Wicked Good! The crunchy panko crumbs bring new life to this traditional New England favorite. I like baking the fish in the individual dishes, it keeps the fish moist and keeps the juices from drying up. After you make your way through the crunchy topping and flaky fish, you'll be surprised to find this delicious oniony, lemon goodness awaiting on the bottom which is absolutely incredible. I hope you try this recipe, it really is Wicked Good!

1 1/2 lbs scrod fillets (cod or haddock)
2 teaspoons butter
2 teaspoons olive oil
1 large juicy lemon
1 medium onion, halved and sliced thin
1 cup panko breadcrumbs
1/4 cup white wine
1 pinch red pepper flakes
1 teaspoon parsley
salt and pepper
olive oil flavored cooking spray

Steps:

  • Preheat oven to 400 degrees F.
  • In a skillet, saute the onion in 1 teaspoon of oil and 1 teaspoon of butter until soft but not browned.
  • In a medium sized bowl, combine the panko crumbs with the parsley and 1 teaspoon of melted butter, 1 teaspoon of olive oil, and the juice of half the lemon.
  • Once the onions are soft, add a pinch of red pepper flakes, salt and pepper.
  • Add to the onions, the juice of 1/2 the lemon (or more!) and the white wine and continue to cook for 1 minute.
  • Spread the onion and lemon mixture into individual baking dishes or one baking dish large enough to snuggly hold all the fish.
  • Place the fish on top of the onions and season the fish with salt and pepper and a little spray of olive oil.
  • Divide the crumb topping evenly over the fish and sprinkle with parsley and give a light spray of olive oil.
  • Bake for about 20 minutes until fish is cooked through and the crumbs are nicely browned.
  • Cover with tinfoil half way through baking if the top is browning to fast.

1/2 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon curry powder
1/8 teaspoon paprika

2 cod fillets (6 ounces each)
2 teaspoons butter

Steps:

  • Preheat broiler. In a shallow bowl, mix first 7 ingredients; add cod, turning to coat. Let stand 10-15 minutes., Place fillets on a greased rack of a broiler pan; discard remaining marinade. Broil 3-4 in. from heat until fish just begins to flake easily with a fork, 10-12 minutes. Top with butter.

1 1/2 pound fresh or frozen scrod fillets, about 1-inch thick
2 tablespoons butter or margarine, melted
2 tablespoons lemon juice
snipped parsley
lemon wedges
buttered bread crumbs

Steps:

  • Thaw fish fillets, if frozen. Place in a single layer on greased rack of an unheated broiler pan. Tuck under any thin edges to make even thickness. Combine butter and lemon juice and brush over fillets. Sprinkle with salt and pepper. Broil fish 4 inches from the heat for 10 to 12 minutes or just until fish flakes easily when tested with a fork, brushing occasionally with lemon-butter mixture. Garnish with parsley and lemon wedges. If desired, top with buttered bread crumbs near the end to brown and crisp.

1/2 teaspoon salt
1/4 teaspoon pepper
4 tablespoons unsalted butter
4 cloves garlic ((minced))
1 tablespoon fresh squeezed lemon juice
1 teaspoon lemon zest
2 tablespoons fresh parsley ((minced))

Steps:

  • Preheat the broiler on the oven. Pat the cod with a paper towel, then season both sides with the salt and pepper.
  • Melt the butter over medium-high heat in a cast iron or oven-proof skillet that is no bigger than 12 inches. Add the garlic and cook, stirring constantly, for 30 seconds, then stir in the lemon juice and zest.
  • Place the cod fillets in the pan and cook for 1 minute, then carefully turn them over.
  • Place the skillet in the oven about 4-6 inches from the broiler. Broil for 6-9 minutes, depending on the thickness of your fillets, or until the internal temperature of the cod reaches 130-140°F on a meat thermometer inserted into the center of the thickest portion of a fillet.
  • Garnish with the parsley and extra lemon slices, if desired, and serve.

1/2 cup fresh parsley
Juice of 2 limes (1/2 cup)
Salt and pepper to taste
6 scrod fillets
1 cup cherry tomatoes

Steps:

  • Preheat the broiler. Place an oven rack six inches below the heat. Line a baking sheet with aluminum foil. Combine the oil, garlic, basil, parsley, lime juice, salt and pepper in a food processor and purée.
  • Rinse fish; pat dry. Pour mixture on both sides of fish. Place on baking sheet and broil for 5 minutes. Place tomatoes around fish and broil for 5 to 8 more minutes. Remove and serve.

4 scrod fillets (6-8 ounces each)
salt and pepper, to taste
2 tablespoons lemon juice
1 1/2 cups white wine
1/2 cup butter, melted and divided
1 cup dried breadcrumbs

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Butter a baking pan large enough to hold the scrod in a single layer. Place the scrod in the prepared baking pan, and add salt, pepper, lemon juice, and wine. Drizzle a 1/4 cup of the melted butter over the fish.
  • Bake at 350 degrees for approximately 20 minutes, or until fish flakes but is still moist.
  • Remove the pan from the oven and preheat the broiler. Scatter the bread crumbs over the fish, and drizzle with the remaining 1/4 cup of melted butter.
  • Brown under the broiler for 2 to 5 minutes only, just until lightly browned, and serve.

2 pounds skinless scrod fillets (may substitute other firm-fleshed white fish such as cod or black sea bass)
Kosher salt
Freshly ground black pepper
4 tablespoons (1/2 stick) unsalted butter, cut into tablespoon-size pieces
Juice and grated zest of 1 medium lemon (about 1/4 cup of juice and 1 heaping teaspoon of zest)
Water
1 tablespoon cornstarch
2 tablespoons finely chopped tender herbs, such as marjoram, flat-leaf parsley, chervil, chives or tarragon
3 hard-cooked eggs, chopped into small bits, with a few tablespoons reserved for garnish

Steps:

  • 1 Position the top oven rack 4 to 6 inches from the broiler element; preheat the broiler
  • 2 Lightly sprinkle the fish with salt and pepper on both sides
  • 3 Arrange in a shallow metal baking pan; dot with 1 tablespoon of the butter
  • 4 Broil for 5 to 10 minutes (depending on the thickness of the fillets) or until the fish flakes and is lightly browned on top
  • 5 Remove from the oven; pour off any cooking juices into a small saucepan
  • 6 Cover the fish loosely to keep it warm
  • 7 Bring the juices to a boil over medium-high heat, then add the lemon juice, zest and enough water to total 1/2 cup of liquid
  • 8 Meanwhile, combine the cornstarch with a little cold water in a measuring cup to form a thin slurry
  • 9 Whisk it into the saucepan mixture and cook, stirring constantly, until the liquid comes to a boil, and becomes thickened and shiny
  • 10 Remove from the heat
  • 11 Whisk in the remaining 3 tablespoons of butter, one at a time, and the herbs
  • 12 Season with salt and pepper to taste, then add the hard-cooked eggs, stirring to incorporate
  • 13 Divide the fish among individual plates; pour the sauce over the fish and garnish with bits of hard-cooked egg
  • 14 Serve immediately
