Steps:

  • Heat broiler; set rack 4 inches from heat. Lightly oil a broiler-proof baking sheet; arrange 4 snapper fillets (8 ounces each), skin side down, on top.
  • Dividing evenly, spread fillets with a total of 3 tablespoons softened Paprika Butter; season with coarse salt and ground pepper. Broil until fish is opaque throughout, 8 to 10 minutes.

0.25 cup salted butter, softened
1 tablespoon chopped fresh tarragon
1 tablespoon chopped fresh chives
1.25 pounds red baby potatoes
1 8-ounce bunch fresh Broccolini, trimmed
4 tablespoons olive oil, divided
4 6-ounce skin-on red snapper fillets
1 teaspoon kosher salt, divided
Cooking spray, for baking sheet

Steps:

  • Preheat broiler with rack about 6 inches from heat. Stir butter, tarragon, and chives in a small bowl; set aside.
  • Place potatoes in a large saucepan and cover with cold water. Bring to a boil over high and cook until just tender, 12 to 13 minutes. Add Broccolini and cook until crisp-tender, about 4 minutes. Drain; transfer potatoes to a cutting board and set Broccolini aside. Smash potatoes, 1 at a time, with the bottom of a bowl until flattened slightly.
  • Drizzle 2 tablespoons oil over both sides of fish fillets; season with ½ teaspoon salt. Coat a baking sheet with cooking spray. Place fish, skin side up, on baking sheet and broil until skin is crispy and fish flakes with a fork, about 10 minutes.
  • Meanwhile, heat 1 tablespoon oil in a large skillet over medium-high. Add potatoes and cook, undisturbed, until golden, about 2 minutes. Add remaining 1 tablespoon oil, flip potatoes, and cook, undisturbed, until golden, about 2 minutes. Add Broccolini; cover and cook until warmed, about 1 minute. Add 2 tablespoons herb butter and remaining ½ teaspoon salt; toss to coat. Serve with fish and remaining herb butter.

Red Snapper fish (whole with just head cut off and few slits on body) - 5
Red chilli powder - 2 1/2 teaspoon
Turmeric powder - 1/4 teaspoon
Pepper powder - 2 generous pinches
Mustard paste - 2 teaspoon
Crushed Garlic - 2 teaspoon
Lemon Juice - 1 1/4 teaspoon
egg - 1
Bread Crumbs/Rusk Powder - 1 cup
Grated cheddar cheese - 3 to 4 tablespoons
Corn flour - to dust
Oil+Butter - for shallow frying the fish
Salt - as needed
Softened butter - 1/2 cup
Coriander - finely chopped from 5 sprigs
Pepper powder - a pinch or two
Salt - as needed - if using unsalted butter

Steps:

  • Clean the snapper well.
  • Mix chilli powder, turmeric powder, salt, crushed garlic, pepper powder, lemon juice, mustard paste in a small bowl.
  • Set the snapper on a plate and brush the fish with the mixture done above. Make sure the masala gets well inside the slits.
  • Let the fish marinate for 15 minutes.
  • For the coriander flavoured butter, take the softened butter in a bowl, add the finely chopped coriander and pepper and salt if needed. Set aside.
  • Take the egg in a plate and beat it lightly. Mix bread crumbs and cheese in a bowl. Take the corn flour in a plate.
  • Heat a pan with some oil and butter to shallow fry the fish.
  • Take the marinated fish and dust it with little corn flour on both sides.
  • Dip it in the egg and coat it with the bread crumb and cheese mixture well on both sides. Cook it in the heated pan till both sides are crispy and golden brown. Ensure fish is fully cooked.
  • Serve hot with coriander butter!!

4 boneless red snapper fillets with skin, about 6 ounces each (see note)
Salt and freshly ground pepper to taste
2 tablespoons olive oil
2 tablespoons butter
2 tablespoons finely chopped shallots or scallions
1 tablespoon lemon juice
1 tablespoon soy sauce
2 tablespoons finely chopped coriander

Steps:

  • Place the red snapper fillets on a platter, sprinkle with salt and pepper and brush each side with olive oil.
  • Heat oven broiler or grill to high.
  • Melt the butter in a saucepan, add the shallots, lemon juice, soy sauce and coriander. Bring to a simmer, transfer to a small blender or food processor and blend to a fine texture. Keep warm.
  • If the snapper is to be broiled in an oven, place the fillets skin side down on the broiler pan and place it about 4 inches from the heat. Leaving the door ajar, cook 3 to 4 minutes without turning the fish. Do not overcook. If the fish fillets are to be cooked on a hot grill, place them skin side up and cook about 2 1/2 minutes. Turn and cook skin side down for about 2 minutes more. Do not overcook. Pour the coriander butter over the fillets and serve immediately.

Chiffonade fresh basil, for garnish
20 (1/4-inch thick) slices Roma tomatoes (recommended: Romanita tomatoes)
1/4 cup chiffonade fresh basil leaves, plus more for garnish, if desired
1/2 cup julienned sweet onions
1/4 cup pitted and sliced kalamata olives
1 teaspoon salt
1/2 teaspoon freshly ground black pepper, plus more to taste
4 (4 to 6-ounce) skin-on red snapper fillets
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
2 tablespoons unsalted butter
3/4 cup chopped yellow onions
1 cup long-grain white rice
1 3/4 cups canned low-sodium chicken broth, or chicken stock
1/2 teaspoon salt
2 tablespoons thinly sliced green onions, optional
1 large heirloom tomato, roughly chopped
Few sprigs fresh parsley
Few sprigs fresh basil
Extra-virgin olive oil

Steps:

  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  • Combine the tomatoes, basil, onions, and olives in a bowl. Season with salt and pepper, to taste. Season both sides of the fillets with 1 teaspoon salt, 1/2 teaspoon pepper, and Essence. Arrange the fish on the baking sheet, followed by the tomato mixture and then the lemon slices. Drizzle 1 tablespoon of olive oil over each fillet.
  • Bake for 15 to 20 minutes, or until the snapper is cooked through. To serve, place a portion of Rice Pilaf on an entree plate. Use a spatula to remove the fish, along with the tomatoes, onions and lemons from the baking sheet and place over the Rice Pilaf. Drizzle with tomato water, if desired, and garnish each fillet with a chiffonade of fresh basil.
  • Combine all ingredients thoroughly.
  • Recipe from "New New Orleans Cooking", by Emeril Lagasse and Jessie Tirsch, published by William and Morrow, 1993.
  • Preheat the oven to 350 degrees F.
  • Melt the butter in a large ovenproof saucepan or Dutch oven over medium-high heat. Add the onions and cook, stirring, until soft, 3 to 4 minutes. Add the rice and cook, stirring, until opaque and nutty in aroma, 2 to 3 minutes. Add the chicken broth and salt, stir well, and bring to a boil. Cover with a tight-fitting lid and transfer to the oven. Bake until the rice is tender and the liquid is absorbed, 25 to 30 minutes.
  • Remove the rice from the oven and let stand, undisturbed, for 5 to 10 minutes. Fluff the rice with a fork and stir in the green onions, if desired. Serve hot.
  • Combine all ingredients in a blender or food processor. Add just enough olive oil for flavor and season with salt and pepper, to taste.
