1 cup oranges or 1 cup grapefruit section
1 teaspoon lemon juice or 1 teaspoon lime juice
1/4 cup walnuts, chopped
1 apple, Red Delicious or Ginger Gold

Steps:

  • In medium-size bowl, stir together orange juice, honey and lemon juice.
  • Add apples, grapes, orange sections and walnuts; toss to coat with juice mixture.
  • Refrigerate or pack into individual containers for lunches and snacks.

2 medium red apples, chopped
1 large Granny Smith apple, chopped
1/4 cup dried cranberries
2 tablespoons chopped walnuts

Steps:

  • In a large bowl, combine the yogurt, whipped topping and 1/4 teaspoon cinnamon. Add apples and cranberries; toss to coat. Refrigerate until serving. Sprinkle with walnuts and remaining cinnamon before serving.

1/4 cup sugar
3 tablespoons white wine vinegar
1 tablespoon finely chopped red onion
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 to 1/2 teaspoon celery seed
1 medium head romaine lettuce, torn into bite-size pieces (about 10 cups)
4 cups mixed salad greens (from 10-oz bag)
1 container (4 oz) blue or Gorgonzola cheese crumbles
1 cup walnut halves, toasted
2 red apples, cut into bite-size pieces

Steps:

  • In medium bowl, mix dressing ingredients with wire whisk until sugar is dissolved (dressing will be thick); set aside.
  • In very large bowl (at least 4 quart), gently mix salad ingredients. Just before serving, pour dressing over salad; toss to coat. Serve immediately.

This is a very simple recipe I threw together...nothing fancy...just a brown bag recipe to give a little variety at the office...I get so tired of ordinary sandwiches. I like to take this spread separately in a tupperware container and then take along toasted wheat bread in a ziploc and slices of tomatoes in another ziploc bag and assemble at work so it is not soggy. Very easy and really quite tasty. I suppose you could also add olives if you like them.

1 cup imitation crabmeat, chopped medium fine
1/4 cup white onion, chopped fine
1/3 cup fresh grated parmesan cheese

  • Serve as sandwich on bread of your choice, (I prefer toasted bread, though you could use english muffin or bagel.).
  • Add any additional toppings, such as tomatoes, olives etc at time of serving.
