GINGER AND LIME SALMON
JW and I decided to make 2010 'the summer of ginger and lime.' We used a ton of fresh ginger and limes from Memorial Day through Labor Day, and by far, this was our favorite creation. Grill it or broil it. Either way, this salmon is fantastic! We serve this with a tossed green salad and steamed jasmine rice.

Steps:
- Set oven rack about 6 to 8 inches from the heat source and preheat the oven's broiler; if broiler setting has Low setting, set broiler to that. Line a baking sheet with aluminum foil.
- Place salmon, skin side down, on the prepared baking sheet; rub salmon with olive oil. Season with seafood seasoning and black pepper. Arrange ginger slices atop salmon and sprinkle with garlic. Place lime slices over ginger-garlic layer.
- Broil salmon until hot and beginning to turn opaque, about 10 minutes; watch carefully. If broiler has a High setting, turn broiler to that setting and continue broiling until salmon is cooked through and flakes easily with a fork, 5 to 10 more minutes.

LIME-MARINATED GRILLED SALMON
The fresh lime juice and mustard add a nice tang to this moist and flaky grilled salmon. I came up with this marinade after tasting something similar at a friend's house and it is now one of our favorite ways to do fish. You may also use other firm fish steaks instead of salmon; halibut, tuna and swordfish all work well.

Steps:
- Whisk together the lime juice, olive oil, mustard, ginger, garlic, cayenne pepper, and black pepper in a bowl, and pour into a resealable plastic bag. Add the salmon steaks, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
- Preheat an outdoor grill for medium heat, and lightly oil grate. Remove the salmon from marinade, and shake off excess. Discard remaining marinade.
- Grill until the fish flakes easily with a fork, 5 to 10 minutes per side depending on thickness.

- 1. Combine lime juice, honey, soy sauce, garlic powder, black pepper, red hot pepper flakes in a small bowl, whisk ingredients until blended. 2. Place fish fillets in a glass flat bottomed casserole and pour marinade over. Refrigerate and marinate at least 30 minutes. 3. Preheat the broiler and broil about 3 inches from the heat until the fish flakes easily when tested with a fork, 6-8 minutes 4. Boil marinade in a saucepan. - Preheat broiler.
- Place salmon, skin sides down, on a coated broiler pan.
- Rub lime zest, salt, peper and garlic over the fish.
- Broil for 7 minutes, the fish flakes easily when tested with a fork.
- Serve with lime wedges, if desired.
CRISPY PAN GRILLED SALMON WITH AVOCADO LIME SALSA
Steps:
- In a medium bowl, combine together tomatoes, avocado, red onion, lime juice and cilantro. Season with salt and pepper. Set aside.
- Rub salmon fillets on both sides with olive oil and then season with salt and pepper.
- Place salmon on hot grill pan, and cook for 4 minutes, or until golden.
- Gently turn salmon over and cook the other side for another 2 to 3 minutes or until just cooked through.

- Preheat oven to 400 degrees F (see below for grilling**). Line a baking sheet with a large sheet of parchment paper or heavy-duty aluminum foil. Lay salmon on top and drizzle with oil. Season with salt and pepper. Rub chili powder, smoked paprika and cumin on salmon and slide lime slices halfway underneath the salmon, as pictured.
- In a medium bowl, whisk together soy sauce, lime juice, and honey and drizzle evenly over salmon. Sprinkle with half of the cilantro, fold parchment paper or foil sides up to prevent juices from leaking through (does not have to cover salmon). (Let the salmon marinate for at least 15 minutes if you have time.)
- For a complete meal with vegetables (omit this step if not making vegetables) - spread sheet pan with asparagus and broccoli florets and drizzle with 1 tablespoon of olive oil, salt, and pepper, to taste. - Heat the grill to medium-high heat (about 450 to 500 degrees F on a gas grill).
- Place the salmon fillets on a plate or baking sheet (to transport to grill).
- In a small bowl, stir together the olive oil, cumin, coriander, salt and pepper to form a paste. Rub the paste over the top side of each salmon fillet.
- Brush the grill grates with oil. Place the salmon skin side up on the grates and close the grill cover. Cook until the salmon easily releases from the grill, about 3 to 4 minutes.
