Steps:
- Combine broth, 3 cups water, lentils, rice, tomatoes with reserved juice, carrots, onion, celery, herbs and sausage and bring to boil (do not add parsley and vinegar).
- Simmer, covered, stirring occasionally, 45-55 minutes, or until lentils and rice are tender.
- Stir in parsley and vinegar and season to taste.
- Freezer Note: I often make up a double batch of this delicious soup, freezing half the batch, to provide me with a quick, nutritious dinner further on down the line when time is short and you don't want to resort to ordering in. Just defrost in microwave, reheat well and serve

- Bring chicken broth to a boil in a large pot; cook chicken breasts in the boiling water until no longer pink in the center, about 20 minutes. Remove chicken from the chicken broth using a slotted spoon and shred with a fork.
- Stir shredded chicken, celery, onion, carrots, corn, black beans, sage, pepper, salt, and bay leaves into the chicken broth and cook until vegetables are slightly softened and flavors of soup have blended, about 20 minutes. Add brown rice to soup and simmer until rice is tender, about 1 hour.

- Heat the oil in a large non-stick pan and add the onion, garlic, celery, carrots, parsnips and thyme. Cover with a lid and cook gently for 15 mins, stirring occasionally, until the onions are softened and beginning to colour. Add the rice and pour in 1.2 litres cold water. Bring to the boil, then reduce the heat to a simmer and cook, uncovered, for 15 mins, stirring occasionally.
- Season the soup with plenty of ground black pepper and salt to taste, then stir in the leeks. Return to a gentle simmer and cook for a further 5 mins or until the leeks have softened. Adjust the seasoning to taste and blitz half the soup with a stick blender, leaving the other half chunky, if you like. Top with the parsley and serve in deep bowls.

- Heat the oil in a soup pot over medium heat on the stove. Sauté the diced onion for 5 to 6 minutes until soft and translucent.
- Add the garlic, dried thyme and black pepper and sauté 1 minutes. Add the celery and carrots and cook another 5 minutes so they start to soften.
- Add the lentils, rice, tomatoes, coconut aminos and broth. Stir well. Bring to a boil, stir again, cover, reduce heat and simmer 30 to 40 minutes until the lentils and rice are tender, but not mushy.
- Add the salt, fresh lemon juice, and chopped parsley. Taste and adjust seasoning as necessary.

- In a large pot combine water, broth, brown rice or barley, potatoes, carrots and celery.
- Bring to a boil, reduce heat and simmer for 30 minutes.
- Meanwhile saute onions, mushrooms and garlic in olive oil.

- In a medium soup pot drizzle in peanut oil and sesame oil. Toss in garlic and ginger and stir into oil.
- Turn on heat to a medium setting and throw in onions, celery, and carrots. Saute for about 2-3 minutes, then add in the cabbage and mushrooms. Let that cook for another minute or so, stirring every so often. Lastly, place in the bok choy.
- Time to add in the aromatics and seasoning. Salt, white pepper, onion and garlic powder, paprika, Chinese five spice, lemongrass, and finally bay leaf. Stir again!
- Pour in the broth and give it another turn with a wooden spoon and let simmer for about 10 minutes. Toss in the basil.
- Time to put the noodles in, don't break them up, leave them nice and long. Use your wooden spoon to push them down and into the broth. As they soften, stir and cook for a minute or so. Turn off heat and cover for another minute.
- Take out bay leaf and ladle soup into bowls. Serve with a side of red chili paste, this way one can choose to use it or not. Some like it spicy and others not as much!

- Add oil to a large Dutch oven or soup pot over medium-high heat. Once oil is hot, add onion, carrots, and celery. Cook until onion starts to get golden brown, about 2 minutes. Add garlic and Italian seasoning. Cook for 1 more minute.
- Add mushrooms and cook, stirring occasionally, until the mushrooms are soft and most of the liquid in the pan has cooked off. About 5 minutes.
- Season with 1 teaspoon of salt then stir in rice and vegetable broth. Scrape the bottom of the pot to release and brown bits stuck to the bottom.
- Cover pot and bring to a simmer. Lower heat to maintain simmer. Cook until rice is soft, about 15 minutes.
- Meanwhile, add beans and 1 cup of water to a blender. Blend until smooth.
- Once rice is cooked, remove lid and stir in bean puree.
- Stir in spinach and cook until wilted. Add lemon juice and additional salt and pepper to taste.
- Enjoy warm. Allow leftovers to cool completely before storing in fridge for up to 3 days.Note: As the soup sit, the rice will absorb more liquid so stir in the additional cup of water (or more) as needed. Be sure to taste and re-season the soup after adding more liquid.
