Steps:
- Coat a large saucepan generously with olive oil over medium heat. Add the onions and salt and sweat them until translucent, about 5 minutes. Bring the pan to a medium-high heat. Add the rice and cook for 3 to 4 minutes, letting the rice slightly stick to the bottom of the pan and scraping it off. It should also sound crackly.
- Add the saffron to the hot chicken stock; the stock should turn bright yellow.
- Add the wine to the pan until it covers the surface of the rice. Season with salt and cook over a medium-high heat, stirring continuously until the wine has absorbed into the rice. Add the saffron chicken stock to the pan until it covers the rice. Cook over a medium-high heat, stirring continuously until the stock has absorbed into the rice.
- Repeat this process two more times with the hot saffron chicken stock. When the third addition of the stock has absorbed and the rice is very creamy, bite a couple grains of rice to be sure it is cooked perfectly. If it is still a little crunchy, add a little more stock and cook the rice for another couple of minutes. When the rice is cooked perfectly, remove it from the heat.
- Toss in the butter and Parmigiano-Reggiano and "whip the heck out of it." The rice should be creamy but still flow and hold its own shape.
SWEET BELL PEPPER RICE
Normally a pepper and rice dish has a Mexican or Spanish kind of flair to it. I wanted something a little more Italian, and this is what I came up with.

- Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and liquid has been absorbed, 20 to 25 minutes.
- Heat oil in a large skillet over medium-high heat. Cook and stir onion in the hot oil until tender, about 3 minutes. Add garlic and continue to cook and stir until onion is translucent, 2 to 3 minutes more. Stir green bell pepper and red bell pepper into onion mixture; cook until tender, about 5 minutes. Season with basil, oregano, black pepper, and salt.
- Pour wine into vegetable mixture and reduce heat to medium low. Simmer until liquid is reduced, about 5 minutes. Stir rice into vegetables. Top with Parmesan cheese before serving.

- In a medium saucepan over medium-high, combine the rice and 2 cups water. Bring to a boil, then cover, reduce heat to simmer and cook for 20 minutes.
- Remove the pan from the heat, leaving it covered. The rice will not be completely cooked and there will be some water in the pan. Set aside.
- In a large skillet over medium-high, heat the oil. Add the onion and mushrooms, then saute until just starting to brown, about 3 to 4 minutes. Add the wine and stir vigorously for 1 to 2 minutes to deglaze the pan. When the wine comes to a simmer, add the bell pepper and the rice along with any liquid in the pan. Stir well.
- Add the broth and stir well. Bring to a simmer and cook, stirring frequently to prevent sticking, until the liquid has thickened and reduced, about 10 minutes. Stir in the cornstarch mixture, then cook for another minute. Stir in the cheese until melted. Season with salt and pepper. If desired, drizzle with truffle oil just before serving.

- Rinse the rice well and place it in a large bowl. Cover with water and let it soak for 15 to 20 minutes or until you can easily break one grain of rice. Drain well.
- In a large deep pan (with a lid), heat 3 tbsp extra virgin olive oil over medium heat. Add the onions, bell peppers, garlic, peas, and parsley. Season with kosher salt. Cook for 3 minutes or so, tossing regularly. Add coriander, Aleppo pepper, cumin, and paprika. Cook for another 2 to 3 minutes or so, tossing occasionally, until the vegetables have soften a bit.
- Add the rice (well drained) and season with a good pinch of kosher salt. Add water. Bring to a boil until the liquid has reduced by about 1/2 (you should be able to see the rice, liquid should be barely covering the top). Turn the heat to low. Cover and let the rice cook for 15 to 20 minutes or until fully cooked and not hard nor chewy.
- While the rice is cooking, pat the shrimp dry and toss with a bit of kosher salt.
- Uncover the pan and add the shrimp nestling it into the rice. Cover and cook for 3 to 5 minutes more or until the shrimp is pink and fully cooked.
- Garnish with fresh parsley and serve!

I love chicken cacciatore when I have the time to let it braise all afternoon. This one comes together with a light, fresh sauce that has all the flavors of the traditional dish in a much shorter amount of time. And who isn't a fan of crispy chicken?

- For the chicken: Season the pounded cutlets evenly on all sides with 1/2 teaspoon salt. Put the rice flour, eggs and panko in 3 separate shallow bowls. Season the flour with 1/4 teaspoon salt, the eggs with 1/4 teaspoons salt and the breadcrumbs with 1/2 teaspoon salt.
- Working with one piece at a time, dredge the seasoned chicken cutlets in the flour, then the egg mixture and finishing with the breadcrumbs, pressing gently to make sure the breadcrumbs adhere evenly.
- Heat a large skillet over medium heat. Add the oil to the hot pan and heat another 10 seconds. Working in batches if necessary, add the breaded chicken to the pan and cook until the first side is deep golden brown and the chicken begins to look cooked around the edges, 4 to 5 minutes. Flip the cutlets and continue to cook on the second side until golden brown and crispy, about 3 minutes more. Remove the chicken to a wire rack and season with the remaining 1/4 teaspoon salt and pepper if desired.
- For the sauce: Wipe out the pan if needed and return to medium heat. Add the olive oil, mushrooms and 1/2 teaspoon salt and cook, stirring often, until deep golden brown on all sides, about 5 minutes. Add the onions, bell peppers and 1/2 teaspoon salt and cook to soften slightly, about 3 minutes. Stir in the tomatoes, capers, oregano, crushed red pepper flakes if using and the remaining 1/2 teaspoon salt. Cook until the tomatoes start to release their juices, about 3 minutes longer. Spoon the sauce over the crispy cutlets and serve topped with the basil.
BROWN RICE MILANESE
Steps:
- Melt butter in large skillet or shallow heatproof casserole over medium heat. Add shallot and garlic and saute until tender. Add chives and dill and saute an additional 1-2 minutes. Stir in rice and saute until it begins to crackle. Add water and bring to boil. Reduce heat to low, covre and simmer 45 minutes (do not remove cover during cooking time). Remove from heat and add cheese, tossing lightly until cheese is melted.
