BROIL A PERFECT STEAK
I found this cooking guide on Lindauer Family Farms website when I ran out of gas for my grill. If you like how yor steak is prepared at Outback Steakhouse, then you will love this recipe.

Steps:
- ADDITIONAL ITEMS - Cast Iron Skillet, Spatula or Tongs.
- Bring your 1 to 2 inch steaks to room temperature and use a clean cloth to remove excess moisture.
- Move oven rack 6 inches from heating element.
- Pre-heat oven and skillet by setting the oven to broiler for 15 to 20 minutes.
- Rub steaks with olive oil, kosher salt and coarsely ground pepper. NOTE: Use any seasonings of your choice.
- Once the skillet is pre-heated, pull out the oven rack and carefully lay steaks on the skillet. NOTE: Pan is Extermely Hot and will spit and splatter.
- Close oven and sear the steaks for 3 minutes on one side, turn and sear the opposite side for 3 minutes. DO NOT USE A FORK TO TURN STEAKS!
- Once seared, set the oven to 500F and cook using this Time Chart. Turn steaks half way through the remaining cooking time.
- Rare (120-130F)1" 0-1 minute, 1 1/4" 2-3 minute, 1 3/4" 4-5 minute
- Medium (140-150F) 1" 2-3 minute, 1 1/4" 4-5 minute, 1 3/4" 6-7 minute
- Medium Well(150-160F) 1" 4-5 minute, 1 1/4" 6-7 minute, 1 3/4" 8-9 minute
- Remove steaks from the oven and let rest for 5 minutes.
- Serving on warm plates is recommended to maintain meat temperature.
- I can not stress this tip enough -- Keep the fork in the drawer until ready to eat. Never pierce the meat during cooking.

Steps:
- Preheat the oven to 500 degrees F (260 degrees C).
- Mix olive oil and grill seasoning together in a large bowl. Add potato wedges and toss to coat.
- Line 2 baking sheets with aluminum foil. Crumple up foil slightly and grease with cooking spray. Arrange potato wedges on the foil so that they are not touching and have enough room to cook.
- Bake in the preheated oven, turning once, until brown and crispy, about 25 minutes.

- In a small bowl, combine the first 6 ingredients; rub over both sides of steaks. , Broil 4 in. from the heat for 7 minutes. Turn steaks; top with mushrooms. BROILER STEAK FRIES
These are great, flavorful, crisp and easy. They go well with steak and roasts or anything you want to put them with.

Steps:
- 1. scrub and remove any bad spots from potatoes
- 2. slice into wedges 8-10 per potato depending on size
- 3. place in large bowl and drizzle the olive oil over them, mix around well to coat the potatoes evenly.
- 4. mix all dry ingredients in another bowl then sprinkle over potatoes and mix around again to coat them evenly with dry mix.
- 5. arrange in single layer on a large cookie sheet or broiler pan, and cook in broiler on low for 10-15 minutes, turning once about half way through.
- 6. Serves 4 to 6 people.
BROILED HOME FRIES
A seasoned potato similar to french fries. I use a sugar water mixture to soak the potatoes first becuase I've heard that this is a trick to great french fried potatoes.

- Scrub and wash potatoes.
- Cut into steak fry size portions.
- Combine sugar and water.
- Place potatoes in bowl and cover in sugar water mixture.
- Let sit for 30 minutes.
- Drain and pat dry.
- Add potatoes, seasoning and oil into large ziplock bag or plastic bag.
- Shake vigorously.
- Pour back in sugar water bowl.
- Microwave mixture on baked potato setting or 7 minutes on high.
- Pour onto cookie sheet in one layer.
- bake at 450 for 20 minutes or until browned or on broil setting in toaster oven. This is how I like them.

BROILED FLANK STEAK RECIPE
In this easy recipe, a very flavorful flank steak is rubbed in olive oil and spices, then broiled to medium-rare.

- Position an oven rack 6 inches below the broiler unit (so not directly below). Preheat the broiler on high (550°F).
- Line a large rimmed baking sheet with foil. Place it in the oven and allow it to heat up for about 5 minutes while you prepare the meat for broiling.
- In a small bowl, stir together the olive oil, kosher salt, black pepper, and red pepper flakes. Set aside.
- Unfold the flank steak and place it on a cutting board or another work surface. Examine it and locate the meat fibers - later, when it's cooked, you'll want to cut across them.
- Rub the meat all over with the olive oil rub.
- Carefully, using oven mitts, remove the hot pan from the oven. Place the steak in the pan. Place the pan in the oven and broil until the steak is browned, about 8 minutes for medium-rare.*
- Remove the steak to a cutting board. Loosely cover it with foil and let it rest for 10 minutes.
- Slice the meat thinly against the grain, as shown in the video below. Serve immediately.

- Preheat oven as instructed for the fries.
- Arrange two baking sheets and divide the fries equally between the two in a single layer. Bake until golden brown and cooked through.
- Meanwhile, season the steak liberally with salt.
- Preheat a heavy-duty cast-iron skillet, to medium heat.
- Cook the steak, 2 to 3 minutes a side, until a great crust forms and it pulls back without any resistance.
- Remove the steak and wrap in foil.
- In the same skillet, toss in the peppers and onions. Allow to caramelize for 3 to 5 minutes.
- Add the Worcestershire sauce, black pepper, and cover. Cook until tender, about 5 minutes longer.
- Slice the steak into paper thin strips.
- Remove the fries from the oven and set to broil.
- Arrange a layer of fries on the pan, top with ¼ of the cheese, ¼ steak, peppers and onions. Set under the broiler for 1 minute just to melt the cheese.
- Carefully remove and pile the rest of the fries on top.
- Cover in the remaining peppers, onions, steak and cheese.
- Place under the broiler one more time for 2 to 3 minutes, until the cheese has melted.
- Remove and allow the pan to cool to the touch placing safely but allowing guests to serve themselves from the warm platter of cheesy fries.

STEAK AND SHRIMP SPECIAL

- Preheat a grill to high. Alternatively, preheat a broiler to high. Season the steaks liberally with the steak seasoning on both sides. Cook the steaks over high heat to order: about 2 minutes on each side for rare, 2 1/2 minutes on each side for medium-rare, 3 1/2 minutes on each side for medium, and 4 1/2 minutes on each side for medium well. Halfway through the cooking time on each side, turn each steak 45 degrees to make grill marks.
- Add half the clarified butter to a large skillet and heat over high heat. Add the shrimp skewers and cook the shrimp on both sides until they are opaque throughout, about 1 to 2 minutes per side.
- Fill a deep fryer with oil and heat it to 350 degrees F. Alternatively, heat oil in a large, heavy Dutch oven to 350 degrees F; do not fill pan more than halfway full with oil. Drop the fries into the fryer and cook until they are golden brown, about 5 minutes. Remove to a paper towel lined plate to drain and season the fries with salt.
- To serve, place 1 steak on a plate, top the steak with skewered shrimp, and add some French fries. Garnish with a lemon wedge and serve with a small dish of clarified butter on the side. Serve immediately.
