BROILED PORK CHOPS WITH YELLOW-PEPPER PUTTANESCA
Puttanesca hits a decidedly lighter, more summery note in this riff on the classic, and is ready in only 20 minutes. Fresh tomatoes replace canned, and bright green basil stands in for dried herbs. Anchovies are omitted entirely, letting the briny bite of capers and olives to shine.

Steps:
- Preheat broiler with rack 4 inches from heating element. Toss bell pepper and tomatoes with 2 tablespoons oil and red-pepper flakes on a rimmed baking sheet, gently squeezing tomatoes with your hands to release juices; season with salt and pepper. Spread in a single layer. Rub chops with remaining 1 tablespoon oil; season with salt and pepper. Place atop vegetables.
- Broil 4 minutes; flip chops. Scatter olives and capers evenly over vegetables. Broil until chops are browned in places and a thermometer inserted into thickest part of chops (avoiding bones) registers 138 degrees, 4 to 6 minutes more. Scatter generously with basil. Serve pork, vegetables, and pan juices with bread.

GRILLED PORK CHOPS WITH PEPPERS AND BALSAMIC GLAZE
Steps:
- For the hot and sweet pepper relish: Preheat oven to 425 degrees F. Toss peppers with canola oil and season with salt and pepper. Roast in oven, turning once, until charred on both sides, about 25 minutes total. Remove to a bowl, cover top with plastic and let steam for 10 minutes. Remove the skin and seeds and thinly slice.
- Whisk together the balsamic, garlic, honey and parsley in a large bowl, season with salt and pepper. Add the red and yellow peppers and cherry peppers and toss to coat. Let sit at room temperature for at least 30 minutes before serving to allow the flavors to meld.
- Relish can be made up to 8 hours in advance and stored, covered in refrigerator. Bring to room temperature before serving.
- For the balsamic reduction: Put the vinegar in a nonreactive (such as stainless steel) pan, bring to a boil and cook until reduced to 1/2 cup. Then stir in the honey, transfer to a bowl and let cool to room temperature; it will thicken as it cools.
- For the pork chops: Whisk together the vinegar, honey, 1/4 cup oil, parsley and thyme and let sit at room temperature for 30 minutes.
- Remove the pork from the refrigerator 30 minutes before grilling to take the chill off.
- Heat your grill to high or a cast iron grill pan over high heat. Brush the pork chops on both sides with canola oil and season with salt and pepper. Grill on one side until golden brown, about 4 minutes. Turn over and grill until the other side until golden brown. Brush with some of the glaze, turn, brush with more glaze and turn again until a crust forms and pork is cooked through, (it should register 145 degrees F on instant read thermometer), about 10 to 12 minutes total.
- To serve: Transfer the chops to a plate, top with some of the relish and drizzle with balsamic reduction. Garnish with parsley leaves.

These are fabulous pork chops. Pork is very lean, and this quick broiling method keeps the meat juicy and succulent. Serve with steamed veggies and mashed potatoes for a complete meal.

Steps:
- IF USING BONELESS PORK CHOPS, brine the pork. In a medium bowl, combine warm water and salt (about 1 tablespoon per cup of water) and stir until the salt is dissolved. Submerge the pork chops in a suitable amount of saltwater and soak for at least 30 minutes (at room temp) or overnight (in the fridge). Then, remove pork chops and rinse them off with cold water. Pat them dry well with paper towels and place on a plate. If using BONE-IN PORK CHOPS, you may skip the brining step! For either type of chops, make sure to let pork sit at room temperature for at least 30 minutes before starting to cook, and pat dry very, very well to assure proper browning.
- Position oven rack 7 inches (18 cm) away from the broiler. Then preheat oven to broil for at least 10 minutes.
- Meanwhile, preheat your skillet over high heat for about 4-5 minutes. While pan is heating, season the pork. Brush the pork chops on both sides with 1 tbsp of olive oil. Then sprinkle with a mixture of salt, pepper, garlic powder, and paprika.
- Add the remaining oil to the pan and swirl to evenly coat the bottom. Sear the pork on one side for 1 minute, pressing the tops of the chops flat with a metal spatula. Then flip and sear for an additional 1 minute.
- Transfer pan to the oven and broil for 4 minutes. Remove pan from the oven, flip pork chops, and let broil for 4 minutes more. Insert a thermometer into the thickest part of the pork chop. If bone-in, make sure to not touch the bone. It has to reach an internal temperature of 145°F (62°C) but I prefer 140°F (60°C) since pork will keep cooking outside the oven for a while, reaching the 145°F mark outside the oven.
- Transfer chops to a plate. cover with foil, and let rest for at least 5 minutes. Meanwhile, prepare the sauce.
- Using the same pan, stir honey, soy sauce, and lemon juice in with the pork juices in the pan. Let cook over medium-high heat, stirring occasionally, until sauce thickens and is reduced to half (about 5 minutes). Spoon sauce over chops and serve. You may garnish with chopped parsley or any other herb of your choice.

- Preheat the oven on high broil for at least 15 minutes, with a cast iron pan or a griddle placed on the top rack, about 3 inches from the heating element.
- To prepare the Creole seasoning, combine all of the ingredients in a small bowl and mix well. If desired, grind larger spices like thyme and oregano in a mortar or a coffee grinder. Set aside. The yield here is 1 1/4 cups. This is about 4-5 times more than this pork chop recipe requires. You have the option to scale down, of course, or make the full recipe and save the leftover seasoning mix for later. I can almost guarantee it, you will love it and will use it later with other meats. But, it's your choice.
- Season each pork chop with salt, pepper and about a teaspoon of Creole spice mix and pat down gently to make sure the seasoning sticks.
- Place chops on a pre-heated cast iron griddle or a pan and broil for 5 minutes. Flip and broil for another 4-5 minutes, or until the pork chops reach an internal temperature of 145F.
