BROILED STEAKS

Broiled Steaks image

From "Cook's Country from America's Test Kitchen," episode 108, "Steakhouse Favorites." ATK recommends top sirloin steak for indoor broiling. If price is no object, they recommend rib-eye or New York strip steaks.

Provided by DrGaellon

Categories     Steak

Time 40m

Yield 4 serving(s)

Number Of Ingredients 6

4 tablespoons unsalted butter, softened
1 tablespoon minced fresh thyme
1 teaspoon Dijon mustard
4 rib eye steaks or 4 New York strip steaks, 1-2-inch thick
kosher salt
ground black pepper

Steps:

  • Blend together butter, thyme and mustard; season with salt and pepper. Place butter on waxed paper or parchment; roll into a log about 1-1½" thick. Wrap in plastic and refrigerate until firm.
  • Trim steaks of any exterior fat. (Leaving the fat on will result in a lot of smoke in your broiler.) Pat steaks dry with paper towels. Season both sides with salt and pepper. Do not use your oven's broiling pan; it's too shallow. Pour 2 cups of salt into a 3" deep disposable roasting pan, then place a cooling rack over the pan. The salt will catch any drips and prevent them from flaring or smoking. Place steaks on the rack.
  • Place steaks in a preheated 375°F oven for 6-8 minutes to bring them up to temperature. Turn steaks over and pat dry again with paper towels. Let rest 10 minutes while preheating broiler.
  • Place roasting pan in broiler, positioned so steaks are 1-1½" from the heating element. Broil 3 minutes, then turn steaks over and broil another 3 minutes. Continue flipping the steaks every 3 minutes until center registers 125-130°F (for medium-rare), 6-16 minutes. Transfer to a serving platter and top each steak with one quarter of the compound butter. Tent with foil and let rest about 5 minutes before serving.
  • Note: timing depends on how strong your broiler is. Place a slice of plain white sandwich bread under your broiler, about 3" from the heat. If your bread is toasted in under 30 seconds, you have a very strong broiler and should use the shortest times. If longer than 2 minutes, your broiler is very weak, and use the longest cooking times.
  • Note: for 1" steaks, prebake 6 minutes and flip every 2 minutes. For 1½" steaks, prebake 8 minutes and flip every 3 minutes. For 2" steaks, prebake 10 minutes and flip every 4 minutes.

Provided by Vered DeLeeuw

Categories     Main Course

Time 28m

Number Of Ingredients 5

2 tablespoons olive oil
1 tablespoon minced fresh garlic
2 teaspoons Diamond Crystal kosher salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes

Steps:

  • Position an oven rack 6 inches below the broiler unit (so not directly below). Preheat the broiler on high (550°F).
  • Line a large rimmed baking sheet with foil. Place it in the oven and allow it to heat up for about 5 minutes while you prepare the meat for broiling.
  • In a small bowl, stir together the olive oil, kosher salt, black pepper, and red pepper flakes. Set aside.
  • Unfold the flank steak and place it on a cutting board or another work surface. Examine it and locate the meat fibers - later, when it's cooked, you'll want to cut across them.
  • Rub the meat all over with the olive oil rub.
  • Carefully, using oven mitts, remove the hot pan from the oven. Place the steak in the pan. Place the pan in the oven and broil until the steak is browned, about 8 minutes for medium-rare.*
  • Remove the steak to a cutting board. Loosely cover it with foil and let it rest for 10 minutes.
  • Slice the meat thinly against the grain, as shown in the video below. Serve immediately.

GRILLED FLANK STEAK RECIPE

Grilled Flank Steak Recipe image

Flank steaks, sometimes called London Broil steaks, are cheaper because they have very little fat, and they can be chewy if you overcook them or cut them improperly. This is the only recipe you'll ever need in order to get them cooked perfectly on the grill.

Provided by Kris Coppieters

Categories     Dinner     Main Course

Number Of Ingredients 3

1 flank steak ((approximately 4 pounds))
1/2 tablespoon vegetable oil
1 teaspoon Morton Coarse Kosher Salt

Steps:

  • Prep. An hour or two before cooking, moisten the surface of the meat, salt it, and place it in the fridge. This technique is called a dry brine and it does a great job of amplifying flavor because the salt is sucked down deep into the meat.
  • Flank steak is usually wedge shaped. One end is a lot thicker than the other. When you cook it hot and fast one side is either overcooked or undercooked. So here's how to outsmart the steak. If your steak is more than 1/4" thicker at one end than the other, cut it in half and start the thick half first. This is important: Make a mental note of which way the grain of the fibers is running. You can even put a toothpick in there as a pointer.
  • Lightly coat the meat with oil to help darken the surface and keep it from sticking.
  • Fire up. Start a 2-zone fire and get the hot zone as hot as possible. Flank steak is best over charcoal or the sear burner of a gas grill. If you are using charcoal, here's a trick: Raise the coals so they are about 2" below the cooking grate. On a Weber Kettle, put a couple of bricks under the charcoal grate as shown here. We want high heat so we can take the surface to dark brown and crusty, almost but not quite charred.
  • Cook. Put the thick half of the flank steak on first, about 2 minutes ahead of the thin half. Leave the lid off. Cook about 4 minutes on the first side or until it gets dark brown and from the side you can see the color has changed about 1/4" up the side. Cook on the other side about 3 minutes. The exact time will depend on your grill. If the skinny section finishes too fast you can move it to the indirect zone.I like mine rare to medium rare, at about 125°F, which is where it is when the juices start to come through the surface. Use an instant read meat thermometer to be sure you get it right.
  • Slice. Remove the flank steak from the grill and set on a cutting board. The way you carve the meat is crucial to making it easy to chew. Flank steak tends to be tough, but if you cut it thin and across the grain, it is easier to chew. Click here to learn more about the proper way to carve flank steak. Place the meat on a cutting board. Hold a thin blade at a 45 degree angle and cut 1/8" slices across the grain. If you slice with the grain it will be much too chewy. On a flank steak, the first cut will be a little overcooked. Not to worry, the center cuts will be just fine.
  • Serve. Plate the meat, laying it out in a fan. If wanted, top it with a little chimichurri sauce but be careful not to add too much as you want to meat taste to shine through. It can also be served over salad.

SIMPLE BROILED FLANK STEAK WITH HERB OIL

Simple Broiled Flank Steak with Herb Oil image

Flank steak is a relatively lean cut of meat but full of flavor. This preparation is low on the fussiness factor: Put your seasoned steak on a preheated broiler pan and cook, no flipping needed. Just be sure to cut the meat against the grain-across, not parallel with, the visible lines of muscle fibers-so the steak will be tender, not chewy.

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 7

1/4 cup plus 2 tablespoons extra-virgin olive oil
1/4 cup chopped fresh parsley
2 tablespoons red wine vinegar
1 clove garlic, minced
Pinch of crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 flank steak, 1 1/2- to 2-pounds

Steps:

  • Position an oven rack 5 to 6 inches from the broiler unit, and preheat the broiler. Line a broiler pan or baking sheet with foil, and set the broiler insert on top of the broiler pan if using. Place the pan on the oven rack, and preheat until hot, about 5 minutes.
  • Meanwhile, mix together 1/4 cup of the oil, parsley, vinegar, garlic, pepper flakes, 1/2 teaspoon salt and a few grinds of pepper in a small bowl. Cover the herb oil, and set aside until ready to serve.
  • Stir together the remaining 2 tablespoons oil, 2 teaspoons salt and 1 teaspoon pepper in a small bowl. Rub the mixture on both sides of the steak.
  • Carefully remove the broiler pan from the oven, put the steak in the center and broil (without turning) until nicely browned and firm, with some give when pressed in the thickest part, 6 to 8 minutes for medium-rare. Let the steak rest for 10 minutes. Slice thinly against the grain, and serve with the herb oil.
