We like to think of these quick and easy salmon bites as sophisticated fish sticks. Serve them as a party appetizer or as part of a main course with couscous.

2 tablespoons soy sauce
2 tablespoons lemon juice, plus 1 lemon cut into wedges
1 teaspoon toasted sesame oil
4 skinless salmon fillets (4 to 6 ounces each)
1 pound asparagus, trimmed
1 cup couscous
Salt

Steps:

  • Heat broiler with rack 6 inches from heat. Whisk together soy sauce, lemon juice, and sesame oil.
  • On a rimmed baking sheet, arrange asparagus and lemon wedges and brush with sauce. Broil 3 minutes. Add salmon to pan, brush with sauce, and season with salt and pepper. Broil until asparagus is tender and salmon is opaque throughout, about 6 minutes, rotating pan, brushing salmon and asparagus with sauce, and flipping asparagus halfway through.
  • Meanwhile, bring 1 1/4 cups water to boil. Stir in couscous and 1/2 teaspoon salt. Cover and remove from heat. Let stand 5 minutes. Fluff with fork. Serve salmon and asparagus with couscous, drizzled with remaining sauce.

1 scallion, minced
2 tablespoons reduced-sodium soy sauce
1 tablespoon rice vinegar
1 tablespoon honey
1 teaspoon minced fresh ginger
1 pound center-cut salmon fillet, skinned (see Tip) and cut into 4 portions
1 teaspoon toasted sesame seeds, (see Tip)

Steps:

  • Whisk scallion, soy sauce, vinegar, honey and ginger in a medium bowl until the honey is dissolved. Place salmon in a sealable plastic bag, add 3 tablespoons of the sauce and refrigerate; let marinate for 15 minutes. Reserve the remaining sauce.
  • Preheat broiler. Line a small baking pan with foil and coat with cooking spray.
  • Transfer the salmon to the pan, skinned-side down. (Discard the marinade.) Broil the salmon 4 to 6 inches from the heat source until cooked through, 6 to 10 minutes. Drizzle with the reserved sauce and garnish with sesame seeds.

This recipe is my own version of one from the Wild Oats website. Simple, quick and delicious. The time in the oven is approximate. You can also easily grill this instead if you like. Enjoy!

4 teaspoons Dijon mustard
1 tablespoon soy sauce
1 teaspoon rice vinegar
2 medium size salmon fillets

Steps:

  • Preheat oven to broil
  • Mix glaze ingredients together.
  • Clean and de-bone salmon.
  • Coat one side of the salmon with the glaze. Place on a baking sheet.
  • Broil salmon within 8-10 inches of the coils, be careful not to get too close you don't want it cooking too fast.
  • It is done when it opaque and flakes easily in the center.

  • Heat the broiler on high and set an oven rack directly below the heating element (4 inches below). Line a large rimmed broiler-safe baking sheet with foil (for easy cleanup).
  • Generously spray both sides of the salmon fillets with olive oil.

4 (6 ounce) salmon fillets
½ cup butter

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Line a jelly roll pan with aluminum foil, and spray with nonstick spray.
  • Place garlic and olive oil in a small microwave safe bowl and cook on High for 1 1/2 minutes. Melt the butter in a saucepan over low heat, and stir in the garlic mixture. Remove from heat; stir in the Worcestershire sauce, lemon juice, white wine, black pepper, garlic salt, and fines herbs.
  • Place the salmon fillets skin-side down on the prepared pan. Spoon about 1/3 of the butter sauce over the fillets, and sprinkle evenly with the fresh dill.
  • Broil in the preheated oven for 3 minutes. Turn salmon fillets so that the side of the fillet faces up, and baste fillets with about 1/3 of the butter sauce; broil for 3 minutes. Turn the fillets to place the opposite side facing up; spoon on the remaining butter sauce; broil until the fish flakes easily with a fork, about 3 additional minutes.

In a pinch? This easy broiled salmon recipe with garlic, lemon, and simple to make delicious sauce comes together in under 30 minutes

3 pound side of fresh salmon
juice of 1 lemon
3 finely minced cloves of garlic
3 tablespoons olive oil
1 cup red wine
1 cup red wine vinegar
1 cup soy sauce
1 stick unsalted butter
¼ cups sliced green onions
sea salt and fresh cracked pepper to taste

Steps:

  • Preheat the broiler to 500° or medium.
  • Place the salmon skin-side down on a sheet tray lined with parchment paper or foil.
  • Evenly squeeze on the lemon juice all over the salmon. Rub the finely minced garlic all over the top of the salmon.
  • Drizzle the olive oil covering the salmon then season with salt and pepper.
  • Place on a rack that is about 8-10 inches from the top heating element and broil it for 8-10 minutes or until browned and cooked. Set aside and rest for 3-4 minutes before serving.
  • In a medium-size bowl add in the red wine, red wine vinegar, and soy sauce and mix until combined. Save about 1/3 of the mixture for later use.
  • Add the remaining 2/3 to a large saute pan and heat over medium heat until hot, about 1 to 2 minutes. Turn the heat to low and whisk in the butter until melted in.
  • Add in green onions to the sauce and serve the salmon with the sauce.

  • Preheat the broiler. Prepare a broiler rack about 6 inches from the broiler. Line a baking sheet with foil.

Individual salmon fillets are immersed in a flavorful honey-lime marinade and briefly soaked. Then aligned on a baking sheet, sprinkled with spices, and finished under a hot broiler until just cooked and gently charred. It's flawlessly delicious!

4 (7 oz) skinless salmon fillets
3 Tbsp light olive oil
3 Tbsp lime juice, (plus 2 tsp lime zest (from 2 limes))
3 Tbsp honey
1 Tbsp minced garlic ((3 cloves))
1 1/4 tsp salt, (or to taste)
1 tsp freshly ground black pepper
1/2 tsp ground cumin
1/2 tsp ground coriander
1 Tbsp chopped cilantro ((optional))

Steps:

  • In a small mixing bowl whisk well together light olive oil, lime juice, lime zest, honey, garlic, salt, and pepper.
  • Place salmon fillets in a gallon size resealable bag* then pour marinade over salmon (be sure marinade is coating all sides of the salmon pieces), press out excess air from the bag and seal.
  • Let rest at room temperature 20 minutes to 30 minutes (no longer).
  • Align oven rack in center of oven. Preheat broiler to high heat for about 5 minutes.
  • Meanwhie line a rimmed baking sheet with aluminum foil and spray with vegetable oil cooking spray.
  • Remove salmon from marinade and align on baking sheet, leaving some space between each piece. Sprinkle tops evenly with cumin and coriander.
  • Place salmon in oven (check on it frequently throughout broiling). Broil in preheated oven about 4 minutes then if needed tent with foil to prevent excess browning. Continue to broil about 3 - 6 minutes longer until cooked to desired doneness in center.**
  • Remove from oven and sprinkle with cilantro and serve. If you want the salmon a little more tart you can serve with lime wedges for spritzing.
