BROWN BUTTER SKILLET CORNBREAD

Brown Butter Skillet Cornbread image

This lightly sweet cornbread has a crunchy, buttery crust, which comes from baking it in a hot skillet. If you have a cast-iron pan, this is the time to use it. The heavy, heat-retaining material will give you the darkest color (which equals the most flavor). But any large ovenproof skillet will work. And if you don't have a skillet big enough to hold all the batter, you can either halve the recipe or bake the cornbread in 9-by-13-inch pan. (Brown the butter first in a saucepan.) Your bread won't have the same dark crust, but the moist crumb flavored with brown butter and maple syrup is ample recompense.

Categories     breads, side dish

Time 1h

Yield 12 servings

Number Of Ingredients 10

12 tablespoons (1 1/2 sticks)/170 grams unsalted butter
1/2 cup/120 ml maple syrup
2 1/4 cups/530 ml buttermilk
3 large eggs
1 1/2 cups/180 grams yellow cornmeal, fine or medium-coarse grind
1/2 cup/65 grams whole wheat flour
1/2 cup/60 grams all-purpose flour
1 1/2 tablespoons/18 grams baking powder
1 1/2 teaspoons/9 grams kosher salt
1/2 teaspoon/5 grams baking soda

Steps:

  • Heat oven to 375 degrees. On the stovetop, in a 11- or 12-inch skillet (ovenproof and preferably cast iron), melt the butter over medium heat. Cook, swirling pan to lightly coat sides and bottom, until the foam subsides and the butter turns a deep nut brown. (Watch carefully to see that it does not burn.)
  • Pour brown butter into a large bowl. (Do not wipe out the pan.) Whisk the maple syrup into the butter, then whisk in buttermilk. The mixture should be cool to the touch; if not, let cool before whisking in the eggs. Then whisk in the cornmeal, flours, baking powder, salt and baking soda.
  • If the skillet is no longer hot (cast iron retains heat longer than other metals), reheat it briefly on the stove for a few minutes. Scrape batter back into it. Bake until the top is golden brown and a toothpick inserted into it emerges clean, 30 to 40 minutes. Cool in the skillet for 10 minutes before slicing.

BLUEBERRY CORNBREAD WITH HONEY BUTTER

Blueberry Cornbread with Honey Butter image

Delicious, amazing blueberry cornbread bursting with blueberries and served with a lightly spicy honey butter.

Provided by Cook's Country

Categories     Breads/Muffins

Time 50m

Number Of Ingredients 14

1 1/2 C all-purpose flour
1 C yellow corn meal (plus 1 1/2 for dusting pan)
3/4 C sugar (plus 1 tbsp for sprinkling on top of batter)
2 tsp baking powder
3/4 tsp salt
12 tbsp melted butter, cooled
1 C cold milk
2 large eggs
2 C blueberries (if frozen, don't thaw first)
For the honey butter:
4 tbsp butter, softened
2 tbsp honey
1/4 tsp salt
generous pinch of cayenne (to taste)

Steps:

  • Spray a 9-inch square or round cake pan. Dust with about 1 1/2 tbsp yellow cornmeal. Preheat oven to 375°.
  • In a large bowl, whisk together the flour, corn meal, sugar, baking powder, and salt.
  • In a smaller bowl, whisk together the melted butter, milk, and eggs. Pour the wet ingredients into the dry ingredients and whisk until just combined - there may be small lumps and that's OK. Finish by folding with a large spoon to make sure all is incorporated from the bottom of the bowl.
  • Fold the 2 cups of blueberries into the batter, pour it into the prepared pan and lightly smooth down the top of the batter. Finish off the top by sprinkling 1 tablespoon of sugar over the batter.
  • Bake for 40-45 minutes (mine was perfect at 40 minutes) until toothpick comes out clean. It will be very lightly brown on top. Let cool in the pan for 20 minutes. Run a paring knife around the edges of the pan and turn out onto a rack. Cool for an additional 20 minutes until completely cooled. Use a serrated knife to cut pieces.
  • To make the honey butter, mix together the butter, honey, salt and cayenne until totally blended. Serve with cooled cornbread.

HONEY BUTTER CORNBREAD

Honey Butter Cornbread image

Make the best homemade cornbread with this easy recipe! It's fluffy on the inside, crisp around the edges, and full of delicious honey-butter flavor. Recipe yields one large skillet of cornbread (see recipe notes for alternate baking vessel options).

Provided by Cookie and Kate

Categories     Baked goods

Time 45m

Number Of Ingredients 10

1/2 cup (1 stick) unsalted butter
1 1/2 cups cornmeal, medium-grind or finer*
1 1/2 cups white whole wheat flour, regular whole wheat flour or all-purpose flour
1 1/2 teaspoons fine sea salt
2 teaspoons baking powder
1/2 teaspoon baking soda
3 large eggs, at room temperature**
2/3 cup honey or maple syrup
1 1/2 cups milk of choice (regular cow's milk, almond or oat milk, etc.), at room temperature
Optional serving suggestions: additional butter, honey or jam

Steps:

  • Preheat the oven to 375 degrees Fahrenheit. Place the butter in a large (12-inch) cast iron skillet and place the skillet in the oven to melt the butter, about 5 to 13 minutes (keep an extra eye on it as time goes on-we want it to get bubbly and lightly browned, but not burnt).
  • Meanwhile, in a large bowl, combine the cornmeal, flour, salt, baking powder and baking soda. Stir to combine, and set aside. In a medium bowl, whisk together the eggs and honey until fully blended. Add the milk and whisk until evenly combined.
  • Pour the liquid into the dry mixture, and stir just until moistened through (we'll stir it more soon). When the butter is melted and golden, use oven mitts (the skillet is crazy hot!) to remove the skillet from the oven, and give it a gentle swirl to lightly coat about an inch up the sides.
  • Pour the melted butter into the batter and stir just until incorporated. Pour the batter back into the hot skillet, using a spatula to scrape all of the batter from the bowl into the skillet.
  • Carefully return the skillet to the oven and bake until the bread is brown around the edge, springy to the touch, and a toothpick inserted in the center comes out clean with just a few crumbs, 25 to 30 minutes. Carefully (with oven mitts), place the skillet on a cooling rack. Let it cool for at least 5 minutes before slicing and serving-perhaps with extra butter, honey or jam on the side.
  • This cornbread will keep at room temperature in a sealed container for up to 3 days, or up to a week in the refrigerator. You can also freeze it for up to 3 months. Gently reheat before serving.

EASY BUTTERMILK CORNBREAD

Easy Buttermilk Cornbread image

Easy Buttermilk Cornbread with a hint of honey is the perfect side to chili's, soups or stews! Crunchy buttery edges with a soft and fluffy centre!

Provided by Karina

Categories     Side Dish

Time 30m

Number Of Ingredients 10

1/2 cup unsalted butter (melted and cooled slightly)
1 cup all-purpose flour
1 cup yellow cornmeal ((or polenta))
1/4 cup brown sugar ((or white granulated sugar))
1 teaspoon baking powder ((optional: yields a fluffier cornbread))
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk (shake before measuring)
1/4 cup honey
2 large eggs

Steps:

  • Preheat the oven to 200C | 400F and position a rack in the middle. Lightly grease a 9-inch cast iron skillet or 9-inch square baking dish with butter and place skillet/dish into the oven to heat up. (Alternatively for cast iron skillets: heat 1/2 cup of unmelted butter in your cast iron over stove top on medium heat until melted, turn heat off then allow the butter to cool slightly before adding to the batter.)
  • In a large bowl, whisk together the flour, cornmeal, sugar, baking powder (If using), baking soda and salt.
  • Make a well in the centre and add the buttermilk, honey and eggs. Mix together well to combine, then add in the slightly cooled melted butter. Mix again until 'just' combined (don't over mix).
  • Carefully remove your 'hot' pan or dish from the oven with oven mitts, and pour the batter into the hot skillet or dish. Listen to that sizzle! That's what you want.
  • Bake until the cornbread begins to brown on top and a toothpick inserted in the centre comes out clean (about 20-23 minutes). Allow to cool for about 10 minutes before slicing and serving.
