Cinnamon Grilled Plums with Mascarpone Whipped Cream image

3 plums, halved and pitted
3 oz Fresh Churned Cinnamon Brown Sugar Honey Butter, melted
1 cup mascarpone cheese
½ cup powdered sugar
½ cup heavy cream

Steps:

  • Preheat grill to medium.
  • Brush plums with melted Cinnamon Honey Butter and place on the grill. Cook 3-4 minutes, then flip. Baste with honey butter again. Cook another 3-4 minutes, then remove from the grill.
  • Then, make the whipped cream. In a large mixing bowl, beat mascarpone cheese, powdered sugar, and heavy cream until it forms semi-stiff peaks.
  • Serve grilled plums with a dollop of cream.

5 medium black plums, halved and pitted
3 tablespoons brandy
6 tablespoons packed light-brown sugar
1/4 cup mascarpone cheese or creme fraiche
1/4 cup heavy cream

Steps:

  • Preheat broiler. Place plum halves, cut sides up, in a single layer in an 8-inch square baking dish. Pour brandy evenly over plums, and sprinkle with 1/4 cup sugar. Broil until plums are soft and sugar is caramelized, 8 to 10 minutes.
  • Meanwhile, put mascarpone, cream, and remaining 2 tablespoons sugar in the bowl of an electric mixer fitted with the whisk attachment; beat until soft peaks form, about 2 minutes. Top broiled plums with whipped mascarpone cream.

1 lemon, juiced and zested
2 (8 ounce) containers mascarpone cheese
3 tablespoons honey
8 slices of peeled fresh pineapple, 1/2-inch thick

Steps:

  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Place the hazelnuts into a small saucepan over medium heat, and shake the pan until the nuts turn golden and fragrant, about 3 minutes. Remove from heat, and set aside. Mix the lemon juice, lemon zest, mascarpone cheese, and honey in a bowl until well combined.
  • Grill the pineapple slices on the preheated grill until the slices show brown grill marks and the fruit is hot and juicy, about 3 minutes per side. Serve 2 slices per plate with a generous dollop of sweetened mascarpone cheese and a sprinkling of toasted hazelnuts on each serving.
