GINGER AND LIME SALMON



Ginger and Lime Salmon image

JW and I decided to make 2010 'the summer of ginger and lime.' We used a ton of fresh ginger and limes from Memorial Day through Labor Day, and by far, this was our favorite creation. Grill it or broil it. Either way, this salmon is fantastic! We serve this with a tossed green salad and steamed jasmine rice.

1 (1 1/2-pound) salmon fillet
1 tablespoon olive oil
1 teaspoon seafood seasoning (such as Old Bay®)
1 teaspoon ground black pepper
1 (1 inch) piece fresh ginger root, peeled and thinly sliced
6 cloves garlic, minced
1 lime, thinly sliced

Steps:

  • Set oven rack about 6 to 8 inches from the heat source and preheat the oven's broiler; if broiler setting has Low setting, set broiler to that. Line a baking sheet with aluminum foil.
  • Place salmon, skin side down, on the prepared baking sheet; rub salmon with olive oil. Season with seafood seasoning and black pepper. Arrange ginger slices atop salmon and sprinkle with garlic. Place lime slices over ginger-garlic layer.
  • Broil salmon until hot and beginning to turn opaque, about 10 minutes; watch carefully. If broiler has a High setting, turn broiler to that setting and continue broiling until salmon is cooked through and flakes easily with a fork, 5 to 10 more minutes.

The fresh lime juice and mustard add a nice tang to this moist and flaky grilled salmon. I came up with this marinade after tasting something similar at a friend's house and it is now one of our favorite ways to do fish. You may also use other firm fish steaks instead of salmon; halibut, tuna and swordfish all work well.

¼ cup fresh lime juice
1 tablespoon olive oil
2 teaspoons Dijon mustard
¼ teaspoon ground ginger
¼ teaspoon garlic powder
¼ teaspoon cayenne pepper
⅛ teaspoon black pepper
4 salmon steaks

Steps:

  • Whisk together the lime juice, olive oil, mustard, ginger, garlic, cayenne pepper, and black pepper in a bowl, and pour into a resealable plastic bag. Add the salmon steaks, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
  • Preheat an outdoor grill for medium heat, and lightly oil grate. Remove the salmon from marinade, and shake off excess. Discard remaining marinade.
  • Grill until the fish flakes easily with a fork, 5 to 10 minutes per side depending on thickness.

1 cup lime juice fresh squeezed
1/2 cup honey
1/4 cup soy sauce
1/2 tsp garlic powder
1/2 tsp ground black pepper
1/2 tsp red hot pepper flakes optional

Steps:

  • 1. Combine lime juice, honey, soy sauce, garlic powder, black pepper, red hot pepper flakes in a small bowl, whisk ingredients until blended. 2. Place fish fillets in a glass flat bottomed casserole and pour marinade over. Refrigerate and marinate at least 30 minutes. 3. Preheat the broiler and broil about 3 inches from the heat until the fish flakes easily when tested with a fork, 6-8 minutes 4. Boil marinade in a saucepan. Cool and pour into a bowl to use as dipping sauce. 5. Serve, garnished with wedges of lime.

4 skinless salmon fillets
1 tablespoon olive oil
Kosher salt and freshly ground black pepper (, to taste)
10 cherry tomatoes (, quartered)
1 large ripe (, but firm, avocado, peeled, cored and diced)
¼ cup chopped red onion
2 tablespoons freshly squeezed lime juice
2 tablespoons chopped cilantro/coriander
Kosher salt and freshly ground black pepper (, to taste)

Steps:

  • In a medium bowl, combine together tomatoes, avocado, red onion, lime juice and cilantro. Season with salt and pepper. Set aside.
  • Rub salmon fillets on both sides with olive oil and then season with salt and pepper.
  • Place salmon on hot grill pan, and cook for 4 minutes, or until golden.
  • Gently turn salmon over and cook the other side for another 2 to 3 minutes or until just cooked through.
  • Remove from the heat and let rest for a while. Serve with avocado lime salsa.

1 large 1-1/2 - 2 pound salmon fillet (or 4 salmon (4-6 ounce) fillets, skin on)
1/2 Tablespoon olive oil
1/2 teaspoon sea salt (or to taste)
1/4 teaspoon freshly cracked black pepper (or to taste)
1/2 teaspoon chili powder
1/4 teaspoon smoked paprika
1/4 teaspoon cumin
2 Tablespoons low sodium soy sauce* (can substitute with gluten free tamari or coconut aminos for paleo-friendly version)
3 tablespoons fresh lime juice
2-3 tablespoons honey
2-3 tablespoons fresh chopped cilantro (or parsley, divided)
lime slices (for garnish)
1 large bunch of asparagus (ends trimmed)
1 cup broccoli florets
1 Tablespoon olive oil
salt and black pepper (to taste)

Steps:

  • Preheat oven to 400 degrees F (see below for grilling**). Line a baking sheet with a large sheet of parchment paper or heavy-duty aluminum foil. Lay salmon on top and drizzle with oil. Season with salt and pepper. Rub chili powder, smoked paprika and cumin on salmon and slide lime slices halfway underneath the salmon, as pictured.
  • In a medium bowl, whisk together soy sauce, lime juice, and honey and drizzle evenly over salmon. Sprinkle with half of the cilantro, fold parchment paper or foil sides up to prevent juices from leaking through (does not have to cover salmon). (Let the salmon marinate for at least 15 minutes if you have time.)
  • For a complete meal with vegetables (omit this step if not making vegetables) - spread sheet pan with asparagus and broccoli florets and drizzle with 1 tablespoon of olive oil, salt, and pepper, to taste. Bake in preheated oven for 10 minutes. Remove from oven and move the vegetables to the side, making room for the salmon. Place the salmon in the middle of the sheet pan and slide lime slices underneath the salmon. Place another sheet of foil loosely over the salmon
  • Bake for 12-16 minutes (depending on how large your fish is), or until the salmon is flaky to your desired doneness but try not overcook. Open the foil and turn oven to broil - cooking for an additional 2-4 minutes, or until caramelized and slightly charred.
  • Cut into sections and discard skin and serve immediately with more chopped parsley, season with more salt (if needed) and a splash of lime

2 teaspoon olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 teaspoon (rounded) kosher salt
1/4 teaspoon ground black pepper
Juice of 1/4 lime

Steps:

  • Heat the grill to medium-high heat (about 450 to 500 degrees F on a gas grill).
  • Place the salmon fillets on a plate or baking sheet (to transport to grill).
  • In a small bowl, stir together the olive oil, cumin, coriander, salt and pepper to form a paste. Rub the paste over the top side of each salmon fillet.
  • Brush the grill grates with oil. Place the salmon skin side up on the grates and close the grill cover. Cook until the salmon easily releases from the grill, about 3 to 4 minutes.
  • Using tongs, carefully turn the salmon and close the grill cover again. Cook until the internal temperature reaches 145 degrees F, about 2 to 4 minutes, depending on the thickness of the fillets.
