2 pounds medium shrimp, peeled and deveined
½ cup butter, melted
2 cloves garlic, minced
¼ cup dry white wine
3 green onions, chopped

Steps:

  • Preheat broiler to 500 degrees (260 degrees C).
  • Stir shrimp together with butter, garlic and wine. Place on a baking sheet and broil for 10 minutes. Sprinkle on scallions and broil for another 2 to 3 minutes, until shrimp are firm. Serve hot.

Steps:

  • Preheat broiler.
  • Put shrimp in lg. bowl
  • Add all other ingredients.
  • Toss well to coat shrimp.
  • Place on shallow baking sheet.
  • Broil 7 in from heat for about 6-7 min, turning once.
  • Serve with sauce from pan.
  • Add a little butter if you like.

Shrimp, the most versatile seafood, is now the most popular in America, and there is no wrong way to eat it. Wild shrimp from the Pacific or the Gulf of Mexico is a treat if you can find it. Fresh local shrimp from Maine or the Carolinas is an even rarer gem. (These are all preferable from a sustainability perspective.) A vast majority, of course, is farmed and frozen. If you buy it ''individually quick frozen'' in resealable bags, you can take out only as many as you want and thaw them by leaving the shrimp in the fridge for 24 hours or running them under cool water for an hour or less. Here, it is made Cajun with cayenne, paprika and garlic and quickly broiled.

½ pound raw shrimp, peeled and deveined
¼ cup diced water chestnuts
¼ cup chopped cilantro leaves
½ cup finely sliced green onions, plus more for garnish if desired
3 garlic cloves, crushed
1 tablespoon finely grated ginger root
1 anchovy filet
1 teaspoon toasted sesame oil
1 teaspoon Asian fish sauce
1 tablespoon soy sauce, or more to taste
1 egg white
½ teaspoon white sugar
½ teaspoon paprika
1 pinch cayenne pepper
1 pinch salt
4 thick slices white bread
1 teaspoon Sesame seeds
1 cup vegetable oil for frying, or as needed

Steps:

  • Place shrimp, water chestnuts, cilantro leaves, green onions, garlic, grated ginger, anchovy filet, sesame oil, fish sauce, soy sauce, egg white, sugar, paprika, cayenne pepper, and salt into the bowl of a food processor. Pulse several times; scrape down sides of bowl. Continue to process until mixture is well blended and reaches a paste consistency, 1 or 2 minutes. Transfer mixture to a bowl; cover with plastic wrap and refrigerate to blend the flavors, about 1 hour.
  • Very lightly toast bread slices. Trim crusts from bread. Spread shrimp paste onto bread in an equal thickness as the bread. Cut slices in half and then diagonally into diamond shapes. Sprinkle with sesame seeds.
  • Place a heavy skillet over medium-high heat; pour in about 1/2 inch of vegetable oil. When oil is hot, place bread slices, paste side down, into the oil. Fry until crispy, 2 to 3 minute per side. Transfer to a paper towel-lined plate. Serve hot or warm garnished with additional sliced green onions.

¾ cup sun dried tomatoes (packed in oil)
Extra virgin olive oil
5 to 6 leaves fresh basil (plus small leaves for garnish)
20 medium cooked shrimp (thawed and tails removed*)
¼ teaspoon fine sea salt
Pinch of ground black pepper
4 thick-cut slices of Italian, French, or Sourdough bread
Oil to brush the grill

Steps:

  • Add the sundried tomatoes 2 tablespoons of olive oil, and basil leaves to a small food processor. Pulse until a spread forms. Add more olive oil if necessary. It should be thick, but the tomatoes should be finely chopped and at a spreadable consistency. Set aside.
  • Add the shrimp to a bowl. Pour in 2 teaspoons of olive oil, the salt, and the black pepper. Stir. Thread the shrimp on pre-soaked wooden skewers.
  • Preheat the grill to 400 degrees F and brush the grates with oil. Place the shrimp skewers on one side of the grill and the slices of bread on the other. Cook each for 90 seconds to 2 minutes on each side, until the shrimp show grill marks and the edges of the bread are crisp and darkened.
  • To serve, spread an even amount of the sundried tomato spread over each slice of bread. Top with 5 shrimp. Garnish with small basil leaves and serve warm.

Somewhere, I got the idea that Shrimp Scampi is supposed to be broiled, yet most recipes I found sauteed. So I made this last night and my husband loved it.

1 lb jumbo shrimp, thawed (if frozen)
2 garlic cloves, sliced thin
4 tablespoons butter
salt
cayenne pepper
1/8 cup Italian style breadcrumbs
1/8 cup panko breadcrumbs
1/8 cup parmesan cheese, grated
1/8 cup fresh parsley, chopped

Steps:

  • Preheat broiler. Peel, devein, and butterfly shrimps. Arrange butterflied shrimp in a shallow baking dish in a single layer. Season to taste with salt and cayenne pepper.
  • In a small skillet, melt the butter and saute garlic for 5 minutes or so. Do not allow to brown. Remove garlic. Pour about half evenly over shrimp.
  • Sprinkle arranged shrimp with both types of bread crumbs. Sprinkle with Parmesan cheese. Pour remainder of butter evenly over shrimp.
  • Broil about 3 to 5 minutes until shrimp or bread crumbs begin to brown and shrimp are opaque. Turn shrimps over and broil another 3 to 5 minutes until done.
  • Garnish with fresh chopped parsley.

1/2 cup breadcrumbs (optional; homemade* or plain purchased breadcrumbs)
Lemon wedges
Chopped parsley or cilantro, for garnish

Steps:

  • Preheat the broiler.
  • If frozen, thaw the shrimp.
  • Pat the shrimp dry.
  • Mince the garlic. In a medium bowl, toss with the shrimp with the olive oil, garlic, oregano, onion powder, and kosher salt*. Toss until fully combined. If using breadcrumbs, add them and toss until all shrimp are coated.

4 ounces rock shrimp (or peeled medium shrimp, deveined)
1 tablespoon minced shallot
2 teaspoons finely chopped peeled fresh ginger
1 tablespoon mayonnaise
1/2 teaspoon Sriracha (Asian chili sauce) or other chili sauce
1 teaspoon finely grated lime zest, plus 2 teaspoons fresh lime juice
1/2 medium baguette, sliced into 20 thin slices (less than 1/4 inch thick)
3 tablespoons unsalted butter, melted

Steps:

  • Pulse shrimp, shallot, and ginger in a food processor until a coarse paste forms. Transfer to a bowl. Stir in mayonnaise, Sriracha, and lime zest and juice.
  • Heat broiler. Working in 2 batches, toast bread slices on a rimmed baking sheet 8 inches from heat source until golden brown, about 30 seconds. Remove from oven. Flip bread, generously brush tops with butter, and spread with a thin layer of shrimp paste (about 1 teaspoon each).
