon of olive oil;
  • Add onion and simmer for about 10 minutes on low heat;
  • Add thyme and leaks and simmer for another 5 minutes;
  • Add half a cup of water and broth base, then simmer for another 5 minutes;
  • Add spinach and cook until wilted;
  • Add rice and let it cook for about 2 minutes;
  • Add half a cup of water and stir;
  • Keep adding half a cup of water at the time once the rice absorbs it;
  • It can take about 20 -25 minutes until rice is fully cooked;
  • Adjust seasoning with salt and pepper.
  • At the end add dill and mix well;
  • Take off the burner and cover it up; Add lemon juice and olive oil;
  • Let it sit for about 5-10 minutes to have all the liquid absorbed;
  • When serving, sprinkle more lemon juice, olive oil and top it with Feta Cheese. Enjoy!

2 cups brown rice
2.5 cups baby spinach
1 leaf kale (-large)
2 leaves bay
1 yellow mango (-small)
2 scallions
1 clove garlic
3.75 cups water ((or vegetable stock))
4 tbsp extra virgin olive oil
1 lemon (-juiced & zested)
1/4 cups pine nuts (- for garnish (optional))

Steps:

  • Add the brown rice, water, bay leaves and a pinch of sea salt to medium stock pot. Bring to a simmer, cover with a tight lid, turn the flame down and simmer away for 45 minutes or until all the water is absorbed. Remove the rice from flame and allow it to sit covered for 10 minutes.
  • Transfer the cooke rice to a large mixing bowl and using a fork fluff up the grains. Discard the bay leaves.
  • Meanwhile add the spinach, kale and sliced mayo to a food processor or blender together with the scallions, garlic, olive oil and lemon juice. Process until smooth with a pesto-like texture. Season to taste with sea salt and more lemon juice if desired.
  • Pour the spinach sauce on top of the rice and using a spatula fold to coat well. Garnish with the pine nuts and serve!

3 cups cooked rice {She used white, I use brown}
1 (10-ounce) package frozen chopped spinach, thawed and drained (no need to squeeze it bone dry)
4 tablespoons butter, melted
1 tablespoon finely minced onion {I use 1/4 cup chopped shallot or onion}
1/2 teaspoon salt {I use seasoned salt}
3/4 pound (12 ounces) grated sharp Cheddar cheese (I used 10 ounces Kerrygold Reserve Cheddar}
1 cup milk
4 eggs

Steps:

  • Heat oven to 350F degrees. Lightly mist a casserole dish with nonstick spray. I usually use a pretty oval dish, but you could use an 8- or 9-inch square dish if you like.
  • In a large bowl, add cooked rice, spinach, butter, onion, salt and cheese. In a 4-cup measure, pour milk and add eggs. Whisk to combine. Pour into the bowl with rice-spinach mixture and stir well to combine.
  • Pour into prepared casserole dish and bake for 45 minutes.
  • Remove from oven and serve.

1 onion - chopped
1 cup crumbled feta cheese
9 oz. Frozen Creamed Spinach
¾ cup Italian style breadcrumbs
5 cloves garlic - chopped
3 eggs (one for an egg wash)
½ cup flour
Olive oil
Vegetable oil

Steps:

  • Heat a large frying pan with a drizzle of olive oil. Place the chopped onion and garlic in the pan to sauté. When the onion softens add the creamed spinach to thaw. In a large bowl combine two of the eggs, bread crumbs, crumbled feta cheese and the cooked rice. Mix these ingredients together. Add the sautéed spinach, onion and garlic to the bowl. Place the flour in a shallow bowl and the egg plus a splash of water in another shallow bowl. Form the spinach and rice mixture into patties. Coat the patty dipping first in the flour and then the egg wash and back in the flour. Heat a frying pan with about one inch of vegetable oil for frying the patties. Carefully place the patties in the hot oil. When the patties are a beautiful golden color on one side, carefully turn them. Place on a paper towel to absorb any excess oil.

2 10-ounce packages fresh spinach leaves
1 cup chopped seeded tomatoes
1 cup crumbled feta cheese

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onion and garlic and sauté until onion is tender, about 6 minutes. Add rice and stir until rice is translucent, about 2 minutes. Add broth and wine and bring to boil. Reduce heat to low; cover and cook until rice is almost tender, about 15 minutes. Mix in spinach. Cover and cook until rice and spinach are tender and all liquid is absorbed, about 8 minutes longer. Mix in tomatoes and cheese. Season with salt and pepper and serve.
