Fresh tomato recipe topped with garlic, Italian seasoning and Fleischmann's spread prepared under the broiler for an easy side

4 large tomatoes, halved crosswise
3 cloves garlic, thinly sliced
2 teaspoons dried Italian seasoning
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
3 tablespoons Fleischmann's® Original Spread-tub

Steps:

  • Preheat broiler. Place tomato halves, cut-side-up, in shallow baking pan. Sprinkle tomatoes with garlic, Italian seasoning, salt and pepper. Top tomatoes evenly with Fleischmann's.
  • Broil tomatoes, 4 inches from heat, 10 minutes or until tomatoes are warm, being careful not to brown garlic. Spoon pan juices over tomatoes before serving.

6 medium ripe tomatoes (Campari or other flavourful tomato variety)
1 tbsp olive oil (extra virgin)
2 cloves garlic (sliced)
1/4 cup mixed Italian herbs (rosemary, oregano, thyme)
salt and pepper
1 tbsp balsamic vinegar (good quality aged )

Steps:

  • Slice tomatoes in half through their equator and arrange in a baking dish.
  • Peel garlic cloves and slice them thinly. Mince the herbs and divide in two.
  • In a small skillet over medium heat, heat oil gently, then add sliced garlic. After one minute, add 2 tablespoons of the herbs and cook just until the garlic begins to brown.
  • Remove from heat and drizzle the garlic-herb infused oil over the tomatoes.
  • Broil for 7-10 minutes or until tomatoes are tender. Remove from the oven and sprinkle with salt and pepper and the remaining fresh herbs.
  • Drizzle with balsamic vinegar and serve immediately.

3 large tomatoes
1 tablespoon olive oil
1 garlic clove, minced
1/4 teaspoon coarsely ground pepper
1 tablespoon minced fresh basil or 1 teaspoon dried basil
3/4 cup soft bread crumbs
2 tablespoons grated Parmesan cheese

Steps:

  • Slice tomatoes in half. Using a small spoon, remove seeds. Place tomato halves on a broiler pan coated with cooking spray. Combine the oil, garlic and pepper. Brush over tomatoes. Sprinkle with basil., Broil about 6 in. from heat for 3-4 minutes or until heated through. In a small bowl, combine bread crumbs and Parmesan cheese. Sprinkle over tomatoes. Broil 1-2 minutes longer or until crumbs are lightly browned. Serve immediately.

4 medium-size ripe tomatoes, about 1 pound
Salt and freshly ground pepper to taste
1/4 cup fine fresh bread crumbs
2 finely chopped shallots
1 teaspoon finely chopped garlic
2 tablespoons finely chopped parsley
1 teaspoon fresh thyme leaves or 1/4 teaspoon dried
1 tablespoon olive oil

Steps:

  • Preheat the broiler.
  • Cut away the core of each tomato, then halve the tomatoes crosswise. Sprinkle with salt and pepper.
  • Combine the bread crumbs, shallots, garlic, parsley, thyme and olive oil. Blend well.
  • Top each tomato half with equal portions of the bread-crumb mixture, pressing down with your fingers to distribute the topping evenly. Arrange the tomato halves on a baking dish, and place about 8 inches from the source of heat. Close the door and cook for about 5 minutes or until lightly browned. Keep warm.

Steps:

  • Preheat broiler to medium high.
  • Cut plum tomatoes in 1/2 lengthwise. Squeeze or scoop out most of the pulp and seeds. Place the tomatoes flesh side up in a heat safe dish and season them with salt and pepper. I had these once when I was in the hospital and been making my version of them ever since. Best part is they are not fattening.

4 beefsteak tomatoes (or any large)
2 tablespoons extra virgin olive oil
1/2 cup seasoned bread crumbs or 1/2 cup plain breadcrumbs
1/2 cup mixed Italian herbs (such as basil, oregano, thyme, parsley)
8 1/4 teaspoons unsalted butter
salt & freshly ground black pepper

Steps:

  • Turn on your broiler. A toaster oven with broiling ability is great or a George Foreman Grill.
  • Remove the cores of the tomatoes then cut them in half (horizontally).
  • Place cut side up: then rub Olive oil over cut side (use fingertip).
  • Sprinkle bread crumbs on next.
  • Sprinkle Herb seasonings on and salt/pepper.
  • Then place 1/4 teaspoon of unsalted butter on each half.
  • Broil until tomato is hot completely.
  • ^May add cheese or mushrooms when nearly done, but don't get them to close to burners in oven.

This is a Rachel Ray recipe I saw her make on the Food Network. I since, have added other ingrediants to create a lovely and simple side dish of herbed broiled tomatoes. It is a wonderful side dish with any grilled meats.

4 plum tomatoes, halved lengthwise
1 cup breadcrumbs
2 garlic cloves, minced
1 tablespoon fresh basil, minced
1 tablespoon fresh oregano, minced
1 tablespoon fresh parsley, minced
1/3 cup pecorino romano cheese, grated fine
4 tablespoons olive oil
1/4 teaspoon pepper
1/4 teaspoon salt

Steps:

  • With spoon, scoop out seeds from tomatoes. Then clean out all but 1 inch of pulp, from around tomato, to form shell.
  • Set tomatoes open side up, in single layer, in a baking dish.
  • In bowl combine, breadcrumbs, garlic, basil, oregano, parsley, pecorino, salt and pepper. Mix well.
  • Add oil to breadcrumbs and stir well until mixture resembles meal.
  • Stuff tomatoes with breadcrumb mixture.
  • Broil tomatoes for 4-5 minutes, until golden brown on top.
  • Serve.

  • Combine bread crumbs, mozzarella cheese, and Parmesan cheese in a small bowl and sprinkle the mixture over the tomatoes.
  • Place under the broiler until topping starts to brown, 3 to 4 minutes, checking frequently to avoid burning.
  • Transfer tomatoes to a plate, drizzle with balsamic vinegar, and serve.
