Broiled Salmon with Fennel Salad image

Provided by Giada De Laurentiis

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 10

Four 6-ounce pieces center cut skinless wild salmon
1 teaspoon kosher salt
1 tablespoon olive oil
1 large fennel bulb, thinly sliced on a mandoline
1 medium watermelon radish, cut into matchsticks
1 tablespoon olive oil
2 teaspoons apple cider vinegar
1 teaspoon Dijon mustard
1/2 teaspoon kosher salt
3 tablespoons roughly chopped or torn fresh basil leaves

Steps:

  • For the salmon: Preheat the broiler to high and set an oven rack on the top third of the oven if your broiler is on top.
  • Place the salmon on a rimmed baking sheet. Sprinkle the pieces evenly with the salt and drizzle both sides with the olive oil. Broil until the fish flakes easily but is still moist inside, 4 to 5 minutes depending on the thickness of the salmon. Remove to cool slightly, about 3 minutes.
  • For the salad: Meanwhile, soak the fennel rings and radish matchsticks in a bowl of ice water for 15 minutes. Drain well and spin or pat dry. Whisk together the olive oil, apple cider vinegar, Dijon and salt in a medium bowl. Add the fennel, radish and basil to the dressing and toss well to coat.
  • Place a small mound of salad in the center of each of 4 plates. Top with a piece of salmon and a pinch more salad.

Provided by Alton Brown

Categories     main-dish

Time 1h10m

Yield 6 to 8 main course servings

Number Of Ingredients 11

1/3 cup canola oil, plus 2 teaspoons for sheet pan
1 side of salmon (approximately 3 pounds), pin bones removed
1 1/2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
1 tablespoon whole coriander, toasted
1 tablespoon whole fennel seed, toasted
1 teaspoon whole cumin seed, toasted
1 whole star anise pod
2 teaspoons onion powder
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper

Steps:

  • Rub sheet pan with the 2 teaspoons of oil and place side of salmon in pan. Salt and pepper salmon. Set aside. Add coriander, fennel seed, cumin seed, star anise, onion powder, garlic powder and cayenne pepper to a blender. Turn blender on high and process until whole spices become powder. With blender running, pour in 1/3 cup canola oil and blend until well combined. Stop blender to brush down sides of container, if necessary. Brush salmon with spice mixture. Allow salmon to sit at room temperature for 30 minutes. Preheat oven to the high broiler setting. Place salmon in the oven 6-inches from broiler. Cook until salmon reaches an internal temperature of 131 degrees F. This will take approximately 15 minutes, but will vary with different ovens. Remove from oven and let rest for 10 minutes, and then serve immediately. Note that the internal temperature of the fish will a rise a little as carry-over cooking occurs.;

Time 21m

Yield 4 to 6 servings

Number Of Ingredients 3

4 (8-ounce) salmon fillets
Olive oil
Salt and pepper

Steps:

  • Coat each salmon fillet with the olive oil (just enough to make it shine, not drip) and salt and pepper.
  • Preheat grill to medium-high heat and place the salmon skin side up, (even if the skin has been removed) this is VERY important. Then close the lid and allow to cook about 5 to 7 minutes. Check the grill to make sure there are no flame flare-ups and the salmon is cooking evenly, and let cook another 3 to 4 minutes. You are going to let the fish cook about 90 percent on this side. After about 8 to 9 minutes the salmon should turn over easily and allow to finish another 3 to 4 minutes. Remove from grill and serve with your favorite side dishes. The entire cooking time should be about 10 to 12 minutes.

CHARGRILLED SALMON RELISH

Provided by Food Network

Categories     condiment

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 11

One 2-pound Pacific or wild caught salmon fillet
2 teaspoons olive oil, plus more for vegetables
5 pinches sea salt, plus 1/2 teaspoon, divided
5 pinches coarsely ground black pepper, plus 1/2 teaspoon, divided
5 pinches seafood seasoning (recommended: Old Bay Seasoning)
2 cups grape tomatoes, halved lengthwise
2 cups quartered cremini mushrooms
1 cup half-moon shaped sliced red onion
2 cans whole kernel corn
1 cup halved dried apricots
1 fistful fresh tarragon leaves, coarsely chopped

Steps:

  • Preheat an outdoor grill or an indoor grill pan.
  • Line the bottom of a roasting pan with aluminum foil. Put the salmon in the roasting pan and drizzle both sides with olive oil, about 1 teaspoon on each side. On both sides of the salmon, sprinkle about 5 pinches each of salt, black pepper and seafood seasoning.
  • Put the salmon directly on the grill and cook for 5 to 7 minutes on each side. You'll know it's done when the natural fat of the salmon starts to seep out. Put the salmon back in the roasting pan and set aside.
  • In a mixing bowl, combine all of the vegetables and apricots and drizzle with olive oil. Add 1/2 teaspoon each sea salt and black pepper and mix until incorporated.
  • Line a second roasting pan or baking sheet with aluminum foil. Pour the vegetable mixture in 1 layer into the roasting pan. Put the pan on the grill for 10 to 15 minutes, turning occasionally.
  • Put the vegetable mixture on a serving platter and sprinkle with the chopped tarragon. Top with the salmon and serve.
