Broccoli Stir Fry image

Quick and easy broccoli stir fry cooked in a delicious brown sugar garlic stir fry sauce. Fresh ginger adds the perfect oriental flavor. Ready from start to finish in just 20 minutes!

2 tablespoons soy sauce
2 tablespoons sesame oil
1 teaspoon cornstarch
2 tablespoons minced fresh garlic
1 tablespoon minced fresh ginger
1 tablespoon brown sugar
5 cups cut up fresh broccoli florets

Steps:

  • Cut up your broccoli into florets
  • Mince the fresh garlic and ginger
  • Add the soy sauce, sesame oil, cornstarch, garlic, ginger, and brown sugar to a mason jar with a lid, and shake to combine
  • Add the sauce to the bottom of a large skillet
  • Add broccoli florets on top
  • Cook over medium high heat, stirring often, for 8 - 10 minutes, until broccoli is cooked to desired texture
  • Serve alone or over white rice

All-Purpose Stir-Fry Sauce (Brown Garlic Sauce) image

Adapted from Martin Yan's Chinese Cooking for Dummies. This is my favorite stir-fry sauce. It makes enough for two meals. Having extra on hand makes for a quick meal. My son will actually eat vegetables he can dip in the sauce! WARNING about the amount of soy sauce. When I used Kikkoman soy sauce, I found this sauce far too salty. I now use Angostura, which is much lower in salt. When adding soy sauce, start with less than half the amount and slowly add more to taste. Using vegetable broth makes this vegetarian. Yield: 1 3/4 cups (couldn't get that amount entered)

2/3 cup soy sauce
1/2 cup chicken broth
1/3 cup rice wine
3 1/2 tablespoons sugar
1 tablespoon sesame oil
1/4 teaspoon white pepper
2 tablespoons cooking oil
1 tablespoon minced garlic
1 tablespoon minced ginger
2 tablespoons cornstarch
1/4 cup water

Steps:

  • In a bowl, combine soy sauce, broth, rice wine, sugar, sesame oil and white pepper. (See note in intro about the soy sauce).
  • Dissolve the cornstarch in 1/4 cup water.
  • Heat a pan over high heat; add the cooking oil, swirling to coat; add the garlic and ginger; cook, stirring, until fragrant, about 15 seconds.
  • Add the soy sauce mixture; bring to a boil.
  • Reduce heat to medium and cook for 1 minute.
  • Add the cornstarch solution and cook, stirring, until the sauce boils and thickens.

2 tablespoons peanut oil
6 cloves garlic, minced
1 teaspoon grated fresh ginger
1 bunch green onions, chopped
1 teaspoon salt
1 pound boneless skinless chicken breasts, cut into strips
2 onions, thinly sliced
1 cup sliced cabbage
1 red bell pepper, thinly sliced
2 cups sugar snap peas
1 cup chicken broth
2 tablespoons soy sauce
2 tablespoons white sugar
2 tablespoons cornstarch

Steps:

  • Heat peanut oil in a wok or large skillet. When oil begins to smoke, quickly stir in 2 cloves minced garlic, ginger root, green onions and salt. Stir fry until onion becomes translucent, about 2 minutes. Add chicken and stir until opaque, about 3 minutes. Add remaining 4 cloves minced garlic and stir. Add sweet onions, cabbage, bell pepper, peas and 1/2 cup of the broth/water and cover.
  • In a small bowl, mix the remaining 1/2 cup broth/water, soy sauce, sugar and cornstarch. Add sauce mixture to wok/skillet and stir until chicken and vegetables are coated with the thickened sauce. Serve immediately, over hot rice if desired.

Love chinese take-out and want to make it at home? This brown garlic sauce is an excellent base for any combination of stir-fry dinners.

1 head garlic (sliced thin (about 8 cloves))
2 tbsp ginger (fresh, minced)
3 tbsp cornstarch
2 tbsp sugar
2 tbsp sriracha ((or to taste))
2 tsp sesame oil
4 tbsp rice wine vinegar
2/3 cup soy sauce
1 cup broth

Steps:

  • Peel and thinly slice one small head of garlic (about 8 cloves) and add to a small bowl.
  • Peel and mince about 2 inches (2 tbsp) of fresh ginger. Add to the bowl.
  • Add the cornstarch, sugar, sriracha sauce, and sesame oil to the bowl. Stir to combine the ingredients into a paste. Creating this paste will prevent the cornstarch from making your sauce lumpy.
  • Stir in the rice wine vinegar, soy sauce, and broth until the sauce is smooth. While you prepare and cook your vegetables, stir the sauce occationally to keep it loose.
  • Prepare your stir-fry. About 5 minutes before your stir-fry is done, pour the garlic sauce into the pan. Cook at a medium-high heat until the sauce thickens. Enjoy.

1/2 cup vegetable broth
3 tbsp low-sodium soy sauce ((see notes))
2 tbsp rice vinegar
2 tbsp maple syrup ((see notes))
1/2 tsp sesame oil
1/4 tsp red pepper flakes (or less/more to taste)
1/4 tsp smoked paprika
1 tbsp cornstarch ((see notes))
1/2 tsp Szechuan peppercorns ((optional))
2 tsp Chinese rice wine (or dry sherry (optional))
1/2 tbsp vegetable oil ((see notes))
4 tsp fresh garlic (minced (4 garlic cloves))
2 tsp fresh ginger (minced)

Steps:

  • Add all ingredients for the sauce into a medium-sized bowl and stir with a whisk. Set aside.
  • Next, heat vegetable oil in a saucepan or skillet over medium heat. Add fresh garlic and ginger and sauté for 30-60 seconds, stirring frequently.
  • Whisk the sauce again, then pour it into the saucepan. Bring to a boil and let simmer for a few minutes until thickened, stirring frequently.
  • Use the sauce immediately, for example, in a stir-fry or as a dip for vegan dumplings or summer rolls. Or let it cool completely and pour the sauce into a clean jar.
  • Store leftovers in the refrigerator for up to 4 or 5 days. Enjoy!
