BROILED PEACHES
Steps:
- HEAT the broiler.
- CUT the peaches in half and remove the pit. Place the peaches cut side down in a 9 x 13-inch baking pan.
- BROIL 4 inches from the heat source for about 3 minutes, until lightly charred. Remove the peaches from the oven and turn them over, cut side up.
- COMBINE the butter and sugar in a small bowl. Spread the mixture evenly over the peaches. Return to the oven and broil for 5 minutes, until bubbly and browned.
- SERVE immediately or at room temperature with your choice of toppings.
- Variations
- Ice cream and sorbet flavors-butter pecan, raspberry sorbet, or peach on peach.
- Sweet liqueurs-amaretto, framboise, hazelnut, and cassis.
- Toppings-cheater smoked dessert sauces, whipped cream, mascarpone cheese, honey, crème fraîche, crumbled amaretti cookies, toffee bits, crumbled gingersnaps, granola, toasted pecans, almonds, macadamias, and pistachios.
BAKED PEACHES WITH GRAHAM CRACKER CRUMBLE

- Arrange the oven racks in the center and lower third of the oven. Preheat the oven to 350 degrees F. Nestle the peaches, cut-side up, in a small baking dish. Drizzle with the honey and dot with 2 tablespoons of the butter cut into small pieces. Pour 2 tablespoons water into the bottom of the dish and cover tightly with aluminum foil. Place on the center rack and bake until the peaches are soft, 25 to 30 minutes. Let stand, uncovered, for 5 minutes.
- While the peaches bake, make the crumble topping. Put the graham crackers in a small plastic bag and coarsely crush with a rolling pin or can. Melt the remaining 2 tablespoons butter in a medium bowl in the microwave. Add the crushed graham crackers, pecans and sugar and toss until the sugar is dissolved and the mixture is combined. Line a baking sheet with foil and spread the crumble mixture on the sheet. Bake on the lower rack until toasted, stirring every 5 minutes, 12 to 15 minutes. Let the crumble cool on the sheet; it will continue to crisp as it cools.
- For each serving, put 2 peach halves and a spoonful of juices from the pan in a shallow bowl and top with a spoonful of ice cream or yogurt and a sprinkling of crumble.

- Drain peach halves and pat dry a little bit with a paper towel.
- Mix flour, sugar and cinnamon together.
- Turn peach halves in flour mixture and spray with butter flavored cooking spray to moisten flour.
- Store in refrigerator until ready to cook.
- Just before serving broil in oven just until crisp looking. About 3-4 minutes when about 3" under preheated broiler.
- For FLARE! pour a little bourbon or brandy over the top AFTER they are plated. Ignite the alcohol CAREFULLY - impressive!

- In a medium bowl, toss together peaches, lemon juice, salt, and cinnamon; set aside.
- Melt butter and sugar in a large skillet over medium-high heat. Add peach mixture and cook, stirring occasionally, until caramelized, about 5 minutes. If using bourbon or rum, add to skillet, and cook until reduced, about 1 minute.
- Serve immediately over ice cream, if desired.

- Preheat broiler.
- In a bowl, toss together the peaches, the lemon juice, extract (if using), cinnamon and 1 tblsp of the brown sugar.
- Empty into a buttered, ovenproof baking dish large enough to hold the peaches in one layer.
- Broil the mixture about 6 inches from the preheated broiler for 5-7 minutes, or until the peaches are tender.
- In a small bowl, combine the remaining brown sugar, butter and cookie crumbs and sprinkle over peaches.
- Broil 1-2 minutes longer, or until topping is pale golden.
- Divide between 2 dishes and serve with the cream.
