BROILED TURKEY TENDERLOINS

Broiled Turkey Tenderloins image

This recipe is perfect for weekday meals or special dinners with my grandchildren. The simple sauce gets its tang from citrus, a little kick from cayenne and subtle sweetness from molasses. It keeps well in the refrigerator, so it can be made ahead. I often fix extra to use later with other meats.-Jean Komlos, Plymouth, Michigan

ROAST TURKEY

Roast Turkey image

NOTE: Even though you may have purchased a Butterball or a butter basted bird, you should still follow these directions, as they inject very little butter into the bird, just so that they can legally get away with saying that it is butter basted. Trust this recipe of mine, and I guarantee that you and your guests will have the best and juciest turkey ever! The cook time will vary, depending on the size of the bird. ALSO, SEE MY RECIPE #105192 FOR THE BEST GIBLET GRAVY. It is very EASY! If you have any questions e-mail me: [email protected]

Categories     Whole Turkey

Time 3h50m

Yield 1 Turkey, 10 serving(s)

Number Of Ingredients 13

1 (12 -20 lb) whole turkey
4 tablespoons butter (real butter, more on outside for more browning)
chicken broth
2 tablespoons salt
2 tablespoons ground black pepper
1 tablespoon onion powder
2 tablespoons garlic powder, granulated
1 tablespoon dried tarragon
1 tablespoon dried parsley flakes
1 tablespoon dried thyme
1 tablespoon dried basil
1 tablespoon sage
2 tablespoons paprika (more on outside for more browning)

Steps:

  • Remove giblets from both cavities at both ends and set aside. Rinse the bird inside and out and pat dry with paper towel.
  • Place a rack into a large roasting pan,and then place the turkey onto the rack with the breast and legs up.
  • Mix all of the seasonings, except the paprika, together with the butter.
  • Place your hand between the skin and the flesh from the rear of the turkey and slide a palm full of butter and seasoning mixture in between the skin and flesh.
  • Then place a glob of butter into the palm of your hand and generously rub the entire turkey with the butter. Generously sprinkle the entire bird with salt, freshly ground black pepper, onion powder, granulated garlic powder, tarragon, parsley flakes, thyme, basil and paprika. Pour about 1/4" to 1/2" of chicken broth in the bottom of the roasting pan, being careful not to wash any of the seasonings off the turkey.
  • Completely tent the turkey with aluminum foil and place into a preheated 325 degree oven for about 1 1/2 hours. Remove the foil tent and wrap foil around the legs and wings.
  • Baste the turkey and return it to the oven for the remainder of the cooking time, which will be when the interior temperature of the bird reaches 180 degrees or until the juices run clear and not red when you puncture the bird between the thigh and the breast.
  • Cooking time will vary depending on the size of the turkey.
  • NOTE: I always cook my turkey unstuffed.
  • I place my stuffing into baking dishes to bake.
  • Also, see my recipe #105192 for the best giblet gravy ever!
  • During the last 10 or 15 minutes of cooking, increase temperature to 375 or 400 degrees F. to get more browning, but watch it carefully, as you do not want to burn it or dry it out.

Time 4h30m

Yield 24

Number Of Ingredients 5

1 (18 pound) whole turkey
½ cup unsalted butter, softened
salt and freshly ground black pepper to taste
1 ½ quarts turkey stock
8 cups prepared stuffing

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Place rack in the lowest position of the oven.
  • Remove the turkey neck and giblets, rinse the turkey, and pat dry with paper towels. Place the turkey, breast side up, on a rack in the roasting pan. Loosely fill the body cavity with stuffing. Rub the skin with the softened butter, and season with salt and pepper. Position an aluminum foil tent over the turkey.
  • Place turkey in the oven, and pour 2 cups turkey stock into the bottom of the roasting pan. Baste all over every 30 minutes with the juices on the bottom of the pan. Whenever the drippings evaporate, add stock to moisten them, about 1 to 2 cups at a time. Remove aluminum foil after 2 1/2 hours. Roast until a meat thermometer inserted in the meaty part of the thigh reads 165 degrees F (75 degrees C), about 4 hours.
  • Transfer the turkey to a large serving platter, and let it stand for at least 20 to 30 minutes before carving.

THE GREATEST GRILLED TURKEY

The Greatest Grilled Turkey image

Although not very traditional, grilling turkey is the best way of cooking it -- it comes out tender and juicy every time! The turkey drippings may be used to prepare a gravy by placing a metal pan under the turkey inside the roasting pan, and mixing in about 1/2 cup water, adding more water as necessary to prevent the drippings from scorching. Remove the pan about 30 minutes before the turkey is done cooking.

BROILED TURKEY

Broiled Turkey image

Categories     turkey     Broil     Thanksgiving     Fall     House & Garden

Yield Makes 1 turkey

Number Of Ingredients 11

3 1/2- to 5-pound turkey
Oil
Salt and pepper to taste
Paprika
1 to 2 garlic cloves
Butter (optional)
1 cup white wine (optional)
1/2 cup Japanese soy sauce (optional)
3 cloves garlic finely chopped (optional)
1/4 cup oil olive oil (optional)
1 tablespoon Tabasco (optional)

Steps:

  • Only very young, fresh-killed turkeys weighing from 3 1/2 to 5 pounds broil successfully. Split the turkey and remove the breastbone and backbone. Rub well with oil, salt, pepper and paprika. A clove or two of garlic, finely chopped, may be rubbed into the skin and along the bone of the bird. This gives the turkey a delicious flavor.
  • Adjust the broiling pan about 4 to 5 inches from the heat and boil the turkey, bone side to the heat, for approximately 25 minutes, basting occasionally with a little melted butter. Turn at the end of 25 minutes, brush with butter or olive oil, and broil until nicely browned and cooked through, about 18 to 25 minutes more. Be careful not to overcook, or the white meat will be dry and uninteresting.
  • Serve the broiled turkey with matchstick potatoes and a good salad. Drink a Beaujolais such as Juliénas.
  • Variation: Marinate the turkey in one cup white wine, 1/2 cup Japanese soy sauce, 3 cloves garlic finely chopped, 1/4 cup olive oil and one tablespoon Tabasco. Turn the turkey several times during the marinating period. Broil as directed and baste with marinating liquid. Serve with fried rice and tiny cooked green beans with crisp, crumbled bacon and onion.

BROILED TURKEY STEAKS RECIPE

Broiled Turkey Steaks Recipe image

Provided by á-170456

Number Of Ingredients 5

Wild turkey steaks see * Note
Butter as needed
Pomegranate molasses as needed
Salt to taste
Freshly-ground black pepper to taste

Steps:

  • * Note: Turkey steaks are made by cutting across the breast, against the grain, instead of filleting it. Each steak should be about one inch thick. This cut is best made with a professional meat saw, and some friendly butchers will cut the steaks for you if you are a regular customer. Not that cutting against the grain makes an entirely different meat from the same breast cut into fingers with the grain. Preheat the broiler, and adjust the rack so it is four inches from the heat source. Melt a little butter and mix in an equal amount of pomegranate molasses, making enough for a basting sauce. Salt and pepper the turkey steaks, place them in a broiling pan, and broil for three minutes on each side. Baste the top side, and broil for another minute. Turn, baste, and broil a little longer, until the turkey is done. Don't overcook. Serve hot with rice and steamed vegetables or perhaps broiled eggplant. This recipe yields ?? servings.

  • Allow your turkey to come to room temperature by removing it from the fridge 1 hour before roasting. Then, remove the giblets.
  • Preheat your oven to 325F/160C and pat the outside of the turkey dry with paper towels. Season the cavity of the turkey with salt and pepper. Then fill it with the onion, lemon, and fresh herbs. If your turkey is smaller, don't overfill the cavity as you do want some airflow.
