BROILED FETA WITH GARLICKY CHERRY TOMATOES & CAPERS
Broiled feta with burst cherry tomatoes and capers makes a surprisingly addictive and flavorful spread. Perfect for summer!

Steps:
- Preheat the broiler and set the oven rack in the top position. Place the feta in a small (1-quart) baking dish and set aside.
- Heat the oil in medium saucepan over medium heat. Add the garlic and cook, stirring constantly, until lightly golden, 1 to 2 minutes. Add the tomatoes, salt, pepper and sugar; cook, stirring frequently, until the tomatoes are softened and starting to burst, 2 to 3 minutes. Remove from the heat and stir in the capers.
- Scatter the tomatoes around the feta and broil until the feta is softened and browned on top, 3 to 4 minutes (but keep an eye on it as broilers vary greatly.) Serve warm with bread.

- Cut tomatoes in half lengthwise, and place, cut sides up, on a baking sheet.
- Sprinkle evenly with salt and pepper to taste, Italian seasoning, and feta cheese. Drizzle evenly with 1/4 cup Italian dressing.
- Broil 3 inches from heat 2 to 3 minutes or just until cheese starts to brown.

GRILLED TOMATO AND FETA SANDWICH
With perfectly toasted, crisp bread, a slightly warm feta filling, and slices of juicy ripe tomato, this might be the best tomato sandwich I've ever had! The combo of briny feta and sweet tomatoes is amazing. Serve with chips and a cold glass of Pinot Grigio.

Steps:
- Stir mayonnaise, feta cheese, and lemon zest together in a small bowl until well blended. Spread feta mixture evenly over bread slices.
- Top 2 slices of the bread evenly with tomato slices and sprinkle with salt and pepper. Top tomatoes with remaining bread slices, feta-side down. Brush both sides of the sandwich evenly with olive oil.
- Heat a large skillet over medium heat. Cook sandwiches in the hot skillet until golden brown on the first side, about 3 minutes. Flip and cook on the other side until golden and toasted, about 3 minutes more. Serve immediately.

I had these once when I was in the hospital and been making my version of them ever since. Best part is they are not fattening.

- Turn on your broiler. A toaster oven with broiling ability is great or a George Foreman Grill.
- Remove the cores of the tomatoes then cut them in half (horizontally).
- Place cut side up: then rub Olive oil over cut side (use fingertip).
- Sprinkle bread crumbs on next.
- Sprinkle Herb seasonings on and salt/pepper.
- Then place 1/4 teaspoon of unsalted butter on each half.
- Broil until tomato is hot completely.
- ^May add cheese or mushrooms when nearly done, but don't get them to close to burners in oven.

- Place an oven rack 6 inches from the top of the oven, preheat the broiler, and and arrange tomato slices on a foil-lined baking sheet.
- Combine olive oil, basil, oregano, garlic, salt, and pepper in a bowl and brush onto the tops of the tomatoes.
- Combine bread crumbs, mozzarella cheese, and Parmesan cheese in a small bowl and sprinkle the mixture over the tomatoes.
- Place under the broiler until topping starts to brown, 3 to 4 minutes, checking frequently to avoid burning.
- Transfer tomatoes to a plate, drizzle with balsamic vinegar, and serve.

BROILED TOMATOES WITH FETA
I wanted to roast asparagus with feta for supper, but the stuff at the market looked horrible. The tomatoes, however, were fresh and garden grown, so I grabbed a few, took them home and threw this together. I served it with pan seared sirloin steak and a simple baked potato. I made a tomato for each of us and worried that it would be too much. I didn't need to. This put the steak to shame and we ate every bite. I could eat this all by itself for a quick, delicious lunch.

- Heat oil in a small skillet. Toss in garlic and saute for about 2 minutes on medium heat, then add lemon peel, oregano and basil and saute for another minute. Remove from heat and stir in lemon juice and salt. Set aside to cool.
- While the oil is cooling wash and remove the stem from the tomatoes, then slice into 1/4 inch slices.
- With a pastry or basting brush, coat a baking sheet lightly with some of the oil. Lay out the tomatoes on the baking sheet, leaving a half inch between them. Brush the tops of the tomatoes with more of the olive oil mixture. Top each with a sprinkle of feta. Discard the excess oil, or store in air tight container and use to dress garlic bread later.
- Broil on high for about 5 minutes until heated through. Don't put it too close to the broiler. I put mine about 8" away. The feta may start to brown,(it tastes great that way), but don't let it burn.
- Remove from oven and serve immediately.
