Time 35m

Yield 4

Number Of Ingredients 7

¼ cup pine nuts
½ cup coarsely chopped fresh basil
¼ cup grated Parmesan cheese
1 clove garlic, minced
3 tablespoons extra-virgin olive oil
salt and freshly ground black pepper to taste
1 pound salmon fillet

1/4 cup fresh ground black pepper

  • Remove salmon from marinade and pat topside only into cracked pepper to coat.

PEPPER-CRUSTED MAPLE-GLAZED SALMON

Pepper-Crusted Maple-Glazed Salmon image

Provided by Bob Blumer - Host of Surreal Gourmet and Glutton for Punishment

Categories     main-dish

Time 41m

Yield 4 servings

Number Of Ingredients 5

3/4 cup maple syrup
1/4 cup soy sauce
4 (6-ounce) salmon fillets, skin removed
1/4 cup coarsely ground black pepper (Grind it yourself, or purchase "cracked" pepper at your grocery store)
1/2 teaspoon peanut (or other vegetable) oil, or a spritz of oil spray

Steps:

  • In a re-sealable bag or a small deep bowl, mix maple syrup and soy sauce. Arrange fillets so that marinade completely covers fish. Marinate in the refrigerator for as long possible (a minimum of 4 hours, but ideally 24 hours to do it justice).
  • Preheat oven to 500 degrees F.
  • Rub oil on a 10 by 10-inch sheet of aluminum foil.
  • Place pepper on a small plate. Remove salmon from marinade and pat topside only into cracked pepper to coat. Place fillets, pepper side up, on foil.
  • Bake on the top rack of the oven for approximately 7 minutes. (Syrup may cause fish to smoke when cooking, do not be alarmed.) Salmon can also be grilled directly over hot coals for about 3 minutes per side. But do not even think about using a microwave. Avoid overcooking the fillets. Salmon is best when the color has turned to a pale pink, but the fish is still moist throughout. Serve immediately on warmed plates.

CRACKED BLACK PEPPER SALMON

Cracked Black Pepper Salmon image

This is such a simple way to dress up salmon. The olive oil helps the pepper to crisp up in the oven, adding texture to the fish. Despite the amount of pepper on top, the spice is not overwhelming, just nice. You must use freshly ground black pepper for this, which is fairly coarse, not the powdered black pepper.

Provided by Sackville

Categories     Very Low Carbs

Time 25m

Yield 2 serving(s)

Number Of Ingredients 3

1/4 cup fresh ground black pepper
2 salmon fillets or 2 salmon steaks
2 teaspoons olive oil

Steps:

  • Spread 1/2 the black pepper on a plate.
  • Smear 1 tsp olive oil over one side of the salmon fillets.
  • Lay the fillet, oiled side down in the pepper.
  • Lift and put on a baking sheet, peppered side up.
  • Repeat the process with the second fillet.
  • Bake at 350 F or 180 C for around 20 minutes, or until the fish flakes easily.

  • Learn about how black pepper can be used. Whole black peppercorns can be used to flavor long-simmered sauces or soups. When used in this fashion, a subtle, almost floral, pepper flavor is imparted into the food.
  • Toast the peppercorns before crushing. While many recipes do not require toasting the peppercorns before using them, doing so can help to improve the flavor of your dish.
  • Crush the peppercorns using one of these techniques. The classic way to crush peppercorns is by using a mortal and pestle. Crushing by hand allows you to easily monitor the extent of the crushing.
  • Coat the meat with the crushed peppercorns. Most recipes will have you oil and salt the meat, then press the pepper into the surface. Follow your recipe for best results.

  • On a broiler pan set 6 inches from the heat, broil the red peppers, turning occasionally, until charred all over-5 to 8 minutes. Transfer the peppers to a brown paper bag; seal the bag, set it in a bowl and cool for 10 minutes. The peppers will steam so that their skins peel off easily.
  • Meanwhile, lower the oven temperature to 400°F(200°C). Wrap the garlic cloves in aluminum foil and roast until soft-about 5 minutes; peel and set aside. Raise the heat again and broil.
  • When the peppers are cool enough to handle, peel them over a bowl to catch any juice; discard the stems and seeds. In an electric blender or food processor, purée the peppers and their juice with garlic, vinegar, and olive oil. Set aside.

  • Heat the broiler. Trim and wipe the steaks and rub with salt and pepper. Lightly brush the broiler rack with butter and place salmon steaks on it. Brush the tops of steaks with butter.
  • Broil quickly far enough from the source of heat to cook without scorching. Turn the salmon steaks once, using a turner and spatula to avoid breaking the fish. Brush the second side with butter and broil until cooked. Do not overcook. The cooking time for broiled salmon steaks will depend on the thickness of steaks, but will about 5 minutes on each side.
  • To make the lemon butter for broiled salmon steaks: Cream the butter and blend into the flavorings, taste, and adjust the flavor as preferred. Shape the lemon butter into a block or into pats and chill until ready to use.
