TRADITIONAL CANADIAN CHRISTMAS CAKE
One the prairies, one was measured by the flavour and texture of their dark fruitcake. Everyone made it. Everyone had an opinion. It is the bourbon that makes all the difference to me, in this exotic dark fruit cake. Makes 2 loaves or 5 small loaves. Must be made a minimum of 4 weeks before the holiday season.

Steps:
- Place all fruit in large bowl; add bourbon and soak for 2-4 hours
- Preheat oven to 300°F and grease two 9 x 5 loaf pans 2 1/2 inches deep or five 5 3/4 x 3 pans 2 inches deep
- Line bottoms with parchment paper; butter it (the original recipe was waxed paper)
- Cream together butter and brown sugar; beat in the eggs.
- Sift all dry ingredients; beat into butter mixture
- Add molasses and brewed black coffee or espresso to mixture; combine well
- Fold in the nuts and bourbon soaked in fruit
- Carefully pack the batter into the prepared pans almost to the top (I used an offset spatula to finish the tops of each cake)
- Place pans on centre rack of oven in a bain marie (place pans in a larger pan and pour hot water halfway up the sides); bake for 2 to 2 ½ hours, or until toothpick comes out clean (the small cakes took 50 minutes, so watch carefully after 45 minutes)
- If the tops brown too quickly, place foil over the top
- Cool 30 minutes, then remove and set on wire rack
- Wrap carefully in a triple layer of cheesecloth that has been soaked in bourbon
- Seal tightly in aluminum foil and store in a cool dry place until the holiday season
- Once a week, remove foil, and brush additional bourbon onto the cheese cloth
- The longer it is stored, the more times it is dowsed, the more pungent and flavourful it becomes.
PARMESAN WITCHES' BROOMSTICKS
A delicious and uniquely shaped breadstick for the kids to enjoy with chili before they go out trick-or-treating.

Steps:
- Heat oven to 350°F. Stir Bisquick mix and milk until soft dough forms. Place dough on surface dusted with Bisquick mix; gently roll in Bisquick mix to coat. Shape into ball; knead 10 times.
- Shape dough into 30 one-inch balls. Roll 15 balls into 15 six-inch ropes to make broomstick handles. Place on ungreased cookie sheet. Pat remaining balls onto 1 end of each broomstick handle. Dip fork into Bisquick mix; press fork firmly on balls to make bristles.
- Brush egg over dough. Sprinkle cheese over dough bristles. Bake 10 to 15 minutes or until light golden brown. Serve warm.

- Coat an 8x12x2-inch pan with the 2 tablespoons of butter.
- Sprinkle the brown sugar evenly over the butter.
- Peel, core and slice apples.
- Arrange apples slices over the sugar mixture.
- Sprinkle nuts over all.
- Place pan on the bottom shelf of oven and let apples cook while mixing the other ingredients.
- Cream together butter and sugar, add egg and molasses and mix well.
- Sift dry ingredients and stir in to creamed mixture.
- Put in hot water and mix to a thin batter.
- Remove pan from oven and pour batter over apples.
- Return to oven and bake for 35 minutes.
- Remove from oven and loosen cake around edges.
- Let stand five minutes and turn out on to serving tray.

- Put the flour and butter into a food processor. Put the lid on and whizz for about 20 seconds until it looks like breadcrumbs. Add the cheese and milk and whizz again for about 30 seconds, until it forms into a ball. Tip out, wrap in cling film and pop in the freezer for 15 minutes to chill.
- Preheat the oven to 200°C/fan180°C/gas 6. Put the dough between 2 sheets of non-stick Teflon, or 2 sheets of baking paper. Use a rolling pin to flatten the dough, then roll out to a rectangle, about 1cm thick. Cut 6 broomstick shapes from the pastry, each about 10cm long and spaced well apart. Make about half a dozen cuts to form the ‘brush’ of each broomstick. Using a palette knife, gently ease them onto a Teflon- or baking paper-lined tray. Re-roll the pastry and make another 6 broomsticks. Add these to the baking tray.
- Mix the Marmite with 1 teaspoon of hot water and brush over the brooms to glaze. Bake in the oven for 10 minutes or until crisp and golden brown.

- Lightly flour your board and rolling pin. Unfold the puff pastry sheet and cut along the fold to separate each sheet into three sections for a total of six sections. Three sections will be used to make the handles, and 3 sections will be used to make the bristles.
- Bristles: Working with one section at a time, roll thin on a floured board and use a pizza cutter to make matchstick strips. Make 4 thicker strips for the coil around the bristles. Cut those in half and set aside from the matchsticks.
