The salad nicoise, a lovely summer salad from the city of Nice on the French Riviera.

4 round medium-sized tomatoes
5 eggs
1/2 cup of sliced black olives
1 can of fava beans
3 chopped spring onions
2 cans of tuna (or anchovies)
400g of mesclun salad "spring mix"
1 clove of chopped garlic
6-7 chopped basil leaves
4-5 tablespoons of olive oil
2 tablespoons of red vinegar
pinch of salt and pepper
1 thinly-sliced bell pepper
1 chopped cucumber (if not including fava beans)
1/4 cup of lemon juice (if not including red vinegar)
sweet corn
small red onions (if not added spring onions)
chopped radishes
1 cup boiled green beans
3 boiled medium-sized potatoes (chopped)
2-3 tablespoons of mayonnaise
1 teaspoon of mustard

Steps:

  • To make the vinaigrette, whisk together the olive oil, vinegar (or lemon juice), basil, and garlic in a bowl. Add salt and pepper, and any optional ingredients such as mustard or mayonnaise.
  • Boil the eggs for 8 minutes, then let cool in a bowl of cold water. Remove egg shells and chop into quarters.
  • Rinse the mesclun lettuce and arrange in a large serving bowl.
  • Chop the tomatoes into quarters and toss into the serving bowl, along with the eggs.
  • Shred the tuna (or anchovies) into small pieces and add in the bowl.
  • Drain and rinse the canned fava beans and put in a pot of boiling water. Bring to a simmer and cook for approx 5-8min until soft.
  • Add the rest of the ingredients into the serving bowl and toss the salad.
  • Let salad rest for 20 minutes before serving.

1 pound red-skinned potatoes, sliced 1/3 inch thick
Kosher salt
2 tablespoons dry white wine
10 ounces haricots verts or thin green beans, trimmed
4 large eggs
1/4 cup white wine vinegar
1/2 shallot, minced (about 2 tablespoons)
2 tablespoons dijon mustard
1 tablespoon chopped fresh thyme
Freshly ground pepper
3/4 cup extra-virgin olive oil
8 cherry tomatoes or small cocktail tomatoes, halved or quartered
1 head Boston lettuce, leaves separated
6 radishes, trimmed and quartered
2 5 1/2-ounce cans Italian or Spanish tuna packed in olive oil, drained
1/2 cup nicoise olives

Steps:

  • Put the potatoes in a medium saucepan; cover with cold water and season with salt. Bring to a simmer over medium-high heat and cook until fork-tender, about 5 minutes. Drain and transfer to a medium bowl; drizzle with the wine and let cool. Reserve the saucepan.
  • Meanwhile, bring a separate saucepan of salted water to a boil. Fill a bowl with salted ice water. Add the haricots verts to the boiling water; cook until crisp-tender and bright green, 2 to 4 minutes. Drain and immediately plunge into the ice water to cool; drain and pat dry.
  • Place the eggs in the reserved saucepan and cover with cold water by about 1 inch. Bring to a simmer over medium-high heat, then cover, remove from the heat and let stand, 10 to 12 minutes. Drain, then run under cold water to cool. Peel under cold running water.
  • Make the dressing: Whisk the vinegar, shallot, mustard, thyme, 1/2 teaspoon salt, and pepper to taste in a bowl. Whisk in the olive oil in a slow, steady stream until emulsified.
  • Toss the tomatoes ian a small bowl with salt and pepper to taste. Add about 1/4 cup dressing to the potatoes and toss. Quarter the hard-cooked eggs.
  • Divide the lettuce among 4 plates. Arrange the potatoes, haricots verts, radishes, hard-cooked eggs and tuna on top. Pour any juices from the tomatoes into the dressing, then add the tomatoes to the plates. Drizzle with the dressing and top with the olives.

Farro Niçoise image

There is one mistake many of us make, cooking grain salads: we play down everything but the grains. A pile of cold brown rice with a few chopped vegetables and some soy sauce or a mound of wheat berries with vinaigrette is about as one-dimensional as it gets. This niçoise salad turns that problem on its head, with tuna used in a powerful vinaigrette tossed with farro. Farro is interesting because it's relatively fast-cooking for a whole grain, but any hearty grain could take its place: one of the many "brown" rices, spelt, kamut, wheat. Whichever you use, the results are nutty and sublime.

1 cup farro
Salt
1 pound green beans, trimmed
3 anchovy fillets
1/3 cup olive oil, plus more if needed
Zest of 1 lemon
Juice of 2 lemons, plus more if needed
1 teaspoon Dijon mustard
1 shallot, peeled and roughly chopped
1 tablespoon capers
1 6-ounce can good tuna in olive oil
1/2 cup parsley leaves
Ground black pepper
3 ripe tomatoes, cut into wedges
4 hard-cooked eggs, halved
1/2 cup niçoise or other black olives

Steps:

  • Put the farro and a large pinch salt in a medium saucepan with water to cover by about an inch. Bring to a boil, then adjust the heat so the mixture bubbles gently. Cook, stirring occasionally, until the farro is tender but still has bite, 20 to 30 minutes. Add water if necessary to keep the grains covered; if any liquid remains by the time the farro is tender, strain it out.
  • Meanwhile, bring another medium pan of water to a boil and salt it. Add the green beans and cook until bright green and crisp-tender, 2 minutes or so, then plunge them into a bowl of ice water or run under cold water to cool them.
  • Put the anchovies, olive oil, lemon zest and juice, mustard, shallot and capers in a food processor and purée. Chop the tuna and parsley by hand and mix them in. (Alternatively, add the parsley to the food processor and pulse to chop, then add the tuna and pulse, once or twice, to blend. Don't purée the tuna but chop it well.) The mixture should be pourable; if it isn't, add lemon juice, olive oil or water to thin a bit. Add pepper, then taste and adjust the seasoning.
  • Toss the farro, warm, with about half the dressing. Taste and adjust the seasoning, and pile it on a platter. Arrange the green beans, tomatoes, eggs and olives around the farro, as artfully as you like. Drizzle the remaining dressing over them and serve.

1/3 cup red onion, minced
1 1/2 teaspoons balsamic vinegar
1 (6 ounce) can tuna in olive oil, undrained
3 cups cooked barley or 3 cups cooked cracked farro
1 small red bell peppers or 1 small yellow bell pepper, seeded and diced
1/3 cup pitted oil-cured black olive, chopped
2 tablespoons capers, drained and rinsed and minced
1 -3 tablespoon fresh lemon juice
1 teaspoon lemon zest (optional)
1 -2 tablespoon olive oil (optional)
2 tablespoons fresh flat-leaf parsley or 2 tablespoons fresh tarragon, minced
2 teaspoons fresh lemon thyme, chopped (optional)
salt, to taste
fresh ground black pepper, to taste
6 cups romaine lettuce, loosely packed and shredded
radicchio, shredded and mixed with romaine (optional)
1 lb fresh green beans, trimmed and steamed and cooled
4 hard-boiled eggs, peeled and halved

Steps:

  • In a small bowl, combine the red onion and vinegar. Set aside to soak for at least 10 minutes.
  • Empty the tuna and oil into a large bowl. Flake tuna with a fork.
  • Add cooked brown rice, bell pepper, olives, and capers.
  • Stir in the onion and any unabsorbed vinegar.
  • Add lemon juice, lemon zest (if using), olive oil (if using), parsley, thyme (if using), and salt and pepper to taste.
  • To serve, place a bed or lettuce and radicchio (if using) on each plate and spoon the salad on top.
  • Arrange green beans and eggs alongside.

2/3 cup olive oil, plus more for tuna
Juice of 2 lemons
2 tablespoons Dijon mustard
1 shallot, finely chopped
2 teaspoons anchovy paste
1 tablespoon capers, finely chopped
Coarse salt and freshly ground pepper
8 large eggs
1/2 pound haricots verts, stem ends trimmed
2 teaspoons rice wine vinegar
8 baby red potatoes
2 teaspoons dry vermouth
1 head red leaf lettuce
1 head Boston lettuce
1/2 pint red cherry tomatoes
1/2 pint yellow cherry tomatoes
3 (6-ounce) jars imported tuna in olive oil, drained
1/2 cup Nicoise olives

Steps:

  • Heat a well-seasoned grill pan over high heat.
  • In a medium bowl, whisk together olive oil, lemon juice, mustard, shallot, anchovy paste, and capers. Season with salt and pepper. Set aside.
  • Prepare an ice bath in a large bowl. Set aside. Place eggs in a medium saucepan and cover with several inches of cold water. Place the pan, uncovered, over high heat, stirring occasionally, until just before the water comes to a boil. Cover, turn off the heat, and cook for 12 minutes. Immediately transfer the eggs with a slotted spoon to ice bath. Let cool completely, about 5 minutes. Pat dry, one egg at a time; peel and halve. Set aside.
  • Prepare an ice bath. Fill a medium saucepan with salted water and bring to a boil. Cook haricots verts until tender, 2 to 3 minutes. Immediately transfer beans, with slotted spoon, to ice bath. Drain well and pat dry. Drizzle with rice wine vinegar. Season with salt and pepper. Set aside.
  • Prepare an ice bath. Place potatoes in medium-sized pot. Cover with cold salted water. Bring to a boil and reduce heat to simmer. Cook until fork-tender, about 8 minutes. Immediately transfer potatoes with slotted spoon to ice bath. Drain well and pat dry. Cut in half lengthwise. Drizzle with vermouth. Season with salt and pepper. Set aside.
  • Toss lettuces with some of the anchovy-caper dressing and place on large serving platter. Toss potatoes, haricots verts, and cherry tomatoes separately with dressing and arrange over lettuce.
  • Arrange tuna over salad and drizzle with dressing. Garnish salad with eggs and Nicoise olives.
