CRUSTY BROILED TOMATOES
In the South, we love to let our fresh, seasonal produce shine, and this simple dish spotlights a favorite Southern ingredient: the tomato. With a crispy, cheesy breadcrumb crust, these Broiled Tomatoes are a beautiful way to show off seasonal tomatoes.With only a few added ingredients, this recipe lets the fresh tomatoes shine as the main component of the dish, their natural flavors complemented by a brush of Dijon mustard and a crust of cheese and breadcrumbs. The tomatoes are broiled just enough to brown the crust, while still maintaining their solid form and juicy bite. To enhance this simple crust and add an extra pop of flavor, feel free to toss the breadcrumb mixture with finely chopped basil or your favorite seasonal herbs. - Preheat broiler with oven rack 5 1/2 inches from heat. Cut tomatoes in half. Spread cut sides with mustard; sprinkle with salt, black pepper, and red pepper.
- Place tomato halves on baking sheet. Combine butter, breadcrumbs, and cheese. Spoon crumb mixture on top of each tomato half.
- Broil 2 minutes or until crumbs are golden brown and tomatoes are thoroughly heated.

- Preheat your broiler on high. Position an oven rack 6 inches below the heating element (not directly below).
- Cut the tomatoes in half. Cut a tiny sliver from the bottom of each half, so that the tomatoes can stand upright without wobbling.
- Spray the tomatoes all over with olive oil. Place them on a broiler-safe rimmed baking dish, cut side up.
- Sprinkle the tomatoes with salt, pepper, garlic powder, and thyme. Top with Parmesan, 2 tablespoons for each tomato half.
- Broil until the cheese is golden brown, 3-5 minutes.

- Remove cores from tomatoes and cut tomatoes in half crosswise.
- Spread cut side of each tomato with sour cream or yogurt.
- Sprinkle each with basil.
- Sprinkle bread crumbs and Parmesan cheese on tomatoes.
- Arrange tomato halves in a foil pie pan.
- Arrange preheated coals around a drip pan in a covered grill.
- Test for medium heat above the pan.
- Place the foil pan containing tomatoes on grill over drip pan.
- Cover and grill for 10 to 15 minutes or until tomatoes are heated through.
- Garnish with fresh basil, if desired.
- Herb-Grilled Roma Tomatoes: Prepare as directed above except substitute 4 Roma tomatoes for the small tomatoes.
- Do not core roma tomatoes.

SOUTHWEST BEEF TENDERLOIN WITH CREAMY HORSERADISH SAUCE AND GRILLED TOMATOES

- Heat the grill to medium-high. Put the ancho chiles, cumin, coriander, cinnamon stick, and paprika into a small dry skillet, put the pan over the heat, and toast the spices just until they begin to smell, about 1 minute. Empty into a spice mill and grind to a powder; set aside.
- In a small bowl combine the sour cream, lemon juice, horseradish, and
- 1 tablespoon olive oil. Cover and refrigerate until ready to use.
- Drizzle some olive oil over the tenderloin and season it with salt and pepper. Sprinkle on about 1/2 of the spice mix and rub it into the meat. Grill for about 20 to 25 minutes for medium rare. Remove from the grill and allow the meat to rest for 5 to 10 minutes before slicing. Drizzle some olive oil over the tomatoes and season them with salt and pepper. Grill them for about 10 minutes.
- Slice the tenderloin and place it onto a platter. Drizzle the horseradish sauce over the meat and scatter the tomatoes around. Garnish with arugula leaves and serve.

- Preheat grill or broiler - ready for use at med high heat.
- Blend sour cream, shallot, dill, salt, pepper, wine and horseradish and set aside.
- Split tomatoes in half. In the top of each half, scoop about 3 T of the seeds and pulp out of center. Sprinkle each half with salt.
- Place tomatoes on grill or broiler cut-side down. Wait 5 minutes and turn tomatoes over. Place 1 T butter in cavity of tomato. Wait till butter is melted, about 5 minutes. Remove from grill/broiler.
- Add 2 T Smoked salmon to cavity, put 2-3 tablespoons sour cream sauce over salmon and tomato. Sprinkle with minced parsley and serve.

This is a wonderful vegetarian main dish to serve in the center of your table, with tortillas or rice and a zesty green salad. Be sure to ventilate your kitchen well when you're grilling the mushrooms and onions indoors, but, if weather permits, you can always grill them outdoors. - Heat the oven to 450 degrees Fahrenheit/240 degrees Celsius. Add the bell pepper, tomato and yellow onion to a medium parchment-lined rimmed baking tray, and toss with 1 1/2 teaspoons oil and a small pinch of salt.
- Arrange the peppers and tomatoes skin side up on the parchment, and roast for 22 minutes, or until softened in places. Set aside, and when cool enough to handle, peel and discard the pepper and tomato skins.
- As the vegetables cook, add the dried chiles to a medium heatproof bowl and pour over enough boiling water to fully submerge. Weigh down the chiles with a small saucer and let sit for 20 minutes to rehydrate.
- In a small bowl, whisk together the sour cream, a tablespoon of lime juice and a tiny pinch of salt until smooth. Set aside.
- Place a well-greased grill pan over high heat and ventilate your kitchen well. In a large bowl, gently toss together the mushrooms, red onion, 3 1/2 tablespoons oil and 3/4 teaspoon salt.
- Once your grill is hot enough, add half the mushrooms, cap side down, and half the onions. Grill the mushrooms for 5 minutes, then flip them over and grill for another 3 minutes, or until nicely charred and cooked through. Grill the onions for 4 to 5 minutes, flipping as necessary, until charred and softened (don't worry if the layers separate further). Transfer to a large bowl. Repeat with the remaining mushrooms and onions. When ready, toss the grilled vegetables with half of the cumin seeds, the remaining tablespoon of lime juice and 1 tablespoon of oil.
- Once the chiles have soaked, remove them, discarding the water. Roughly chop the chiles, then add to a blender along with the roasted vegetables, garlic, maple syrup, 1/3 cup plus 1 tablespoon/100 milliliters of fresh water, the remaining 2 tablespoons of oil and 3/4 teaspoon salt. Blitz until completely smooth and silky. If the mushrooms aren't finished cooking, transfer the sauce to a small saucepan over medium heat, and gently warm through, stirring occasionally.
- Pour the warm chile sauce onto a large platter with a lip, swirling to cover the surface of the plate. Use a spoon to drizzle over the sour cream, then top with the mushrooms, onions and any remaining juices. Sprinkle over the remaining cumin seeds, half the corn nuts and all the oregano, serving the remaining corn nuts alongside.
